It seems like the park hours are being posted one day at a time on the Disney Website. My 180 day dining reservation mark is coming up on Monday. Do I really have to check in every day to book my dining?

If you are staying onsite and already have your room booked you will be able to book ADR's 180+10.
Also if you have your room booked as of now you can log into MDE and go to add plans and then add places and you can see the park hours for a few days into your trip.
My ADR day is Sunday and I've been able to see park hours for my dates for a few days now.

My ADR day is Sunday too! Looks like we'll be at the world at the same time!!! :)

Booking ADRs and planning park days is the ol' what came first argument.

I always say to have an idea of where you wanna go and when—for example, we know that we like to go to MK on Christmas Day, and don't do any parks on 12/31... so we plan accordingly. Luckily, Christmas hours are pretty consistent. I'd recommend checking past years to derive a tentative plan and schedule.

What I do is decide what restaurants I want to go to.
Then plan which park which day.
Then when I make my ADR's I stick to what is available that day at that park.
I never start rearranging my days to meet my ADR's. Instead I rearrange my ADR's to fit the park days.
This is our plan for this trip...
12/8: MK, BOG lunch, and Diamond Horseshoe dinner, maybe hop to Epcot.
12/9: DS in the morning, an MK resort TS for lunch (I told my sister she needs to decide which one by tonight lol), MVMCP entering at 4pm.
12/10: HS for the first half of the day, Epcot for the second half of the day, dinner at Le Cellier, watch Illuminations.

If exact times that I want for my ADR's are not available I will take whatever is closest.
What I will not do is change which day we are going to which park.

OK scratch everything I just posted above lol because my sister and I have changed it up.
Here's our plan now...
12/7: arrive in the evening.
12/8: HS first half of day Epcot second half, Le Cellier dinner
12/9: DS morning, Big River Grille and Brewing Works at Boardwalk for lunch (TS credit but ADR's not accepted so it will just be whenever we get there), MVMCP entering at 4pm
12/10: MK, BOG lunch, Diamond Horseshoe dinner, maybe go back to Epcot.
12/11: depart

Same boat. We arrive on 12/8 and I know we want to book Garden Grill for a PPO breakfast on the 9th (which I'm hoping to convert to a CP package at some point), but the only other thing I need to book is Cali Grill dinner at sunset one night but I don't know WHICH night until I know the park hours...ugh!

Do you have an onsite reservation? If so and your dates are about the same as the rest of us you should be able to log into your MDE and go to "my itinerary". then go to "add plans" then go to "add parks and places" and you'll be able to see park hours for a few days into your stay at this point.

I do a couple of things to plan out my park days & ADR's. I do a google search for December 2017 WDW park hours. I use this and I also use a crowd predictor like Kenny the pirate has. I look at the lower crowd days and the longer park hours to determine what days to go to which parks. Then I select my ADR's based on which park I will ne in which day. Yes the hours change and sometimes I make a change to my ADR's if available. Then I select which fp+ selections I want per park. I always book everything day one of opening of ADR's and FP+ selections at 7am. And I'm on the west coast so not too fun in the sleep department for me. On the plus side I usually get what I want though.:flower1:
