We took our kids on a surprise trip last year, week before Easter. We had a great time, did a lot of attractions and rides AND we do not go usually go early.
We are not morning people.
Our first day in the parks, Sunday before Easter, we went to Epcot at 3:00! Had a lot of fun, did many attractions there. MS was a 15 wait! Test Track had a 90 minute wait, no fastpass left so I said "hey, lets try back tonight before leaving."
It worked. Before closing we were able to walk on to Test Track twice! It was great, we saw Illuminations as we were on the outside stretch of the ride which made it all the more special.

If you plan to go again, then some things you can pass up if the wait is too long. We didn't ride some things and told the kids we will hit it on the next trip.
The best thing about that week is the MK is open til midnight and parades should be running twice. Just catch the last parade.
Share a Dream was running at 1 and 3 while we were there and we caught the 3:00 parade with no real crowds around. Same for Spectro.
We took midday breaks on our MK days and that worked great. Lots of pool time. Our Epcot days, we went in a little later. Skipped MGM that trip, went to AK twice. First time we went early for a character breakfast and left fairly early due to crowds. Second time we arrived a little later and stayed till the park closed.
One of our MK days we arrived pretty early, followed the Unofficial Guide touring plans and did everything we wanted to with no wait longer than 20 minutes.
A tip I found here last year was to hit MK on Good Friday for lower crowds. It seemed to work.
Don't worry, you will be at WDW and as long as you have plans in place you should be fine. Pack a sweatshirt!
