The What's For Dinner Thread - Feb '09(recipe index in OP)

After dinner we're going to watch "Finnian's Rainbow". Last year we tried watching "Darby O'Gill and the Little People", but the banshee scared my kids to death and I ended up with a bed full of my own little people.

Oh my gosh, that movie terrified me as a child. I haven't watched it since because I was so scared of that banchee! :laughing:

Back from the ENT...3 hours, oyyyyy.
Anyway I have major fluid in both ears but the infections are gone.
She gave me 2 medications...I have to wait 2 weeks & if the fluid isn't gone they will make incisions and put tubes in. I really can't see me being like this for 2 more weeks so I told her I will call Friday if there isn't an improvement.
I do have hearing loss on both sides from the fluid.

Wow, that was a long stroll down memory lane. Anyway, I'm proud of myself, and this thread has played a huge part in helping me cook healthy meals!

I had a long, but good, day. I ended up calling in and hitting the golf course with DH. Read almost an entire book (The Memory Keeper's Daughter - anyone read it?) while driving around in the cart. It was a GORGEOUS day - 80 without a cloud in the sky.

Because they were running a St Pattys Day promotion, it took us forever to finish so we didn't leave the course until after 7pm. Gave in to hunger and stopped at Chick Fil A.

DH did (miraculously) find the corned beef brisket so I think we'll have that tomorrow night.
 
Kris was great tonight. John and I can't decide who should go home next--we like almost everyone. I usually hate country week but I enjoyed this year's country week. I was especially tickled that the celebrity host was an artist that my Mom just loves. I've downloaded some of his music from itunes and made cds for her before. Using her song requests of course... I'd have no idea otherwise. :laughing:

I forgot to post about dinner. We had French dips. I don't know where my DH got the bread but it was good. Crispy yet fluffy.

Thanks for all the encouragement! It's been a struggle at times, but I'm in great health now.

Dinner was so yummy! The kids and Alan loved it! Mary wants to have St. Patrick's day twice a month. I love it when they enjoy my cooking.

The best news is that I found the camera battery charger. I'm now charging the batteries and will upload some pictures tomorrow. I even took pictures of tonight's dinner. That's how excited I was!

Tonight I'm making taco salad for dinner. I have a philosophy in life: Sometimes you just need a taco.

You'll never guess (read that sarcastically) what I got yesterday? A Facebook invitation (yes, you read that correctly) to Kevin and Amanda's wedding. Oy, oy, oy. Did our parents not raise us better than that? Scott talked to his dad last night and found out that they are, in fact, sending invitations by mail. I'm sorry, but I think sending wedding invitations through Facebook is tacky.

Also, I have more proof that I am not meant to be a parent. Amanda has a son by her first marriage. Here's what the invitation said (I changed names to be nice):

Why shouldn't I be a parent? Because I rolled my eyes instead of thinking it was "the cutest thing I'd ever read."

*The parts I bolded:

Volleyball? Whatever floats your boat. Scott said that would be our cue to go home.

Hawaiian t-shirts and flip flops? Not gonna happen. I don't own a Hawaiian shirt and wouldn't be caught dead in one (trust me, they are going for the really tacky ones), and I cannot wear flip flops. I guess I will be the killjoy in capris and a nice t-shirt.

I know I'm sounding witchy with a "b" about this, but I've really had enough of these two. Back in January, we all had dinner at my in-laws the week before we went to WDW. Kevin went on and on about how we'd get together when got back so they could see our pictures, and that they'd call us. Never heard from them.

On Facebook, I filled out one of those "things about me" notes and one of the questions was what annoys you. I responded, "People who say they'll call you and you'll do something and then you never hear from them." Guess who called that afternoon?

Anyway, they asked if we could get together. We said sure. He said he would be out of town that next weekend (he called on a Sunday), but how about the weekend after that. "Sure!" we said, happy that had actually set down a date.

We haven't heard from them since, except for that freaking Facebook invitation,

I am seriously done with them. After all that crap we went through with him and Robin last year, I have been treading softly and putting the ball in his court. That obviously doesn't work.

If any of you Facebook guys saw my status this weekend that said I was "zip-a-dee-do-dah done" it was talking about them.

Sorry this was so long, I needed to vent.

ETA: Ryan can't speak clearly yet, and cannot pronounce Kevin and it sounds like Pepé . That's what that was about in the invitation.
 
