The What's for Dinner Thread - August 2014 (recipe index in OP)

Kimmar - Hope things are okay with you.....
...meh.....the PARCC testing is in its third week and wreaking havoc on my lesson plans....throw in yesterday's 5 inches of snow [with early dismissal] on the first day of Spring and I still have not been in my 6th grade room for a while now [I am in a smaller 'borrowed' classroom with 34 students]....it's one crazy school year...
 
....I have very [if any at all] limited access to a computer at school, what with all the on-line PARCC testing going on...it was supposed to end this Monday, but we lost a testing session yesterday, since we had an early dismissal because of the impending snow, so now it's pushed to Wednesday or so....

....what was for dinner yesterday? Potato gnocchi with butternut squash sauce, drizzled with freshly grated parmesan cheese...
 

Dinner last night was Indian, David took me to get a 2 hour massage then to dinner at the Indian restaurant. :)

Last night we had baked Mahi Mahi and zucchini boats. Fran has had enough of my eating plan. She had a meltdown last night, the thing is I am enjoying the weight loss I'm experiencing. How do I get her on board with this?

Tonight I have to go to LA for a rehearsal. I'm wary of leaving her home alone, but thankful that she decided not to go. No clue what dinner will be. Same for tomorrow. The concert is at 3PM. At least tomorrow I can pick up take out on the way home.

Will life go back to some sort of normal schedule after the PARCC testing?

Alison - Did the Dr put her on the same eating plan? If not, I would be tempted to cook something extra with carbs for her. I know it's a PITA (you have to cook something that you cannot eat) but if it creates peace in the household, it might be something to consider.


I hope things go well for you and her with rehearsal and everything.
 
WFDT? Last night we had some Ramen soup noodles. The seasons are changing over here and I'm usually more susceptible to colds and flu's when it happens. I've had a niggle in the throat, a bad headache and was coughing yesterday. So, I decided some comfort food was in order. I also got into bed by 8 pm last night and fell asleep early. Feeling so much better this morning.

....I sure hope so, but I am one of a handful of teachers who have not been observed yet....and my supervisors have to observe each teacher 3 times [mine is two 20-minute periods and one 40-minute period]within the school year...
 
....and add to the mix that a 2nd round of PARCC testing will take place the end of May....that puts all the pressure on me...

I will probably just have to give up on the plan.

Can't do that now. One day, I eat chow mein and potstickers and my blood sugar shoots up to 210. It was nicely hovering around 112-120 eating on plan.

WFD? I think I'm going to get Polly's take out on the way home from the concert. That means Salisbury steak, beans and creamed spinach for me and a burger for Fran.
