My crockpot orange chicken was...not bad per se, but not my favorite thing ever.

I'm posting the link here in case you want to try it.

It was too sweet and too orangey...to the point that I could only eat a bit of it.

It was pretty to look at though.

Hello! Thanks Linsday for the new thread. I did not tale pictures this weekend, so no food porn to add. However, I did use my slow cooker for the first time. I made a batch of lentil stew to take for lunch:

This is the first thing I made in my slow cooker. It smells great. I'll report back on taste tomorrow.
 

Back to school Monday today. After school, DS normally has a tennis lesson and I came home from being outside in the bright sunshine with a bit of a headache.

DH suggested that we take-out for dinner tonight. Looks like it's middle eastern fare for us - falafels for the boys and a lamb/chicken schwarma for me. Thank heavens for reasonable men!

Again, bear with me as I get things going. I didn't get the recipes indexed yesterday but I will today. I've got to get the hang of doing them the cool way Kat did. :)

Today I am making chicken tacos with refried beans and Spanish rice. I am also making Glynis roast with carrots and potatoes for tomorrow. I have a TON to get done today so I better get with it. Please let me know if I miss something when the index gets updated.

ETA: I saw this mentioned in the other thread, but yes, the bread I made was Ina's honey white bread. It was wonderful!!!!! I was so proud of myself. Here is the recipe and a link so you can see reviews if you want:

Honey White Bread

  • 1/2 cup warm water (110 degrees)
  • 2 packages dry yeast
  • 1 teaspoon sugar
  • 1 1/2 cups warm whole milk (110 degrees)
  • 6 tablespoons (3/4 stick) unsalted butter, melted and cooled
  • 1 1/2 tablespoons honey
  • 2 extra-large egg yolks
  • 5 to 6 cups all-purpose flour
  • 1 tablespoon kosher salt
  • 1 egg white, lightly beaten

Place the water in the bowl of an electric mixer fitted with a dough hook attachment. If the bowl is cold, be sure the water temperature doesn't drop below 110 degrees F. Add the yeast and sugar; stir and allow them to dissolve for 5 minutes.

Add the milk, butter, and honey. Mix on medium speed until blended. Add the egg yolks, 3 cups of the flour, and the salt. Mix on low speed for about 5 minutes. With the mixer still on low speed, add 2 more cups of flour. Raise the speed to medium and slowly add just enough of the remaining flour so the dough doesn't stick to the bowl. Add the flour slowly; you can always add more but you can't take it out. Knead on medium speed for about 8 minutes, adding flour as necessary.

Dump the dough out onto a floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl with butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for one hour, until doubled in volume.

Grease two 9 x 5-inch loaf pans with butter. Divide the dough in half, roll each half into a loaf shape and place each in a prepared pan. Cover again with the damp towel, and allow to rise again for an hour, until doubled in volume.

Meanwhile, preheat the oven to 350 degrees F. When the dough is ready, brush the tops with the egg white and bake the breads for 40 to 45 minutes, until they sound hollow when tapped. Turn them out of the pans and cool completely on a wire rack before slicing.

Hi Mermaid. Congrats on working full time! It really does play havoc on the cooking front, though.

Can you give us some indication of what sort of meals your son likes?

For example - My DS11 loves parmesan with a serve of pasta on the side. So I normally freeze some bolognaise sauce, which I cook up at the weekend that I can thaw (either overnight in the fridge or in the micro) for a quick meal midweek. He also likes potato, so we normally have a meal of baked jacket potato with baked beans (canned and warmed up in the micro), cheese, coleslaw and guacamole. It also helps that I have a timer on the oven and because this is so simple, my DH can be trusted to pop the potatoes in foil and put them into the oven.
I also do noodles and rice dishes, which are also quick and easy (for me).

But if your son doesn't like any of these sorts of meals, it won't help you out at all.

Lamb is one of my favorites. David and i ate at a local mexican restaurant and I had the pork carnitas. They were so good.

Morning Lorelei! Does your son like meals that include seasoned ground meat? I used to make tacos or sloppy joes when I was in a rush after work. You can also make a few things ahead like a stuffed pepper and then reheat them with a quick side.

I used to keep boneless skinless chicken (I used thighs because that is what we like) and then make a chicken and stuffing dish with a salad and veggie on the side. It cooks in 30 minutes or so. If you use skin on parts, chicken can be roasted at a higher heat and once the skin is crispy you can glaze it with a multitude of toppings and serve with quick starch and veggie.

