The What's for Dinner Thread - August 2014 (recipe index in OP)

Well I finally got a blood test yesterday and she didn't kill me or bruise me. I prefer to pick my own vampire, not let the doctor steer me to one. So what did I do after that? Got Hotcakes and Sausage from McDonald's! :rotfl2: I swear, this doctor tells me that you lose your taste for things after not eating them, and I know you feel that way too Brandi, but not me! :lmao: I savored every bite of those pancakes. I can't wait to eat my birthday cake on Friday night! This whole week I am going to splurge and eat stuff I'm not supposed to!

Although last night I was good and we had a whole roasted chicken (the cats ate most of it) and roasted asparagus. Tonight we go to band and I'm going to order a drive through burger. I need to figure out which chain to go with. I would rather go to my favorite hole in the wall, but they closed down about six months ago and put up a sign saying they would reopen after remodeling. It's going really slow, but every time I drive past I keep doing the old Mervyn's commercial thing, "open, open, open."
Well it took me about 6 months to year to lose the taste for things, I dont even want them anymore. BUT there are things like cheese, that I miss very much.
 
Alison ~ I haven't asked lately - How is Fran feeling? Birthday weekend is coming up real soon (Man, you don't know how I am tempted to just get on a plane without Doug and come celebrate with you). I am so excited for you but I also know you will have more fun if Fran is up to it.

I don't know how I missed your post this morning! Fran is doing OK. We're at the doctor doing the prelims for a drug study that she's starting.

It's not too late! Come on out! There is still one spot left in the girls room.

That's too bad about not coming out here. Really it's been five years? Wasn't that when someone sent you two for like five days? I was new to the thread back then. Was it THAT long ago?

Well DL will still be here and I have some great teats for you when you do make it out here!
 
PIO ~ I know you are so excited to see DH. I bet DS is excited. But as excited as you 2 are, I bet he can't wait to get home also. It is always nice to get away but even better to be home.
I have put the DL trip on the back burner for now - I think I was pushing to hard and Doug really dug his heels in. He really wants to go to WDW this summer. Oh, I will get him there - believe me. I want to go and I know he will turn around. We just haven't been to Disney for 5 years and there is so much new in Florida that I think he wants to go there first. So who am I to argue. Maybe in the fall - who knows, but for now I am not pushing it.

He's home now. Tired, but glad to be home. DS and I are really glad to see him too. He's stayed up all day and its about time for bed for him. With luck, he'll have a good night's sleep and get back into the timezone tomorrow.



As soon as dinner is over we are going to work in the yard. It is WAY overdue. We have played way too much and our yard is really suffering. So tonight is the time we have to reclaim it. The weather is supposed to be nice so there are no more excuses. We have 5 acres that the house is on, so it is a BIG job and can get away from us real fast. Tonight is the night!

Well it took me about 6 months to year to lose the taste for things, I dont even want them anymore. BUT there are things like cheese, that I miss very much.

6 months sounds about right.

I can't eat super sweet things anymore.

It won't. I've been testing my blood sugar with my little home monitor and it just doesn't get low enough with diet alone. I probably need some stronger medicine, but this doctor has just turned into an idiot. She used to be good but bow she has become so holistic that it seems she is shunning real medicine. We really need a new doctor but haven't had time to research one. Plus her 24/7 availability has spoiled us so it's a give and take.

I should have got the results yesterday. She usually emails them to me within a day after the test. Maybe they're so bad that she doesn't want to send them. At this point I don't care, if she isn't going to give me medicine to improve my condition, I'm not going worry about it. I can't be as bad off as some of the people out there in the world. But I'm sorry I just don't like veggies all that much. I couldn't eat only veggies and be happy. Last night that Wendy's cheese burger that I ate was so good. I finished every bite! I won't have one again for a long time, but it sure was gpod to have it last night!

tonight is cauliflower, and butternut squash.

I think it is time for me to have a new dr also, mine just does not give me that good feeling I want.

Alison ~ The last time we went to Disney was in 2010. It was Doug & I and Matthew & his then girlfriend Ali. We went for a week and it rained the WHOLE time. We ended up playing cards in the Food Court a LOT!! Not the best of trips, so I really want a do over. Hey, I am not saying we won't be coming to DL, just that I have backed off of the pleading - for now. Oh, we WILL get there - yes we will!! My DL book has been delivered today - I will pick that baby up right after work.
I agree, it might be time for a new doctor. And I also agree you are doing just fine.

PIO ~ I am so glad DH is home and all is well.
That 5 acres is just what the house sits on. It does include about 2 acres of my orchard. It is so pretty right now with all of my apple, apricot and cherry trees in full bloom. You couldn't buy me a new house fully paid for to move back into town. I love living in and on the land. It is just a different kind of lifestyle. And this comes for a City girl from St. Louis MO.

Brandi ~ Yes, my dear, if you have lost that loving feeling then it is time to move on. I love my Dr. and have followed her 35 miles to the city. I think it all boils down to trust. If you have tha,t then you have everything. When you start to doubt that, find a new one.

Busy busy day yesterday, sorry I wasn't here. It seems I have days with nothing to do and then I am slammed with lots to do.

Last night Ethan and I went to the Hockey game. This is the 2nd game of the Clark Cup playoff and was supposed to be played on Saturday. But they had a leak on the ice so it was postponed. They rescheduled it for last night and of course Doug was on call and couldn't go, so I asked Ethan. He was thrilled. We had SO much fun!!

