My cousin had some serious complications from a colonoscopy last week, and as a result, she now is on liquids for the next six weeks. She also has Chron's disease, which complicates things. Her sister posted on FB the other night asking for thin soup recipes, but all of mine are either pretty hearty/chunky or too spicy. Does anybody have any decent tasting thin soup recipes that aren't spicy that she might could enjoy? I know it's going to be a long six weeks for her, and I'd like to do anything I can to help her out.

This is my family's summertime favorite! We first had it on a cruise and we've made it many times on our own since then. It's really refreshing!

Cold Strawberry Soup
Ingredients

2 pints strawberries, washed and hulled
1 cup half and half
1 cup sour cream
1/3 cup sugar
2 tablespoons lemon juice

Directions

In a blender or food processor puree strawberries. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice. Stir until well combined. Chill.

Serve with garnish of mint leaves

Can she eat homemade chicken noodlle soup? If so, I have a really easy, really delicious recipe.

Chicken Noodle Soup

2 chicken breasts, boiled, save the broth
5 cans chicken broth
2 celery stalks, chopped small
4 carrots, chopped small
1 clove garlic, minced
salt & pepper to taste.
a handful of really skinny egg noodles

Cook the chicken breasts, then chop the chicken small and set aside. Pour 5 cans chicken broth into a 6-qt pot, bring to a boil. Add celery, carrots, and garlic. Reduce heat to a low simmer. Cook at least 20 minutes until veggies are done; longer is better.

While the soup is cooking, fix the noodles according to the directions. Do not cook them in the soup--it makes the soup all gluey. After the noodles are cooked, add them to the soup with the chicken. Add leftover chicken broth if you need more liquid. Just heat through about 5 min.

I serve this soup a lot in the fall and winter, at least once a week. It's good comfort food. The great thing about it is you can puree the chicken and veggies if you need smaller pieces. But just letting it simmer for an 30min to an hour makes the veggies pretty soft.

I found a recipe for a greek soup that I love. For each cup of chicken broth, you add 1 egg yolk. (You add it by scrambling the egg yolks then add some of the broth to the yolks before returning the entire mixture to the soup. Keeps it creamier.) Then you add a little lemon juice for the last few minutes. If she can have solids, you would cook some orzo in it before the eggs. It's still reasonably thin, and would give her some added protein.

All these sound great. I don't think she could eat the solids from the chicken soup, but it would probably produce some great broth. I'll pass these along to her sister.

Does thin mean not creamy, or just not chunky? Could a softer creamy soup, like potato soup or broccoli cheese soup, be pureed to a creamy consistency?

I make an easy potato-leek soup my family loves and it is very simple. Plus, you can thin it out and serve it hot or cold. If you like I can post the recipe later (shh, I am at work ;-) )
