Tonight is chicken parmesan with a still undecided side.

Kathy John had that lovely piece of equipment. I must say it was very sexy. I remember it all too well. That was when I was trying to get pregnant and you have to record everything.:eek:. He had to wear his for a week.

On the subject of kindergarten chairs...they come in an astonishing variety of sizes and shapes (and colors too!). Some are FAR more comfortable than others! Of all the ones I've seen, these are the WORST:

They are from Lakeshore (who also has more comfortable ones), but the smallest size chairs have those beams that are almost like arm rests. You can't FIT your bum in a chair that size and it HURTS!!

I'm going to Disneyland with my parents in September!! :dance3:

I am off to lay down for a bit....flexirl(sp?) makes me very drowsy...back is getting better, but not 100% yet. I am going to walk on the treadmill later, hoping it might help stretch it out.

Ross has an orthodontist appt at 3pm, just for an adjustment and new bands.

I just took some chicken out of the freezer so now I need to fig out how I am cooking it and what to make for sides.

Morning! I had to post last night's dinner, as it turned out really well!!!

I made a sauce out of 1/2 cup brown sugar, 1/4 cup red wine vinegar and 1/4 cup butter. I melted it all together in a large skillet, then added 4 medium sized ham steaks. I cooked them for about 5 minutes until they were heated through and nicely coated with the sauce. Then I sliced a couple of bananas into the skillet and coated them with the sauce. I cooked them an additional 7 to 10 minutes and then we ate. Oh my goodness! It was really yummy!!! The vinegar gave a nice tang to the bananas, and the ham was delicious!!! My husband called it Hawaiian Ham.

I have no idea what we'll have for dinner tonight. Maybe leftover chili from Saturday. We need to use it up, and I have Zumba tonight, so I don't want to do a ton of cooking right before that.

I hope Maria's ok. If anyone hears from her, let us know so we can stop worrying!

I do not text so i asked Marisa to send one to Maria. Hopefully she will feel well enough to answer that. I know that the phone is sometimes just too much when you are in pain.

WHen Buddy wore it he was not asked to recrd anything either. He went in on Friday adn did nothing all weekend. I thought it made no sense that there was no real picture of his day.

Perhaps one of those wires is a camera. Just kidding :lmao:

I owe a couple of recipes. The mushroom soup for Ellen:

For the soup:

1 tbsp. EACH olive oil and butter
1 onion, finely diced
1 lb mushrooms, stems and caps seperated, caps thinly sliced, stems finely chopped (you can use any kind of mushroom--I chose cremini)
1/2 cup minced parsely
4 cups chicken stock
salt and pepper to taste

Heat the oil and butter, and saute the mushroom stems with the onion until soft, about 10 minutes. Add the caps, parsely, and stock and bring to a boil. Reduce heat and simmer for 20 minutes. Season with salt and pepper to your taste.

For the crostini:

12 thin slices baguette, toasted
1/2 cup mascarpone cheese
1 tsp. finely minced fresh rosemary
salt and pepper to taste.

Mix the cheese with the rosemary and s+p and spread evenly over the baguette toasts. Place three crostini in the bottom of each soup bowl and ladle mushroom soup over. Makes four servings.

The pumpkin risotto for Glynis:

2 tbsp. butter
1 onion, finely diced
1.5 cups arborio rice
1/2 cup dry white wine (you could leave this out, Glynis, and it will be fine)
4 cups chicken stock, or more as needed (or you can start adding water if you run out of stock)
2 cups finely diced pupkin or butternut squash
1/2 cup mincedparsely
1 cup freshly grated parmesean cheese

Heat the stock in a saucepan and keep to the side.

In a large saute pan, heat the butter and add the onion. Cook until onion is soft, about 10 minutes. Add the rice and cook, stirring, for about a minute, until the rice is glistening. Add the pumpkin to the pan. If using the wine, add it now and cook until completely absorbed. Add the chicken stock, one ladleful at a time, and stir until completely absorbed. Continue stirring and adding stock until the rice is tender and the pumpkin is cooked.

You may need to use more stock/water to get the rice fully cooked. Sometimes my risotto is ready in 20 minutes, sometimes it takes longer. This batch toook almost an hour and two extra cups of liquid!! I think it depends on how old your rice is.

Once the rice is cooked to your liking, remove from the heat and stir in the cheese and parsely. Taste for salt and pepper and serve. This makes enough for 6 servings at least.

Dinner last night was fish sandwiches, same as I showed you last week, so I did not bother to take a picture. Tonight we are having a recipe that was in this Sunday's newspaper: eggs florentine with ham. We will also have some of the bread I baked over the weekend--it's a whole wheat-rosemary loaf.

Well we are back from two awsome weeks at Disney. It was a little rough getting there, we debated between driving or the train up until the last minute. Amtrak had shut down service on the east coast for the two weeks before we left. We ended up taking the train, but were ready to drive. We got there early Sunday evening the 14th and got home this Sunday around 7pm. It's good to be home.

The weather was a bit chilly but the sun was always shining so we were happy. We stayed in bay lake towers the first week, boy is that bridge between the two buildings windy! After that we moved to fort wilderness. The crowds were definatly there, but it was managable. I think it only rained one day while we were there. I really don't think we could have had a better time.

I am still without a computer, so I'm at the library and can't read back. I hope you are all well and am looking foward to catching up with all of you. Sorry I didn't mention we were going, I didn't intend to just dissapear on all of you. I didn't feel comfortable saying on such a public forum that our house would be empty for two weeks.

Don't know what's for dinner, off to the grocery store to restock.

Tonight we're having bacon chicken and ranch mac and cheese, from the latest Cooking Light I believe.

That just doesn't sound like something that should be in Cooking LIGHT does it? :laughing: I hope your DH had a good first day, and I'm glad everything worked out at your office.

I had to be at work early this morning - I don't do mornings well. I literally feel sick until late in the morning when I get up early :confused3 I am snacking on saltines and apple juice and am feeling a wee bit better.

Tonight we are having fish tacos

ETA: DH's first day was good, he is in training and said it's boring but he'll survive =) He is going to be working a lot of overtime and I warned him to not burn himself out but the overtime pay is motivating him right now!

A very quick check in so that y'all don't worry. Yesterday I was just busy & today is the same. I have an appt. with the neuro. dr. , find out what the MRI on my low back looked like & I will talk to him about my knee. My therapist said it's sounds like the miniscus is worn & I'll need to see an ortho. :sad2:
