Do you guys freeze bread? I always winding up feeding it to the birds when it starts getting funky and when I freeze it gets mushy-like. Are there any tips that you guys have? TIA

Lauren, I keep all my bread in the freezer, and it doesn't seem to get mushy. The thing that makes it mushy or spongey is when I defrost it in the microwave, so I try not to do that. I also repackage dinner bread into freezer bags because it's usually in a paper or plastic bag with holes in it. Sandwich bread and hamburger rolls, though, I just put in with the original packaging. We go through bread really quickly in our house, though, so maybe that has something to do with it. It's rare that bread sits in the freezer for more than a week or so.

WFD tonight is black bean burgers, guacamole and tortilla chips.

I didn't get to make the eggplant sticks last night because when I cut into the eggplant, it was all brown and rotten inside. Yuck.

Gretchen - I am the poster child for menopause, as I had all my plumbing taken out 10 years ago:laughing: . The mood swings are the worst part, it's gotten much better over the years. I took the hormone shots for a while, then some natural herbal stuff now I'm just letting my hormones do what they want and I'm doing OK. Now I'm rambling..........

Not sure WFD tonight as I've got to get Kyle's stuff together and packed for his big adventure!!

Hi Y'all,

Trying to do a little catching up here. Haven't been having a lot of time to dis lately. Still searching for a light for the kitchen & DH's MD and lack of mobility has been causing us some new issues that I've been researching about and stressed out about. I've also doing some research for DD & SIL who will be going to WDW in January without us!! (Which I'm also rather bummed about, we purchased the DVC in hopes of more family gatherings. Which DD & SIL have been to wrapped up in school to go yet. But my SIL will have a conference in WDW in January.)

Kathy, Hope Kyle has a good time! DD did one something like that with whitewater rafting, rock climbing, etc. she loved it. Well all except the overnight camp trip up on a mountain with rain all night. But it was a great experiece for her! Don't worry about Kyle a Younglife trip is a GOOD thing!

Gretchen, Good luck with the hormones!:hug: I had all my "plumbing taken out" (:laughing: to quote Kathy!) about 6 years, I've been on hormones since & I know DH will cry if they ever take me off of them!

liam'saunt, Hope you feel better soon!:hug: I have asthma so I know how those colds can take hold in your chest! Good idea to take a sick day!!

Last night's dinner was all on the grill. Lemon/rosemary chicken breasts, portobello's, peppers, onions, and mozzarella basil stuffed creole tomatoes.

Tonight I'm thinking the grill again. Easier cleanup. Maybe Lori's wood grilled maple glazed salmon? Is that recipe here:confused3 , I'll go look, if not I'll wing it!

Nope, don't see the BeadPirate's maple glazed salmon? Lori if you're out there, let me know how you do that. Or how Rick does that?:laughing: I think I remember you soaked the plank in apple juice first?

I always freeze bread. I keep one in the refrig. and one as a back up in the freezer. When I buy a new loaf, I take the one in the freezer out and put the new one in the freezer...this way I don't get caught short. I take it from the freezer and put it in the refrig. (usually the night before I need it) and it has never been mushy. I always use whole wheat and never white bread-I don't know if that would matter.:confused3
 
I have frozen bread before, never had a problem. We recently just stopped buying it. We never use it and if we forget to throw it in the freezer, it just turns green on us.

Tonight's dinner is salsa chicken in the crockpot. New recipe so I hope it works!

tonight's dinner is going to be lamb chops for DH, manicotti with a fresh tomato-basil sauce, eggplant cutlets (forget it on the sticks, I know they will come out wrong!), an arugula salad, and some mushroom foccacia. Yeah, it is probably too much food, but you know they say to feed a cold, right? :laughing:
 
I never freeze it. I have an aversion because my Mom used to head to the A&P stock up on it on Saturday night and freeze it. The stores were closed on Sunday then, so they marked their brand products down. I don't think we ever got fresh bread the entire time they did this, and if I hear "Double Bagged" I still have flash backs! She did pick up treats that we would not have had though, so I guess there was some good to it, but I promised myself not to do it to my family. I'm sure that the freezers and the bags are so much better now, but I just can't do it.