Morning all, we're on our way to a beautiful day here.

Aimee- He does look skinny, but his coat looks really healthy. I bet in now time he'll be in great shape- he can borrow a couple of pounds from my pup. My mother in law gave me that book for my birthday, I don't know why. I read the back and it doesn't look like something I would read. She seems to think if it makes the NY times bestseller list we should all love it. I really enjoy reading but it doesn't look like a happy book.

Becky and Kathy- I used to think country music was stupid, but then my husband borrowed my car and forgot to change the station back. He had been listening in secret, after I was done laughing at him, I ended up really liking it. There is one song (I don't know names) about a guy who has a baby girl earlier in life than planned and it turns out being the best thing, it gets me everytime. But you are not going to get me to watch American Idol, won't happen.

Don't know what's for dinner. I have to take my monthly trip to BJ's and Trade Joe's, so I'm sure I'll find something there.
 
Dinner tonight will be salmon.

My DM got a crockpot cookbook at the library and I started going through it last night. I'm finding some really good recipes so I'm thinking I'll start doing a crockpot night every other week.

I bought some mussels and cod at the store yesterday, and am planning a nice healthy steamed fish stew. Unless I decide to cook the mussels in a garlic cream sauce and make french fries for dipping. :laughing:

:lmao: Oh well, I guess it is too late for you to try my method. I actually learned it from Kenny's mom. When Kenny and I were married, I thought it was strange that none of them knew how old she was. I'd hear Kenny and his sisters discuss it and try to figure out her age based on theirs and their aunt's and uncle's. ;) I thought right then "what a smart woman". I have since discovered her birth date, by accident. She handed me her voter registration card during the last primary to see if I could read the precinct number since the voting places were different this year. It had her birth date on it and I don't think she realized it. So now I know, but I still haven't told Kenny or his sisters. Not my secret to tell as my father would say. ;)


Update on the bathing suit situation. I called my local maternity store and they got a couple of suits in, in my size. :cool1: Wish me luck I am going tomorrow morning to try them one. This buoyant body is getting in a pool either way.

Good luck. I like the print one, but just get one and don't worry about the cost. When you compare that to all the other things you'll buy at Disney, that will seem like a bargain.


The first time I went to Disney I was 23 and Buddy took me. We stayed at the Contemporary and I thought I was in Heaven. Remember Dinner at the Top of the World? You needed to dress for dinner? It was so romantic. A few years later he said we needed to take the kids and insisted on the CR again so that they would be immersed in Disney. We saved (he saved) and saved for the trip and it has those treasured memories too.

I do remember the Top of the World. However, we never got to eat there. There were too many of us for that to be affordable and Mom and Dad saved all year just so we could stay in the Contemporary. Besides, we were kids and we were at Disney. We didn't care what we ate. Well, except when we went to the Crystal Palace (pre-character meal) and we had to eat veggies, ususally those hard peas and carrots mixed together. They served them everywhere and Daddy would always point them out and call them "rocks".

Those memories are so very precious to me. Now even more so as I finally have to acknowledge that my parents are getting older.


Yes. That is my great accomplishment to date (besides my kids, of course).

And you have a very good reason to be proud!

Tory looked almost that skinny when we got her. You could see every rib the dog had. She's been with us for 10 days and already she is putting some weight on and is looking much better. We have enjoyed her so much.

I haven't forgotten my promise to get you a picture, but I've been really busy in the evenings trying to get ready for our weekend trip. Hopefully I can do it next week.

For once, I am pretty organized about my meals this week. Last night when I was making the salmon dish, I made a smoky fish chowder for dinner tonight. Caili has skating, so I can just reheat the chowder when we get home.

We had corn beef & cabbage last night. I ended up sort of going with Maria's recipe. (Y'all know me & following recipes.:rolleyes1 ) I used the pressure cooker dumped in guinness & some bay leaves. Cooked it about an hour & half, drained some of the liquid added cabbage & potatoes closed the cooker & cooked another half hour. Served it with a horseradish mustard mix. DH loved it, I thought it was just okay.

Now Glynis's Irish Soda Bread.... Oh my Goodness that is yummy!!! Alexis & I made that & the Irish Brown Bread. The brown bread hasn't even been sliced yet but Glynis's bread is almost gone!
