Kathy, here, at long last, is the roast recipe:

Mom's old-fashioned roast (for medium-rare):

For all roasts, coat with flour and season well with salt and pepper. Mom also either adds garlic powder or makes small slits in the roast and inserts garlic slices. She puts fresh rosemary on top. She roasts in a regular baking dish.

Weekday roast: Cook a rump roast for 26 minutes/pound at 325. Rest, loosely covered with foil for 20 minutes.

Weekend roast: Cook sirloin roast for 21 minutes/pound. Rest, loosely covered with foil for 20 minutes.

Special Occasion Roast: Cook tenderloin roast 21 minutes/pound at 325. Rest, loosely covered with foil, for 10-20 minutes.

Serve with gravy.

Is a weekend roast/sirloin roast a spoon roast?

Last night's dinner was pretty good--I ended up making two totally different things, hoping the kids would eat one. Yeah, right! But we had Fontina and Marscapone Mac and Cheese, and Sriacha Glazed Chicken with Rice.

Today I officially sick--fever, swollen glands, the whole bit! So no cooking today--I NEED to go to the store b/c we don't even have milk, but we'll see if that even happens

I just put all of the ingredients for chili in my crockpot. I'm working a little late tonight so it will be nice to have it all done when I get home.

I hope you feel better soon Stephanie! Get your self some 7 up or gingerale at the store...we like to mix 7up with cranapple juice when we're sick- my mother always pushed fluids when I was sick....

Morning all--

Stephanie--try to take it easy...I know easier said then done, but try, I hope you feel better soon!!

Ross is feeling much better today, still sniffling and such, but no fever, and he has energy....he sounds awful,...and I am sure that he will be tired this afternoon, but still much better then yesterday, amazing what a day on the couch in your pj's can do for you, lol. Kids bounce back so fast!! This is the only his 3rd cold since his T/A in first grade!

I have physical therapy this morning, and then we have parent/teacher conf. this evening. Ross has karate tonight, but we will see how he feels after school if he will go or not. Supper tonight will be something out as we have one meeting at 5:45 with his gifted teacher, and then the other at 6:30 with his reg class teacher. It is chilly, and raining here today, and I would much rather stay in with a cup of tea and a good book, lol.
Hope everyone has a wonderful day!

If you are just out of milk, let it go. If you need something like ginger ale, then that's different. Your family will have no problem with what you have on hand, so take it easy and stay warm.

Us too. Ginger ale and tea was my Mom's remedy.

Glad Ross is feeling better. I think it is awfully early for all these colds to be going around .

Good morning!

Steph - Take it easy, hope you start feeling better soon.

Wendie - Glad to hear Ross is bouncing back!

WFD - Chicken Sausalito, spanish rice and zucchini.

Morning Y'all,

I'm feeling under the weather too. Bad sore throat & sinus drip, my stomach feels kind of funky too. But today is Bob's b-day & he requested grilled ribeyes & baked potato. I have filets in the freezer, but he had to ask for ribeyes, so I've got to go to the grocery.

Stephanie, Take care of yourself!

Wendie, Good luck at the therapist, I'm sure that's no fun at all! And with your very busy day!

Have a good day everyone.

Sheryl

Thanks Laura. I printed a copy of this to give it a try. Like Kathy's husband, I prefer my roast to be the sliced type.

I am going to grocery shop in a few minutes. I know if I don't buy stuff now we'll be eating fast food the rest of the week. Thanks for the inspiration menus!

Sorry I couldn't help. I normally plan an entire week's menu, but with the kids not feeling well, I just didn't have time. This week is kind of throw it together at the last minute type of meals.

Sorry you are sick. I know it's hard, but try to take care of yourself today.

I've never done that but it sounds good. Maybe I could get the kids to drink it that way.

Is the chicken recipe posted? (Not so subtle hint) :goodvibes

Thanks to everyone for the well wishes for the children. Amanda seems fine. Patrick still has a lingering cough but is otherwise ok. Hailey has an ear infection and is now taking antibiotics. I hope we can get it under control before we leave.

Last night's dinner was baked pork chops with brie, steamed green beans, and rice pilaf.

Tonight's dinner will be WW sticky chicken and steamed veggies.

