These Costco Enchiladas are Darned Good!

Just thought I'd share that!

I bought these and had them for dinner last night. Having a leftover one for lunch. They are CHOCK FULL of the rotisserie chicken, the sauce is decent. They are pretty good for Costco food.

No, they are in their "fresh prepared foods" section. You will find them where they have their shrimp platters, salads, etc. They use the rotisserie chickens from the store and they make it on-site.

They are soooo good, my son could live on them. We also like their Chicken Parm.

I recently discovered the chicken fettucini alfredo, it's delicious! Now I'll have to try the enchiladas

Now you see, I'm not wild about the chicken alfredo. It's not bad at all, for sure, but it's just so-so to me. I really liked the meatloaf and mashed potatoes they had the other week. The chicken parmigiana is good too. I had really low expectations for the enchiladas for some reason, but was really pleasantly surprised. They were FAT with chicken.
