Thanks Ellen. I don't know so much about deserving it, but I'm determined to enjoy it. It helps that Hailey doesn't understand what is going on so her joy hasn't been dampened. It's hard not to be happy when she is so happy.

It's ironic when I think back on things I remember telling Johnny the first time I met the coach that I thought he was arrogant and we chalked it up to the "college aura" that we weren't used to yet. Kyle has always had nothing but admiration and respect for ALL of his previous coaches but he told me early on that this one was "unlike" any other he's had, he was being very kind using that word. The manner in which the opposing teams players were treated was just the last straw for me, really sad.

:hug: I think the whole thing is just sad. But I'm very proud of Kyle for handling it in such a mature way. And I'm proud of you for not giving that coach a piece of your mind. (Which I am quite certain you have thought about on more than one occasion.)


Have Bunco tomorrow night and I have to go to the store tonight and get stuff to make a antipasto platter.

Have fun! I used to do Bunco some back when my sister lived here. I'd substitute for some of the members of her group.

I am feeling better today Janice, thanks for asking. I think between the Antivert and the mucinex I wiped out most of the problem. Dad however is a different matter. He had his first chemo last Friday and got really sick on Monday. He should be getting a little better by now but the nausea hasn't really quit and we can't get him to eat anything. We called the doctor and are trying a different anti-nausea but he just got the first dose this afternoon so it's too soon to see if this one works better or not.

I hope you are feeling better. Has your date been rescheduled?

Gorgonzola-Stuffed Chicken Breasts with Strawberry Gastrique

Gastrique is the French term for a thick, syrupy reduction sauce made from sugar, vinegar, and, often, fruit. Chicken broth balances its sweet-tart flavor. We loved the pungent Gorgonzola cheese here, but you might substitute your favorite blue cheese.


Sauce:
1 cup chopped strawberries
1/2 cup sugar
1/2 cup sherry vinegar
1/3 cup fat-free, less-sodium chicken broth
1/4 teaspoon ground coriander

Chicken:
1/4 cup (1 ounce) crumbled Gorgonzola cheese
2 teaspoons fresh thyme leaves
2 ounces prosciutto, chopped
4 (6-ounce) skinless, boneless chicken breast halves
Cooking spray
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper


1. To prepare sauce, place strawberries in a small, heavy saucepan; partially mash with a fork. Stir in sugar, vinegar, broth, and coriander; bring to a boil. Reduce heat, and simmer until reduced to 2/3 cup (about 30 minutes), stirring occasionally. Strain mixture through a sieve over a bowl; discard solids.

2. To prepare chicken, combine cheese, thyme, and prosciutto in a bowl. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket; spoon 3 tablespoons cheese mixture into each pocket.

3. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Sprinkle both sides of chicken evenly with salt and pepper. Add chicken to pan; cook 5 minutes or until browned. Turn chicken over; cook 4 minutes or until done. Serve with sauce.

My infusion did NOT go well. I am head to toe in hives. We tried steroids, benadryl, and everytime that iron started to drip I broke out again. The doc pulled the plug. Interestingly, he said this has sulfa in it, which I am allergic to, so he said I need another kind. They said it's the same kind I had last time that I didn't react to so they thought it'd be okay :confused3 ANyways. The kind I need won't be here until JULY! It's on backorder! So I have to get through camp and VBS without it :sad2: The nurse said I got 200 out of 1000 in me, so that's something at least. If my reaction doesn't improve or gets worse, I'll be taking a trip to the ER. Waste of a day =(

I am sorry, Aimee. My hubby is allergic to sulfur also and oh gosh one time he took some medicine for a sinus infection that had that as a base and he got hives and his entire skin turned red like a sunburn! Everywhere! He took the benadryl and stuff and it just did not help. I am glad you are feeling a little better, though I can't believe you have to wait so long for your treatment. :mad:

Does anyone have a marinade/rub for grilled tuna that you'd like to share?

Yes! Two from Mario Batali that I use all the time.

Option one:

2 tbsp. ground fennel seed
2 tbsp. crumbled dried oregano
2 tbsp. sugar
1 tbsp. kosher salt
2 lbs tuna, 1" thick

combine all spices and slather on both sides of tuna steak. Refrigerate to marinate for at least 30 minutes. Grill as you like.

Option two:

2 tbsp. finely chopped fresh rosemary
2 tbsp. freshly ground black pepper
1 tbsp. kosher salt
1 tsp. sugar

combine all

tuna, as thick as you can get it. this is enough spice for 2 1/2 lbs. tuna.

coat tuna in extra virgin olive oil, then press spice rub into both sides. grill as you like.

I now have 2 wedges of gruyere, fresh mozzarella, brie, blue cheese, parmesan wedge & grated but somehow I missed the gorganzola! :lmao: I continue to forget about the diet when I hit the grocery stores. :confused3

Kat, Angelina sharedd an apt with 3 other girls, she absolutely loved it. I'd cringe when I went into the bathroom & then I'd hear they had cleaned the place up for us! :rolleyes1 I've used that 2nd rub Becky suggested. I also do one just like Maria's but with lemon juice.

I ended up spending to much time on A's pedi four & bought roast beef po-boys for dinner. Yum.

Patrick will get ontrack, they have to give you a headache, either now or later. Daniel snuck up on us when we thought that we were out of the woods and looking back, I think I would have preferred to have him be a teenager when he was a younger, not as he was approaching 17! And my hair turned gray once Donny turned 12. I have never been the same :rolleyes1:rolleyes1 and Buddy was totally confused. His best parenting tips cam from watching The Cosby Show, but Cliff and Claire always managed to get their kids to turn around and see the light within 30 minutes. He would quote them constantly............I knew he was really in toruble when I found out he was tuning into Oprah whenever she had child behavior people on her show.

Anyway, we have survived, barely. The kids are all still alive, gainfully employed and as far as we know still sane. The same cannot be said for Buddy but he is not in the freezer so something came out of those Oprah shows :)

Dinner is on the run. Kady is coming to spend the night and has already brought her bags. She is baking a cake for her Pa and then we are heading out to see Hannah Montana. Buddy has orders to be nice, not to say anything about Billy Ray adn is nto to comment on any teen stuff he thinks is going to turn her into an outlaw :lmao: I better give him a glass of wine before we go, he just cannot help himself
 
Aimee, I am a big cooking light fan too. I am doing chicken tonight--either the recipe you posted or the one with the asparagus and sugar snap salad that was in the May issue. Sides will probably just be an arugula salad and some bread.

Don't know what's for dinner, I have to go grocery shopping. In the store flyer the "Panini of the week" is a greek panini. I won't be buying it but it looked really good so I might make that soon. It was feta, spinach, chicken, onion, tomato, and tzatziki sauce.

Morning Y'all,

Another one not starting out very well. I had an argument with my DH this morning all by myself! He just rolled away! Then I sent him a skype chat fussing at him. But he replys that he's sorry he didn't even know I was talking! If he weren't partially deaf in one ear, I really have to question that one. Again it was about the hired help.

Then Alexis was pokier than usual this morning but finally got her out of the door & to school. Came in hopped in the shower, got out ready to fix hair & knocked a full glass bottle of hair product on the marble floor. Shattered into teensy glass shreds mixed up with sticky hair stuff. Ugh, the day has to improve from here, right?;)

I was kind of upset about my hair yesterday. It has become super frizzy & dry lately & nothing is helping. I told my hairdresser & he said it was probably medications. Then he noticed it look damaged in layers/striations which he thought was strange. After questioning my meds, he suspects its my steroid/anesthesia injections I've been getting every few months. He thought a fresh cut might help. But then I woke up frizzy & wild this morning.

Unfortunately I had news yesterday, that has made me realize my issues are so minuscule. One of our young cousins (in her late 20's with a 2 yo) was told yesterday (by a radiologist!) that she needs biopsies immediately. That he suspects lymphoma. She has been going round & round for at least 8 months with her ENT over swollen & painful lymph nodes in her neck. He continued to insist it was a virus, then she found one in her breast & so here she is. Poor girl is worried sick. Her name is Debi, you prayers please add her to your list!
 
I hate to see his ball career end on such a sour note, but life isn't always sweet now is it.;)

Who knows how things will work out...it may not be over yet.

Tonight we have Caili's dress rehearsal for her skating show, so we're eating when she comes home from school. We might just have sandwiches. Liam is going to a friend's house, and I told the mom I would have him bring a pizza.

Tomorrow we have baseball, gymnastics, more baseball and the skating show, so I won't be back until Sunday evening at the earliest.