Happy Birthday to Bob!

I'm not sure. :confused3 The sirloin roast is the cut of meat. I've never seen it labeled as anything other than sirloin roast.

Today I officially sick--fever, swollen glands, the whole bit! So no cooking today--I NEED to go to the store b/c we don't even have milk, but we'll see if that even happens

Take it easy, Stephanie! I'm sure the kids can survive a day without milk.

When we were kids and had colds/fevers, my mom used to make jello mix and have us drink it warm. That was the only good part about being sick.

I'm making pot roast for dinner tonight. Sides will be mashed potatoes, gravy and spinach. I'll also heat up the rest of the chicken and quesadilla leftovers in case the kids won't eat the roast.

:bday: to Bob!!!!

No it's not, Id be happy to share it. I's a low fat yummy recipe!! I'll be praying for Hailey.

Chicken Sausalito

Vegetable cooking spray
4 boneless skinless breasts, cut into cubes
1/2 c. chopped onion
1 tsp. minced garlic
2 Tbsp. flour
1 - 15 oz. can black or red kidney beans, rinsed and drained
2/3 c. chopped tomato
2 - 3 Tbsp. salsa
1/2 c. reduced fat sour cream
salt & pepper to taste
3 c. cooked rice
Garnishes: salsa, chopped avocado, sliced green onions and/or finely chopped cilantro or parsley

Spray a large skillet with cooking spray; heat over medium heat until hot. Saute chicken, onion and garlic until chicken is cooked, five to eight minutes. Sprinkle chicken with flour and cook one minute longer.

Stir in beans, tomato, salsa and sour cream. Cook until hot, one to two minutes. Season to taste with salt & pepper, spoon over rice and garnish.

Kathy, thanks for the recipe! I was going to ask for it, too ;)

Stephanie and Sheryl - hope you both feel better soon.

No idea what's for dinner. Might bring home something again. *sigh*

SHeryl- Sorry you are not feeling well, this seems to be a rough week for teh WFD's and their families. Wish Bob a big :bday: from me!

Laura- I used to give the kids jello water too. The pediatrician recommended that as a way to get sugar and liquid into them.

Gretchen- better the infections run their course now than the kids fight it off for two weeks and boom! right in time for vacation. I hate to see them sick but sick for a vacation is the pits!

Nancy both of the roasts Laura posted are sliceable roasts. The difference is the cut of meat and therefore the rpice--the sirloin is more $$ per lb. than the rump. By spoon roast do you mean that the meat is so tender you can pull it apart with 2 sppons? If yes, than the closest thing I can think of to that is my Mom's recipe for pot roast. In general, all the meat cooked around here is pretty rare, and so would not be able to be pulled apart. I am sure Laura has the pot roast recipe too if you want it.

Here is a photo of last night's dinner. Pasta with eggplant and mozzarella:

and crusty bread with garlic dipping oil that my Mom made:

I just got an email from DH that he went to Salt Island last night and had fresh florida grouper--yes his meal sounds better than mine!

Tonight dinner is going to be mushroom soup, and some different kinds of crusty bread from Iggys bakery.

Thanks all for the get well wishes. I think I have the flu--ugh! And to think I scheduled my flu shot for next week. Murphy's law, I suppose. But I'll know for sure tomorrow when I can get in to see my dr. And I did get to the store--it was probably the most uncomfortable trip ever. I know I forgot lots of things, but I got soup and sprite for me and stuff DH can fix for the kidlets tonight.

Sheryl--feel better soon--and you are super woman for cooking all that when you don't feel well. Your DH better really appreciate the food and you!:thumbsup2

I haven't had a chance to post this before now, but I wanted to share the chicken marinade I made Sunday. It's from one of my favorite cookbooks (Grilling: Where There's Smoke There's Flavor) and it was really tasty. I used it for chicken wings, but it would be a good flavoring for any kind of chicken. Oh, and it says spicy, but it isn't hot...just flavorful.

