Ellen- I just made the fajitas, I have spice rub that I make a lot of and keep on hand, I seasoned the chicken with that and grilled it. Cooked up some onions and peppers, shredded some cheddar, salsa, kicked myself for forgetting sour cream at the store, and there ya go, fajitas. I was going to grill steak too but didn't have time for it to thaw.

Jen- You should have seen the parking lot when we got a home depot 1/2 hour away. I think a McDonald's in our town would start a scandal! It's colder by you then here! But it's always windy.

Marilyn- I've always wanted to try apple dumplings, but I'm not to sure on soda in my food. Glad the tooth didn't end up to be broken.

Okay, so I've never had balogna (and don't plan on it) but I didn't know you fried it, I thought it was just for sandwiches.

White chili is simmering away for dinner.
 
The Apple Dumplings I made are a big hit. I got the recipe off of the Tasty Kitchen site. It says to cut the apples into 8 slices but I just cut them into 4's and it worked just as well.

I made that with the kids in our cooking class last year - turned out great! You can also use Sprite, but we just used Mountain Dew.

It was FREEEEZING here this morning. Around 50, but with the wind, it felt much colder. Tonight we're getting down in the 40's. It was 90 yesterday! *faint*

Isnt this weather grand?! Love. it.



I think we're going for Taco Tuesday tonight - $3.50 for 3 tacos, beans, rice. Can't beat it.

I just wanted to stop in and say I probably won't be back on until we get back. If I get a chance and get some decent pics I'll try and post some. We're in countdown mode and tomorrow will be hectic. We fly out Thursday morning so y'all be good and cook some good stuff!!!:goodvibes

Honey, I remember when we got a Walmart back home. It was like the Taj Mahal. :lmao:

My dad grew up very poor, and one of their treats was fried balogna, if you can believe it. He would make it for us when we were younger and he would call it "steak". :lmao:

Rosa's and Fastaco both offer it - I'm exhausted so I talked DH into just driving through Fastaco and bringing it home.

That wind was pretty chilly today ~ otherwise, perfect fall day! DH opened all the windows here at home so i'm bundled up :rotfl:

Oh! The town where I work recently got a Fastaco. I've eaten there, and it was REALLY good! I love their salsa. :love:

I came home and UncleR had the front door open. The first thing I did was close it. :rotfl2: I'm cold-natured. :rolleyes1
 
I made dessert tonight.

Coffee Cake in a Mug

**Forgive my poor picture quality, but I thought it would rise enough to cover the shmootz on the side of the mug. :lmao:

Cake Ingredients:

1 T butter
2 T sugar
1/2 egg
2 T sour cream
Few drops vanilla
1/4 cup flour
1/8 tsp. baking powder

In a mug, soften the butter in the microwave for 10-15 seconds. Add sugar and cream together. Add egg. Stir in sour cream and vanilla and blend well. Add flour and baking powder and blend well.

Crumb Topping Ingredients:

1 T butter
2 T flour
1 T brown sugar
1 tsp. cinnamon

Blend above ingredients together and sprinkle over top of cake mix. (On my 2nd attempt, I mixed my crumble in slightly and I liked the way it turned out)

Microwave cake for 1 minute to begin, adding 10 seconds until cake is cooked to desired doneness. (Mine took about 1 minute 40 seconds)

This was surprisingly yummy!!! And it's a great way to solve what my BIL calls a "sugar wiggy"...you know, when you just NEEEEED something sweet!

So growing in the south and rural south, we had these huge chunks of Garlic Bologna, and my MeMe (grandmother) would cut a slab off and fry it in our cast iron skillet, cut the sides so it would not become a dome and then crisp the edges until almost black.... That was some serious good eats...


Growing up I used to eat something similar, I was born in Philadelphia and we used to eat something called Taylor Pork Roll and that was how it was prepared by my Mom. I don't remember the slices being thick but I remember the cuts on the sides and how it domed up anyway. I much preferred scrapple though...obviously this was before I went vegetarian for so long hahaha.

Dinner: udon noodle bowl in spicy broth with bok choy, snow peas and duck egg:

I had thought about trying Sprite but didn't want to Nanatize it too much the first time out.;)

I was thinking today that I would love to make it using peaches or even cherries. I do have some tart cherries in the freezer.

I ended up making a soup with sausage, potatoes and swiss chard for dinner. Was pretty good.

Jen- that cake looks so good! A fast answer to needing dessert!

My Mom fried bologna when we were kids. I hate it but it is a treat in this house. Buddy is not supposed to eat it often so I only buy it occasionally. On weekends I cook breakfast and if there is any left I will fry it up with his eggs.