I've been in a funk which is why I haven't posted very much.

I'm afraid I don't have any advice, I am moody all of the time. But I do have a :hug: for you. Don't be too hard on yourself, I think sometimes mood swings just happen and need to run their course, we see only the "happy go lucky" women who have stamina to burn, have spotless shining homes at all times, dress to kill, and always smile. It is not true, like the homemakers on 50's TV, they just make the rest of us feel inadequate.

Laura just called me to say that somebody asked for the scallops recipe from last weekend. I must have missed that post. Here it is:

Bacon-Wrapped Scallops with Chipotle Lime Aioli

For the scallops:

1 lb large scallops, abductor muscle removed, rinsed and dried
1/4 cup olive oil
1 tbsp. cruz bay grill rub (OK, that is what I used, but you could substitute another spice blend of your choice--maybe lemon peper or something similar?)
1 package bacon, par boiled for about 5 minutes and drained

Marinate the scallops in the olive oil and spices for about an hour in the refrigerator. Wrap a piece of bacon around each scallop, trimming to fit, and place on skewers.

Grill or pan sear the scallops until just cooked through--the time will depend on how big your scallops are. Try three minutes a side to start. Remove bacon before serving, if you like.

Chipotle-Lime Aioli

1/2 cup mayonaisse
1 chipotle pepper in adobo sauce, well minced
juice of one lime
salt and pepper to taste

Combine everything. Season with additional hot sauce if desired.

Well, I didn't make cookies. At 103 degrees, I didn't want to turn the oven on! However, I did make root beer floats and gave them leftover brownies. They spent a great afternoon eating and watching "Old Yeller". After that, DH set off some daytime fireworks (those horrible charcoal snakes that boys love), so they had a great time!

I freeze it all the time!!! We buy it from a discount Sara Lee store, and I stock my freezer up. I pull a loaf out about a day before I'll need it, and let it thaw out slowly. I've never had a problem with it getting icky. Of course, my kids go through a loaf of bread every 3 days, so there's not much chance of it going bad.

Also, I live in an area where the humidity is 0-2% so I have that going for me, too.
 
Fr dinner last night, I made "American Flag Pizzas." I had wanted to do them for the 4th, but DH decided on a bbq, so I made them last night. The kids loved them! So easy, and very yummy. I just used store bought pizza dough (for the convenience). Pressed it into a rectangle and baked it for about 8 minutes. Then I spread about a cup of sauce onto the dough, put sharp cheddar cheese in the upper left corner with pepperoni pieces for the stars, and then used mozzarella cheese sticks for the white stripes. The kids thought it was fun!

Tonight's dinner will be tomato soup and grilled cheese sammies. It's our standard Friday night fare. Nothing glamorous, but filling!
 
Hi everyone. :)

We're having BLTs, chips, and ambrosia salad. The salad is really easy. I don't know if it's posted on this thread or not. Here it is:

Ambrosia Salad

1 bag miniature marshmellows
1 large can fruit cocktail (drained)
1 container sour cream (16 oz)
1/2 c. chopped walnuts (opt.)

Combine all ingredients. Mix well. Chill for about an hour or so before serving. Yummy. :)

I like to freeze half a loaf. I use the frozen bread for toasting and unfrozen for regular use.
 
I too freeze bread, loaves and buns. I have no idea what dinner is maybe something grilled. It to hot to think. Boy am I glad it's friday. I get 2 days of not having to answer the phone :thumbsup2. If I had to talk to one more person who decided to yell at me I think I would have blown.

Tomorrow I am getting up early and going to the french market in a nearby town. I'll get my favorite asiago cheese bread and the world will be a good place again.:rotfl:
