The What's for Dinner Thread- June 2012 (recipe index in OP)

Howdy, all! Tonight we are going to my grandmother's for a belated Father's Day/early 4th of July dinner. We are having pork roast, potatoes and carrots, and fried okra. Knowing my grandmother, there will be additional sides, lol. I am still trying to eat better so I will just eat smaller portions of the potatoes and such. Like I said, I'm easing into this, so I'm eating SOME starch, just not the overabundance I am used to :)

If anyone would be willing to share some of their main dishes they enjoy when eating low/lower-carb, I would really appreciate it. I can only get so much from cookbooks. I trust you ladies so much more, if you get my drift.

Ladies I am reading a neat book right now - Wheat Belly. I am totally intrigued by it. I really agree with some of it. Have any of you ever tried it or heard of it? It really says that all of the "Whole wheat" is training our bodies to gain weight, especially in the belly. I never realized how wheat has changed over the years and how much wheat is in EVERYTHING we eat. Doug and I are thinking of at least looking into this. We have some really good friends that have totally eliminated wheat from their diets and are 1 - feeling better than they have in a long time, 2 - have lost a lot of weight, and 3 - have gotten off of some of their medications. I don't know - it is something new to think about.

I'm reading it now. It is interesting. I stopped eating wheat a few weeks ago after I suspected it was making me sick. I am feeling better, but I have no official diagnosis of a gluten or wheat issue, so I'm still wrestling with the idea what something that is advertised as being so healthy could be making me sick. However, I can silence any denial for hours by simply eating a muffin. :headache:

Literally translated it means "swish swish". You have a pot of boiling water in front of you, a plate of thinly sliced meat, a plate of assorted veggies, two dipping sauces and a bowl of rice. You cook the meat in the pot along with the veggies and they also provide a multitude of seasonings. When it's all done you have a nice soup to finish your meal. There are two kinds of noodles, your DH can't have the Udon, but I bet he could have the mung bean or glass noodles.

It's very healthy and filling and super tasty too!

Morning! Today is the day we eat out, and I'm not sure where we are going yet. I am thinking maybe Jason's Deli. They have an awesome salad bar there (and I hate salad bars, they have a huge ICK factor to me), and I won't completely fall off the wagon eating there.

And in defense of my new Starbuck's drink of choice, I am normally a fan of the sweetest, sugary-ist, whole milk-est drink I can find. And a grande at that. So I was looking for something I could get there that wouldn't totally kill my new eating habits. I HATE sugar-free stuff so I gave an iced coffee with skim milk and a few Equals a try and it's awesome. No, it's not my normal grande iced/hot white chocolate mocha with whip, but it's really good and something I can feel better about drinking.

And might I add that our Starbucks is within walking distance of my gym. No, coffee is not the best drink of choice after a workout, but it was a treat for me this week after a workout or two. I haven't been working out AT ALL, so I have done great this week.

Lindsay- I have reached a point where I am usually okay with salad bars. And I have developed a great fondness for salad.........hunger will do that ;)

As to the coffee, I also had to figure out how to enjoy my iced coffee and you know I love all those wonderful flavored iced delights that Starbucks has to offer!

I brew strong coffee and keep it in the fridge. There are several alternatives to sweetening the drink, I use Splenda most of the time but Stevia is really good too. Marisa and I found an inexpensive SF syrup line at Sam's Club so lately I use a splash of SF raspberry or caramel in my iced coffee. I also have been able to stop using coffee cream but that took time. Use 1/2 and 1/2 or light cream but just a little bit. There are fewer carbs than milk so if you are monitoring your carbs over your calories I have found this gives you a bigger flavor bang for your limited carb buck.

I buy iced coffee as a treat too. I may be wrong but I figure that if I get in all my waters before I am entitled to drink my treat whenever I choose :snooty::snooty: I have also found that when I am looking for my sweet inteh afternoon an iced drink does the trick. I don't have cravings anymore but years of habits are hard to break.

I forgot to post dinner. Last night I had the girls for a few hours, Nola wanted to visit and Bud and I were totally on board with having the two little :wizard: princess::wizard:princess: joining us! Then some neighbors dropped by so dinner was haphazard around 9PM. Buddy would only eat sandwiches, chips and blueberry pie (yep, he is watching his calories :rotfl:) and I had a salad with poached eggs and ham.

Tonight we are joining a coworker of Buddy's and his wife for dinner. I am going to try not to fall off my wagon so wish me luck!

Last night we went to at Bernie's Dining Depot with Buddy's coworker. I was not looking forward but it was a wonderful night! I did cheat a bit and will pay for it but Holy Mother of Goodness!!!!!!!!!!!!!! I have never seen Buddy cry Uncle at dinner before but he did last night. The restaurant is an old train car which is kind of fun to begin with. The meal is gynormous portions of really delicious food. Not fancy at all but all home-style selections. Buddy got prime rib, a regular cut. I swear it was 2 pounds. Mashed potatoes, but what never happens is that the server asked if he wanted gracy. Gravy? Really? Real gravy? I thought he was going to swoon............I have not made him a nice gravy in months..since my diet no gravy in this house for my poor neglected deprived gravy lovin guy :rotfl2:

There was a larger cut and I kind of wish he had ordered it, I would have two night off from cooking. I was told it was at least 4 inches thick.

I am not sure about dinner today. I have chicken ready to grill and plenty of salad to make but I am really sick of chicken!!!!!!!!!!!!!!! I had broiled cod and sea scallops last night but I really want some more fish. WE'll see if I drag my sorry self to a grocery store or just cook what I had planned.
