I was until I got a call today that there is a water leak under the house.
Just when I think I'm doing well with Kyle gone, I start crying as soon as I start talking about it with anyone!
Stick some chewing gum in the leak!

Dinner tonight will be fish, roasted veggies and some sort of veggie, not sure which yet. I was looking at all of the differant ones I have in the freezer and fresh and can't decide.
I made an awesome Sour Cream Peach Pie.

Just a little FYI, I was a little freaked out when I opened the oven after the 35 cooking time and saw it was still a little soupy in the middle until I realized there weren't any eggs in it so it didn't matter.

I think it was because of the peach juice, it did firm up some. And with the carmelization the original recipe called for 2 to 3 minutes but with my oven it happened in less than a minute and started to burn, that set off the smoke detector!

My DM was in bed asleep but apparently didn't wake up.
Sour Cream Peach Pie
3/4 cup sour cream
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon almond extract
1 tablespoon all-purpose flour
1 (9 inch) unbaked pie crust
4 cups sliced fresh or frozen peaches
1/4 cup brown sugar
Preheat the oven to 425 degrees F (220 degrees C).
In a medium bowl, stir together the sour cream, white sugar, 1/3 cup flour and almond extract until smooth. Sprinkle 1 tablespoon of flour over the pie crust to prevent it from getting soggy. Alternate layers of peaches and the sour cream mixture, beginning with a layer of peaches and ending with a layer of sour cream.
Bake for 20 minutes in the preheated oven. Reduce the heat to 350 degrees F (175 degrees C). Continue baking for an additional 35 minutes. Remove the pie from the oven and sprinkle brown sugar over the top. Set the oven to Broil and broil until caramelized,
watch carefully to make sure it does not burn. Pull it from the oven the second it starts to bubble.