Let us know what your DS likes to eat and we can come up with meals that will be quick and easy.

Porcupine meat balls are good.
1 pound hamb
1 cup rice
and any spices or vegs. you want. I like onion, worchester sauce, garlic etc.
I shape them and freeze them. When I get home I take out and cook in a can of tomato soup. Real easy

I also brown up hamburger in 1 lb. packages and freeze

I also poach, roast chickens and freeze in serving packages. These are real time savers on a busy night - just grab and dinner is 1/2 finished.
You can use them in sloopy joes, tacos, casseroles and soups.

I also like to spend my Sundays cooking - that way I cook for one day and eat for 5. Works for me, but I know we are all different. Good luck!!

Well our weekend was totally an "organized mess". We completely tore our bedroom up. We have been going to do this for 6 months - new windows, new doors and flooring have been ordered and are in, so I guess this was the weekend. We moved up to Matthew's bedroom, so we have someplace to at least rest our heads. Oh my what a mess :eek:. But we knew this going in - and it is going to get much worse before it gets better. We are taking all of the plaster and lathe down (remember our house is over 100 years old) and replacing it with sheetrock. It will be so nice when it is finished but right now - what were we thinking??!! :sad2:

I used to be good with the quick dinners, but would have to agree with the others, we need a little more information on what your DS likes to make suggestions.

It's all good. :thumbsup2 Turns out it wasn't broken although I could have sworn there was a space that wasn't there before. She thinks it was probably just something stuck in it and it aggravated the nerves. She did say if I have that pain again to call and they will send me to an endontist to check it out and see if there is something going on in the root that is not showing up on the ex-ray. Could be a crack, which won't show up on the ex-ray, or the roots are dying.

The whole thing was really weird. Late Friday when I laid down to go to sleep it started hurting. I took ibuprofen, which didn't seem to help and tried to sleep. The pain just kept coming and going so I really didn't get much sleep at all. It kept coming and going all day Saturday and after the game I ran and picked up some Ora-gel which helped so much but by Sunday morning if I so much as touched the surface of that tooth it hurt so bad.

However by Sunday night it had stopped hurting so much and now I only have an occasional twinge even after the hygenist did the normal scrapping and stuff for a cleaning. Interesting thing was Sunday night I felt something on the left side of my tongue and it was a tiny piece of popcorn kernal which makes me wonder if that's what was aggravating the tooth.


Other than all that drama it was a pretty good weekend. The breakfast was good although we ran out of juice, most of the boys didn't bring in what they were supposed to, and we had a pretty good turn out. The parade was great and we had pretty good seats for it. They changed the entrance into the school so we had a much better vantage point. As for the game, they lost, but the other team is much better than we are.

After the game was over Saturday my DN and I ended up going straight home. She didn't want to go to the swim meet and my sis had texted me that it was close to being over anyway. When we got home DN headed upstairs to watch TV while I sat on the couch, next thing I know the phone is ringing and it's DM who wants to know what DN is doing. :scared1: I called her name and she didn't answer. Went up to check on her and she was sound asleep w/ the TV on in my DM's bed. :rotfl:

After DM got home from work I went downstairs and went back to sleep and slept for 11 hours. :thumbsup2

Yesterday we went to the farm, came home, made yummy turnovers and then to the swim meet. My oldest DN did really well.

Made roasted veggies and apples for dinner and had that with a salmon pattie.
 
I am told it is a painful surgery, and that it takes awhile to heal, but I also know that everyone is different.

So I am keeping my spirits high...

I'm sorry you're facing surgery - esp once with a long recovery :hug:

This is terrible of me but I'm glad you tried it and reviewed it first - it was on my plan for this week! I'm going to skip it. I'm not much for overly sweet dishes anyways and that sounds over the top. What a bummer.

I work FT and always get home after 5pm and most days cook, though I don't have a picky kid to work around... I don't want to just pimp out my recipe blog but I do have a sub heading of dishes that were 30 minutes, start to finish, if you want to check them out. That's what I aim for on weeknights. Today was looooong. I had another new speech therapist observing me all day long. It just made for a stressful day. Plus it being Monday and all. :lmao:

Tonight's dinner is penne with tomato butter sauce.