My guilty pleasure is Hot Dogs. I think it goes back to childhood memories but I don't like the good ones. When I am in the mood for Dogs I buy those pork and chicken ones. I figure that none of them are healthy so I might as well buy the ones I like, cheap things that they are :rotfl: I don't feel too badly though, Buddy likes Wunderbar Bologna............one of teh cheapest brands at the deli.............one of the reasons I don't buy it often ;)

There is a thread about mashed potatoes and I read the whole thing so all I could think about was adding mashed potatoes and gravy to dinner. We had an apricot glazed pork, mashed potatoes and gravy, butternut squash and baby peas. Buddy had tomatoes and onions salad. I baked an apple spice crumb cake for dessert but no one had any.

Nola has pictures this week I think so Welby took her for a trim and We had Rylee. They stayed for dinner, Nola agreed to give up her evening bath and story if she could stay later ;) That child would live in the bathtub given the chance. I found Pixiedust all over the house from her haircut............now she looks like Tinkerbell :wizard:

It is going to be pouring all day here so i need comfort food. I think the guys will be taking down tobacco if that rain stays long enough so I want to find something that travels.

I cannot remember anything else.
 
Just checking in. I'm horribly behind on all your updates.

Today is Wednesday and dinner was at Mum's. I'm still in-between contracts and am hoping to be placed soon. In the meantime, I'm doing the best I can to stay busy....or at least...pretend to be busy. *sigh*
 
Morning, everyone!

I have a busy day today. Since I cooked roast for yesterday and today's dinner, I don't have any cooking to do. But to make a long story short, I am going to work on our overnight bag*. A few years ago, I grouped together certain items in gallon freezer bags and labeled the outside. Example: a bag that had q-tips, cotton balls, face wash, shaving supplies, etc. Another had sunscreen, after-sun lotion, and aloe. One has all the laundry stuff in it: laundry and softener travel packets, dryer sheets, Tide-to-go pen, etc. It just makes life easier when looking for one particular item.

I am going to try and get that accomplished today. I also want to take a few minutes and do my nails. I now that sounds silly, but thanks to my disability, I have the most unfeminine hands in the world: rough, peeling, and calloused. To make up for it, I try to have nice nails. So I want to get that done sometime today for church tonight**.

**Ok, VERY long story. I go to a really big church and am part of the music ministry. Our new choir director has been there for a little over a year. We have praise teams that stand in front and lead during praise and worship. I am on such a team. There is 2 people per part. The catch is that our director is musically in love with the other soprano on my team. She was on a singing team at his alma mater, a two-time American Idol contestant, and your typical soprano diva. Like I said, he loves her and she sings every time our praise team is scheduled. (every 4 weeks) Her singing so often wouldn't be so bad if she wasn't such a snot about it. Anyway, I try to remind myself that she's young, "be the change I want to see in the world," etc.

Well, this week I have a solo in our choir. During rehearsal tonight (in the sanctuary), I will be mic-ed and have to sing it. I know, I know, this sounds soooooooo trivial, but the simple act of having my nails look nice will give me confidence. This girl has made me feel so bad about myself, it isn't funny. But I find joy in the little things and this is one of them. So I must get them done today. I am a self-admitted nutter butter :angel:
 
Lindsay - enjoy your trip to the world and I'm sure you'll be uber organised for it.
And congratulations about getting to sing solo in church. You'll have to let us know how rehearsal and the performance goes. Just remember - you have a lovely voice too; and do not feel bad because of anyone else! You're not a nutter butter!

I'm home today. :sick: It's been a rough night and morning. I think my immune system is still weakened from the surgery. I'm never sick this much. :guilty:

Tonight's dinner is supposed to be entomadas and spanish rice...which at this point sounds entirely unappetizing, but hopefully I'll be feeling better by then. Cooking is one of my happy places, after all. :lovestruc
 
Lindsay- enjoy your nail pampering! Your solo is going to be awesome!!!!!!!!!!!

Jen- You need to rest! I think folks get sent home quickly after surgery, so different from the old days. My Mom was in the hospital for over a week for your surgery so she had no choice but to rest. I don't want to go back to those day but I believe that because people go home so fast sometimes they (YOU) forget that you still need to recuperate. Your body is telling you something so please listen :hug:

Nanatize- Hmmmmmmmmmmmmmmmmmmmmmm. I have a hard time sticking to a recipe so whenever I decided to embellish a dish my family called it "Nanatizing" it. They are ever a source of my continued :headache:, a mishap here or there and you would think I was a crazy person in the kitchen!

We ate Souse meat and saltine crackers also, very much like scrapple. I think the Souse is chunkier than Scrapple.... We were poor growing up so we ate right off the farm, my family grew, raised, canned, and swapped for the things we needed.

I can remember going to school in the first grade and having pasteurized milk for the first time. I had never seen milk in a carton.

We went and got it from the cow and had to shake it up before drinking it so the cream would be mixed back in...

Those times were much simpler....