Spicy Lime Chicken Marinade

2 limes, peeled and chopped
2 garlic cloves, crushed
1 tsp chili powder
1 tsp paprika
2 tsp sugar
2 tsp salt

Combine lime, garlic, chili powder, paprika, and sugar in a glass or ceramic bowl. Add chicken and marinate for 2 hours or up to 8. Before cooking, sprinkle chicken with salt, then cook chicken accordingly. (Like I said, I used chicken wings -- this marinates 20 wings -- and cooked them under the broiler for about 20 minutes, turning once)

I served them with Creamy Avocado Salsa, which I may have posted before, but it's worth repeating so the recipes are in the same place.

Creamy Avocado Salsa

2 avocados, peeled, halved and pitted
6 scallions, white and light green parts
1 handful cilantro
2 tbsp red wine vinegar
2 tbsp olive oil
1 c sour cream
salt, black pepper
(I also add one jalapeno pepper, seeds and ribs removed)

Put all ingredients, except salt and pepper, in a food processor or blender and pulse to a smooth puree. Add salt and pepper to taste. Cover and refrigerate for 30 minutes to allow flavors to blend. Serve chilled. This can be made one day in advance, if desired, but press plastic wrap directly on salsa to prevent discoloration and store in a lidded container.

I hope you start feeling better soon. I thought I was getting sick this past weekend but thankfully it turned out to be allergies.

I think the spoon roast is the sirloin roast, it is not inexpensive, about the same price as sirloin steak. We all like rare roast beef too, except for you know who.....she will have just the veggies unless I cook her some chicken.

Hi All!

Just checking in from WDW...we are having a great time!

Went to Universal and Magic Kingdom so far; the parks are empty.

Having food overload too...my sister is here (staying offsite) and we went to Macaroni Grill the first night, then Hard Rock and last night Cali Grill. OMG, that place is GREAT! The other 2 places were good as well.

Going to dinner with Sis again tonight then MGM tomorrow...Mama Melrose.

Sheryl and Stephanie, feel better and whoever else is feeling under the weather.

Happy Birthday Bob!

Kathy, hope your doing good...its gotta be over 3 weeks now. :thumbsup2

SSR is great...too many doors in the 1 bedroom though. I keep getting lost! ;)

I'll check back again soon...going to the pool.

Just wanted to pop in and say afternoon, and check on how everyone's day is going.
It is pouring here, and dark like midnight, we have thunderstorm and high wind warnings until 6pm. I hope it blows the rest of the leaves off of my trees out front, so I can have the yard guy come and clean it up finally, lol. We have 2 trees outback that stay green until Thanksgiving and then they fall, it is very odd, we can't rake those up until spring as we have snow on the ground before they drop, lol.

Ross just got home from school, and like I thought, he is tired, but says he feels pretty good, just an awful runny nose, yuck, lol. He doesn't have a cough so that is good, I just hope it doesn't go to his sinuses he has terrible issues with that, he takes after me on that one.
He wants to go to karate, and since he has no fever and feels ok, I will let him. This week they are getting ready for the huge skirmish that is on Sunday...It is Ross' favorite, there are 2 events....sumo and grappeling...last year he placed 2nd in grappeling, and won 1st in sumo, he was the yuko zumo sumo champion and walked away with a HUGE trophy cup, and was interviewed on the news, lol. We have already had the talk about not expecting it to happen again, be prepared etc.

P/T was hard and odd, lol...hard, just cause it hurts like heck and odd because they put my arm in this machine that is full of ground up corn cobs, and is heated to 102 and it swirls all around your arm. It felt like being put in a sandblaster, it is to warm up the wrist before doing the p/t, and also it breaks down scar tissue? it was very odd, can't wait to see the bill on that one...thank god we have outstanding insurance, lol.

Kathy-- I am sorry your allergies are giving you some trouble, but I am glad you didn't get sick!!

Stephanie--don't worry about what you forgot at the store, let us know what you find out at the Dr's. Like the others have said lots and lots of fluids!!

Sheryl-- Please tell Bob I said Happy Birthday as well!! Don't push to hard on making his meal, try to get some rest.

Gretchen-- I hope the kiddo's are feeling better soon!! Like Nancy said we never want to see them sick, but better now then on vacation!

I wonder if it is a New England thing as warm jello is what I grew up on having when I was sick as well, and I made Ross some yesterday. That and tea with honey and lemon. (and ahem whiskey for the adults, lol)

Wow I sure had a chatty moment, lol
Have a great afternoon all!
