Back to work today and it is snowy, drizzly and very icey. I wish I was home all snuggled in.

Okay, update on my Mexican Chicken in the crockpot. I just shredded my chicken and tasted it before adding the cream cheese. Let me just say it is pretty darn good. You could eat it just like this as a Mexican Chicken stew topped with sour cream and tortilla chips.

I like to Nanatize dishes a bit so ...I added a little diced onion and green pepper I had cut in the fridge. I also added a small can of creamed corn I had in the pantry, a dash of red hot and some fresh parsley but cilantro would have been better. I did use medium salsa so it has a nice kick.

Looking forward to dinner to get DH's opinion.
 
Quickly checking in (again). Work is busy now for me and Kenny, not that I'm complaining. Anything for job security. Mom is making meatloaf and bringing it for dinner. I'm making the mashed potatoes and veggies to go with it.

Maybe. I just think my crockpot is to large right now for the two of us. I also find it very hot compared to my old one I inherited from DH's ex. :lmao:

That sounds incredible, can you share the recipe for the chicken?

The newer ones do seem to cook hotter. I just adjust the cooking time. Not a big deal once you figure it out. Try the nachos!!!! Great football watching food!
 
Oh, my goodness! I just had a bowl of the soup I made and it's delish!!! I'll post the recipe, but talk about yummo!

It's another Rachael Ray recipe: Meatball and Sausage Pizza Stoup. Definitely a keeper!

I gotta run to Zumba now! I'll BBL.

I forgot I was going to make the tequila-lime wings, not the vietnamese. Whoops! They ALL looked tasty - didn't they?

For the wings, Guy (we're on a first name basis :laughing:) said I can bake the wings ahead of time and let them sit in the marinade before grilling. So, I'm going to bake them tomorrow night when I get in from work and let them marinade overnight for Thurs night.


My fever broke so I'm feeling halfway human. I'm sure it'll return, though :rolleyes:
 
ZUMBA IS AMAZING!!! I had a ball! Seriously, if you have the chance to take a class, DO IT!!! It was a fun way to spend the evening, and no one in the class, with the exception of the teacher, knew what she was doing. We all looked foolish together! I'm really excited to do this once a week. My SIL and a niece and I went together. So fun!!!

I'm exhausted now, though, so I'll post the recipe for dinner tomorrow. Got to go shower and head to bed!

Sheryl - Where are you? We are really worried!

Good Morning! Very sleepy today. Thomas has a cold so he was up a lot last night. He seems fine just runny, sneezy, coughy...a low temp last night but OK this morning. I wish he was better at letting me clean his nose. Poor thing is running like a faucet. I will call the dr later to see if I can give him anything.

Kathy, Aimee, Janice, Hope you're feeling better.

Ellen, stay warm. I am doing OK...my SIL is meeting with the doctors and social worker today so I should know more about my brother later.

Marilyn, good luck getting organized. We have gold fish in our tank too but every time we have bought them, they always warn us that they are messy. They are beautiful though. Our tank is neglected a bit since Tom is not here...that is one thing I will not take on.

Gretchen, hang in there my friend...glad you are keeping busy but I bet you cant wait till April 15th to get here! How is the house planning coming along?

Ann, My crock cooks really fast too. If something calls for about 8 hours, I cut that back to about 6. I hate that about the pot but just love having a meal done in it.

I know I missed a lot. I will try to get back here later. Andrew popped something on his braces so I have to run out today. I dont really want to take the baby out but have too. I am stress eating too and that has to stop since I cannot go to the gym...I did the treadmill here yesterday but the eating has to stop....today...

Good snowy morning! It's another blustery, snowy day here. The weatherman says it will burn off by midmorning, so here's hoping. I'll put off any errands until this afternoon, that's for sure!

Dinner tonight will be Moroccan chicken over couscous. Hope it's good. My SIL gave me the recipe and says her family loves it. We'll see.

Here's the recipe for the soup from last night.

Meatball and Sausage Pizza Stoup

2 Tbsp. EVOO
1 lb. bulk Italian sausage, sweet or hot
4 garlic cloves, 2 crushed and 2 minced
1 large yellow onion, chopped
1 carrot, peeled and chopped
2 celery ribs, chopped
1 quart chicken broth or stock
1 can (15 ounces) pizza sauce
1 lb. ground meet (beef, pork or veal or sirloin)
1/2 C. grated Parmigiano-Reggiano, plus more to pass at table
2 Tbsp. Italian bread crumbs
1 egg yolk, beaten
Salt and pepper
1/2 tsp. allspice
A handful of flat leaf parsley, chopped

Heat a medium soup pot over medium-high heat. Add EVOO and the sausage. Break up the sausage with the back of a wooden spoon and brown it, about 3 minutes. Add the 2 crushed garlic cloves and the chopped onion, carrot, and celery. Stir to combine and cook for 5 minutes. Add the chicken stock and pizza sauce and raise heat to high to bring to a boil.

Meanwhile, in a bowl mix the ground meat with the minced garlic, grated cheese, bread crumbs, egg yolk, salt and pepper, and allspice. Form bite-size balls and drop them into the boiling liquid. The meatballs will cook like dumplings in about 8 minutes. When all of the balls have been added and the stoup returns to a boil, reduce heat to a simmer. Cook for 8 to 10 minutes. Add the parsley, stir, and ladle into shallow bowls. Top with a little grated cheese at table.

This was really yummy! My kids all ate 2 bowls of this!

Good luck with those fish, this is a fish free house. We had them when we were little and they just aren't for me. I prefer them on my plate.
:laughing: Caili has fish. I don't know how they have survived because I rarely clean the tank. Once they die, though, no more fish...except like you said, for dinner.

Lauren -- I hope Thomas feels better. Poor baby. How is Andrew doing with the braces?

Glynis -- I really love zumba too. I do try to position myself somewhere where I don't have to watch myself in the mirror though. That way I can imagine that I look something like the instructor. :laughing:

The kids will probably want breakfast for dinner tonight. I'll make something else for me, but I am not sure what yet. It depends on whether my stomach feels better by then.

Dinner last night was pork loin marinaded in oj, honey, olive oil & herbs, wild rice & broccoli.
Tonight we are going out.....going to check out the Zagats so I can find a place we can walk to & Emily can go in her dance gear.
