The What's For Dinner Thread - October'11 (recipe index in OP)

Thanks for all the kind words. I'll be happy to have it figured out. A friend of mine told me that her husband had suffered with migraines for years. She finally convinced him that it wasn't normal, and to get checked out. The doctor's found a sinus situation that had gone on for at least 11 years. Once he got that taken care of, and his tonsils and adenoids out, he hasn't had a migraine at all! Given Jacob's severe seasonal allergies, and his constant stuffy/runny nose for the last couple of years, I'm hoping for something similar.

Still a grey and gloomy day here. Very definitely winter weather. Mary, Leslie and Timmy are all down with the stomach ick, now. So, no church for me. Alan will take Katie and Jacob, while the rest of us hunker down. I've been up since 6:00 washing everything down with Lysol. Hopefully, the rest of us will be spared!

Dinner tonight will be pot roast, steamed broccoli and ice cream sundaes for those feeling well enough. Chicken noodle soup for those still under the weather.

Hope all your sickies feel better soon and that the rest of you are spared, Glynis! :hug:

Glynis, I hope you are spared the sickness! I am sorry that Jacob has migranes, that is awful. I hope you can discover what the trigger is.

Here is a week's worth of photos. Monday I was off from work so I roasted a large chicken:

Basil mashed potatoes:

Apple stuffing (dressing, I didn't put it in the bird)

Another night we had enchiladas verde--I posted the recipe last week:

And Friday we had mustard coasted chicken stopped with ceasar salad. Under the chicken there is a potato cake made with the leftover basil mashers. It was a very chickeny week!:

Today we had a salad and souffle. Here is the salad, it had spiced pecans, craisins, apples, gorgonzola dolce and bacon:

and a GIANT cheddar souffle:

it is baked in a wide and shallow pan, so doesn't rise as high, but the texture is etheral. This served 8 people.

Tonight's dinner and dessert:

Homemade (yes, you heard that right...home freakin' made) fettucini with a tomato butter sauce. Also served with Pioneer Woman's olive cheese bread. Divine!

I'll be back with recipes after while.

UncleR's Lemon Pie

Ingredients:

2 large lemons
5 eggs, well beaten
2 cups sugar
2 9 inch pie crusts

Slice lemons paper thin, rind and all. In a bowl, mix sugar in with lemons and let stand for 2 hours, stirring periodically.

Add beaten eggs to lemon and sugar mix.

Line pie pan with one of the pie crusts. Add lemon, sugar and egg mix to the pie shell. Top with the other pie crust and seal the crusts together. Make a few small slits in the top crust in order to allow steam to escape. Sprinkle sugar on top of pie crust.

Bake pie for 15 minutes on 450. Turn oven temperature down to 375 and bake for another 20-25 minutes, or until crust is nicely browned. Allow pie to cool completely before slicing and serving.

***This is tart and sweet and oh soooo nice. And it's my favorite dessert that my lovely wife makes for me. She surprised me with this today! :lovestruc

However, Alan is not well. He has been down all day today with some intestinal thing. Even worse, it's making the rounds through the kids. So far, Timmy and Mary have succumbed to it. I'm thinking it's going to be a long night!

Can I ask for some pixie dust/prayers/good thoughts thrown our way? Jacob has been suffering with migraines since he was 2 years old. We've had him looked at by our PCP, and were told to keep a journal each time he has one, to try to find triggers, etc. We've been doing that, and there's nothing really concrete that we can point to that might trigger them. Well, I'm now really concerned because he's now getting them weekly. They are so awful! He goes really white, begins throwing up and then literally sleeps for 12 hours. I told Alan that I'll be making an appointment for a more thorough exam this coming week. I'm going to demand an MRI or a CAT scan to see if there's anything I need to really worry about. I'm trying not to think brain tumor, but I would never forgive myself if there was something really bad, and I just let it go. So, if you could help me out with some prayers, etc., I'd really appreciate it.

Yuck to all the illness in your house! I hope it leaves soon.

Poor Jacob. DH struggled with migraines occasionally but nothing like Jacob has to deal with! No advice, just hugs. Hope you can get in soon!

Tonight I made one of my fave easy meals, oven risotto. I used spinach, smoked chicken, honey baked ham, mozzarella, and smoked gouda in it.

Folks - All the food looks delightful!

Becky! Fantastic food porn as always.

I'm heading back to work tomorrow, so I should get back into a normal routine.

But before that, I thought you might like to see some pictures from my mini-break over New Year.

We went away with some family and friends to the Yarra Valley, one of the wine growing areas around Melbourne. The weather was hot, hot and even more hot with temperatures around the high 90s to mid 100s for the days that we were there. We didn't hit the vineyards because we had kids with us. But this is what we did do...

I'm more of a pedicure gal myself. Pretty toes make me happy.