I am looking forward to the day that I get back home, and to acreage that I can do anything on. 20 is plenty for a house and garden and buffer.

I think the problem is my Dr is a GP and I need people who are more specialized. He is great at the yearly physical and blood work, but I really think I need to see an allergist again, and I need someone to look at my hip. It has been hurting since Nov, and I got from him, is that I am getting older.

I dont like that answer.

For dinner tonight we are going out with a friend in town from Florida to a Cuban place.
 
tonight we ordered from a Thai/Japanese place. We ordered like $100 worth of food and ended up eating about 2/3 of it. There is a bunch of tempura left, some sushi rolls and noodles. There are leftovers from last night. Fish, and stuff plus we have chicken leftovers from the lunch at Mrs Knott's today. AND we are leaving tomorrow afternoon for two days. We have a lot of food and not enough cats to eat it!
 
So for dinner at the Cuban place I had black beans, rice and plantains.

Tonight is pizza and salad

Alison that is a lot of left overs. But your party is so close. I am excited for you.

Alison ~ Happy Birthday my friend. I can't wait to hear how your weekend celebration goes. I so wish I could have come to help you celebrate. By the time I thought of it, it was to late. Have a great time!!!

Brandi ~ Are you doing the pizza with the cauliflower base? That is SO good and a real keeper. Oh how I love plantains. They remind me so much of our time in Panama. We use to have them many different ways as they were so plentiful and the trees grew like weeds.

Nothing to big planned for the weekend. Doug is on call so we have to stick to town. We have a lot to do around the farm so I am sure we will find something to do. Heck there is ALWAYS something to do around here. We never ever get caught up. It is to get up in the high 80's. I am so not ready to turn the AC on just yet. We shall see if Doug caves.

Matthew is running in the Lincoln Marathon. This is the first time I won't be there to cheer him on. I was planning to go (without Doug) but he has a jam packed weekend so it really wouldn't be smart. If you could think of him and pray that he gets along ok, I would so appreciate it. Thanks!!

DH is back for 3 days now and the routine that DS and I had.....out the window!
DS is back to going to bed late and getting his dad to do stuff for him. :sad1:
It took us 5 hours duration to clean the house with DH "helping" me. It has taken me 3 hours by myself!! :rolleyes1
We have no idea what's for dinner tonight as we've come to the end of this week's menu plan. :faint:

But I wouldn't change anything if it meant that DH was not at home. :love:


The sun is starting to shine here. It was a very cloudy morning this morning and it's now 2 pm. Hopefully it'll be a pleasant afternoon. I have washing on the line and am hoping that we get the sun to partially dry it before throwing it in the dryer.

Well I have no idea what will be for dinner. There is so much food left from Friday night it isn't even funny! I'm thinking of making tri tip sandwiches for the valets with sone of the leftovers. Maybe I'll even make them chicken sandwiches. I better assess the leftovers damage.

Ellen, I have not been able to get a cauliflower crust to work for me. Most of them use eggs, and I do not want any animal in my pizza. If you have a recipe let me know.

PIO - I live by my schedules, I know it is crazy, but it just makes everything run so smoothly.

Alison - I hope the weekend was magically and everything was amazing. Happy Birthday again.

Saturday was a Crawfish boil at a friends house, So I ate Potatoes, Mushrooms, and Asparagus
Sunday was a wedding and I had mushroom ravioli.

Tuesday night we fly to Orlando!

I am SO excited..........I just won tickets to see Garth Brooks and Trish Yearwood for this Friday. I have loved Garth for forever and this is a dream come true. Last week there were chances on our local radio station to have your name put in for the tickets and they drew my name this morning at 7. I am beyond excited. WooHoo!!!

PIO ~ This is the recipe I use and love it.

Cauliflower Crust Pizza

Ingredients
Nonstick spray 2 1/2 cups cauliflower, grated (about 1/2 a large head) 1 large egg, lightly beaten 1 1/4 cups shredded part-skim mozzarella cheese 2 tablespoons grated parmesan cheese Kosher salt and freshly ground black pepper 1/4 cup tomato sauce 1 cup grape tomatoes, sliced in half 2 cloves garlic, sliced 1/4 teaspoon crushed red pepper flakes Fresh basil leaves, optional.

Directions
  1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF.
  2. Grate the cauliflower using a box grater until you have two cups of cauliflower crumbles. Place in a large bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool.
  3. Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until golden.
  4. Top the pizza with ingredients. Bake in the oven until melted and bubbly, another 10 minutes.

Brandi ~ this one I use does have an egg. I think it is only used as a binder. I really think you could omit it if you could find something else. Just a thought.

Alison ~ I thought of you absolutely all weekend. I know you had a blast, I can't wait to hear all about it and how Fran got along.

Matthew did very well in the marathon. He ran the 1/2 in less than 2 hours. Crazy kid - but he loves it!! And is very dedicated. Stephanie has run many Marathons, this is the first year she hasn't run the Lincoln Marathon. But she will join him for the Omaha and then me and all the kids are doing a 5K in June. I walk - they run!!

I started redoing my kitchen this weekend. I have been thinking about it for about a year now. I finally decided what I wanted to do and got busy on Saturday. I started on the ceiling and will work my way down. Got it all trimmed and now ready for rolling. I am in no real big hurry, so we are doing it slow. But already it looks better.