Me too. And I am in desperate need right now. My toenails are :scared1: With the bunion and an ankle problem I have I can't do a very good job anymore. Was going to do it this week but I had some last minute bills and have to wait until payday.

I was able to get a eyebrow and lip waxing today and again :scared1: she liked to ripped my face off. There is a new girl at the place I go to and while she does a good job she just puts the wax on and rips FAST.

Jacob has been suffering with migraines since he was 2 years old.

:hug: Hopefully it is something as simple as allergies.

I get one once a month now and so far they have been more annoying than dibilatating. Something that aggravates the pain is florescent lighting.

:lmao: I allowed myself to get a wax job once...ONCE! Never again. :lmao: I'm a plucker myself. :laughing:

And PIO...lovely pictures like always. :lovestruc

Good morning. My morning is all messed up!

First, I didn't sleep because it rained and thundered all night long. Then, I decided to cancel J's bus because I didn't want him to wait out in the rain, since they're always late when there's weather. So, I tried to call and they didn't answer. :headache: I still had to wake him up though. I couldn't get on the computer either because of the lightning and thunder. I just feel all out of whack. :lmao:

Off to work today. But, this upcoming weekend is a 3 day weekend.

Tonight's dinner is a new recipe, made by UncleR. It's a tomato basil parmesan soup, made in the crockpot. I have high hopes for this one! :cool1:

Y'all have a good Monday!

Morning, everyone.

I am making tacos, rice, and refried beans for dinner tonight. I didn't sleep well last night so I am thinking about laying down for a few minutes. Ugh, I HATE when I feel like this!

Glynis- your whole family will be in my prayers :)

Howdy, all! I'm a little later checking in than usual. Things here are crazy... as usual! The tummy troubles seem to be easing. Mary is the only one still affected. She's home from school today.

I called our PCP's office, and they are going to call me with an appointment for Jacob. I feel much better even knowing we are going to be seen.

Alan starts his second semester of school today, and won't be home until 11:00 tonight. His crazy days will be Monday, Tuesday and Wednesday. It will be interesting to see how he does. He managed to get by with A's and A-'s last semester, so he's rightfully proud of himself.

Dinner tonight will be chili cheese chips. Not very healthy, but it's warm, and the kids will eat it. I'm thinking I'll make myself a tuna salad. We'll see. Right now, I'm hoping for a nap!

PIO, gorgeous pics! Looks like you had a great time off work.

Glynis, glad the ickies look to be moving on - I hope you can get an appt ASAP for Jacob.

Jen, I pinned that lemon pie recipe to make for DH soon! He's a lemon addict - the more tart the better.

I stayed home today to work on some things - all work related but done from the comfort of my PJs with a dog on my lap :woohoo: It's yucky today so that sealed the deal for me.

Okay, so I got a rice cooker for XMas. I have used it twice now to perfect results. However, when I made rice over the weekend I was too busy multitasking to really look at the rice/water ratio chart. I thought I was making 6 cups COOKED rice, but I put in 6 cups DRY rice. So, it made a huge amt of rice :laughing: I have two huge containers of it in the fridge now so what else do you make with cold leftover rice? Fried rice! I may also talk DH into stopping for some sushi on the way home to go with it.

I vote rice pudding!!

I would love to know what chili cheese chips are. :worship:

Glad the sickness is working its way out. And I'm glad that Jacob is getting in with the doc. I hope things will be sorted out soon. :hug:

I hope you guys love the lemon pie.

We do fried rice, or gumbo, or heck, what about your mongolian beef? :banana:

~~~~~~~~~~~
I'm home. It's cold and it poured all. day. long. I needed to be home today instead of at work. :lmao:
Tonight's dinner is Tomato Basil Parmesan Soup. It's a crockpot recipe that UncleR started while I was at work, and I just put in the finishing touches. I'll post pics and the recipe later. It is, of course, another Pinterest find! :lmao:
Y'all have a great evening!
So....I don't exactly know what to call dinner tonight:confused3.
I threw some stew meat in the crockpot with soy sauce, brown sugar, garlic, seasame oil, water and rice wine vinegar.
I was going for some Asian beef type thing, but it tastes like my MIL's stroganoff???:laughing: IDK.......So we're eating it on buttered noodles.
Beef ala Cassie...:lmao:
Yeah...It was not so good after more than a few bites...Very salty and rich(?...Hard to describe). I think it reduced too much.
DH has yet to try it, but I know he won't like it.:laughing:
Oh well....On to the next.
Hmmmmm, maybe you could do a rescue recipe with it. Make sliders or something out of the meat, top with cheese and some sort of aioli/flavored mayo?
Neh....I tossed it. The smell of it was getting to me after eating it.
DH took a bite, slowly chewed and just stared at me. I was like, "You don't have to eat it.":rotfl:
