Ha ha Hersey! No...though I will tell you that sometimes my Mom, sister and I all put on "iron chef" t-shirts on Sundays and pretend to battle cuisine! :laughing:

Today's linner is going to be jerked swordfish (grilled), grilled bacon wrapped scallops with chipotle-lime aioli, crispy cilantro-lime rice ckes, and grilled zucchini and summer squash. Maybe some tomatoes too, we'll see. Pictures later!

Have a good day everyone!

Good morning everyone!

Becky - Great pic of Laura & Caili!

Lauren - I posted on the other thread about your pics, all I can say is there was no Zilla in those pics - you looked gorgeous and you're very photogenic my dear! Your hair looked absolutely beautiful!!!!! And the pic of you and "A" had me in tears again!!!!

Tonight's dinner will be what I was supposed to cook yesterday. Unless I go into "clean" mode again today.:rotfl:

Glynis - Still praying for you!:hug:

Have a great day!

Good Morning to all!

Lauren- I loved the pics that you added. You were glowing in the picture with Andrew

Becky- I loved the picture of Laura and Caili! She is such a cutie...her smile has a touch of mischief in it that makes me smile :)

Kathy- No cleaning today!

Glynis- You are still in my prayers :hug:.

Hersey- I agree with you, the "liams" family needs to try out.....there is info on the website and from the bunch on this season I think our girls would have it in the bag.

Now if you want to blame the gas tank on a husband you can blame mine :lmao:. He is used to it. :rotfl2:

So far I have a chocolate pudding cake and a key lime pie for dessert. I am trying to decide what to cook for dinner but I am sick of almost everything :confused3. Dh says that fish is a weeknight supper, and I try to avoid beef because DD won't touch it,..........guess I'll see what looks good when I get to the store.

Have a great day, I know it is beautiful here in the Northeast!

Nancy - I have the prosciutto stuffing for the pork roast done (I'm cooking it tomorrow. I had an :idea: . What do you think if I butterflied the roast and stuffed it? I'm not normally one to tinker with recipes but I wanted to see what you thought?

Hey Glynis, I am making breakfast for dinner later this week. My husband looked at me really pitiful (I'm telling you, he looked like a little boy!), and said really sweetly, "Would you please make the blueberry muffins again?"

It was hilarious! I just had to tell you!

Tonight I'm grilling something. Sounds yummy doesn't it? I have to remember to get the tank filled. I have 2 tanks and no gas :confused3 I think I need a husband to blame it on ;)

You can blame mine! He'll even be up that way! Rick got the word yesterday- they got the Chicago job! So we'll have to find a good time for me to come up and visit! We can do our own little mini-meet!

Lauren- Welcome back and I loved all the pics. And all that DH-ing will be second nature!

Glynis- :hug: There's warm (maybe super hot and humid) thoughts being sent your way from NOLA!

I just sent Rick off to the airport. Not sure what Wanna B and I are having for dinner yet.

I have butterflied boneless pork before and stuffed it. I think it would be fine. I asked the girls and they both think it would be fine. The flavors will be so good!

Thanks Nancy, I may stick with the original recipe.:)

Ha ha about the iron chef. My Mom might not pose, but I can ask. Last year she upgraded our shirts to ones from a local restaurant--Jasper White's Summer Shack. She bought them for us because their motto is "food is love." I still like my iron chef one the best though.

Those scallops look mighty good, care to share the recipe?:goodvibes

tonight is a splurge! Tom brought home crabs! So we are having crab. potatoes and corn on the cob

The kids and I are back from our sleepover. Dinner was really great...well, except for the crispy rice cake, but everything else was so good, it didn't matter.

The only problem with the Food Network shows is that they are only an hour. Beck makes great food, but if she says we're eating in an hour, we all know it is probably going to be two. :) (Of course, she will probably blame this on her sous chef.)

Welcome back, Lauren! Your pictures are beautiful.

Glynis -- I hope things are looking better today. You're in my thoughts.

Well I'm back from the hardware store I got the tank filled. So I'm cooking Brat's with potatoes and of course salad.

Lori :cool1: yeh for Rick. Let me know where you are staying. Staying out of the city is cheaper. I work on the weekends, I do demoing. Let me know I can probably scrounge up some local Diser's if your interested.

liamsaunt I have friends that do the Iron chef thing at their boy scout cookouts. They have a lot of fun.

Lauren- On our honeymoon we needed to sign for our food and drinks. I had so much fun signing my new name, and I think Buddy got a kick out of it as well. I felt like back in school but it was a fun feeling. Enjoy it.

Laura- I totally understand the time thing. My family has been adding time each day as the week progresses, they just never told me until last night that I run late in a pattern :thumbsup2

Kathy- I was hoping that you would try the butterfly thing, it sounded good and so now I want to know how it turns out.....oh well.... I have been known to tinker with a recipe a time or two :rolleyes1

Becky- The scallops look so good!

Dinner tonight was really good. We had buffalo wings to hold us over. We had a glazed spiral baked ham, mashed potatoes and gravy, green beans, corn, artisan bread, and the best pineapple bake. I did not follow the directions the last time and it was good, it is amazing when you follow the recipe :thumbsup2.

Gretchen - The scallops were a big hit - excellent!!!

Laura & Becky - Mom's eggplant sticks were just as good as last time!! They've become a fave here!

Nancy - I've stuffed the roast and slathered it on top. I thought doing the butterfly and stuffing wouldn't spread the flavor as much. We'll see tomorrow!!

Kathy -- I am so glad you like the eggplant sticks. Now, if you could show me and Beck how to make them, we would appreciate it ;) Actually, mine haven't been bad lately, but they always do come out a little different than my mom's because I can't use the egg because of Liam. Beck says hers always turn out terrible.

Hello All---

First things first..................Glynis---Prayers and positive thoughts sent your way.................Whatever it is, please know that when you are ready to talk we are all here for you...............:hug:

~~~~~~~~~~~~~~~~~~~
Lauren---Love the newest pic posted................more more more :yay: The one of you and "A" is precious.............
speaking of pictures...Becky....what a great one of Laure and Caili!!
We were gone all day yesterday to Ross' tournament.......he did pretty good.....won his first fight 3-0, then lost his second one 0-3, lol. He had to fight the same kid he lost to at the last tournament, and the kid is huge...he must weight 50 lbs more then Ross and be a foot taller.................same thing happened too, first contact the other kid kicked Ross in the chest, and knocked the wind out of him......so Ross was out of breath and hurting the rest of the (quick) match. He has a bruise on his chest. He had a blast though, he doesn't mind when he loses......of course he loves to win, but he has so much fun at the tournaments that he is OK when he doesn't place.
Want to know what I realized this weekend............that Wed is the 4th of July........I thought of it a few weeks ago but spaced it since then, until yesterday when somone mentioned it at the tournament....................now this wouldn't be that big of a deal to most, but................we LIVE on the parade route....(of the biggest 4th of july parade (and festivities) in the state.....yep our lil ole town) and we have a HUGE parade party............which I have to go buy for, and get ready for in 2 days!!! I spent all day today decorating all I could without Kris' help (he is working on a spec house we are building that we sold, and the people are moving in on the 10th.....yikes both good :woohoo: and bad timewise :eek: ) He is not working Tues night so he can help.
Ross' Dojo is in the parade so all the parents come here as well as tons of friends and co workers of Kris'......that one time a year everyone is our good friend, lol................. good times though..........nothing like margaritas at 10am :rotfl: ......plus the drinking helps so I can stand some of Kris' coworkers from his office......:rolleyes1
Dinner last night was out, and tonight I made Ross and I a quick bite. I will cook real food again tomorrow night....:cool2:
If I missed something I apologize.....you are all in my thoughts though..:)
I am back from my conference to DC this week - I had amazing meals there! It helps to be on an expense acct too, of course ;) AND with all the dang walking you do, I convinced myself I didn't have to hold back on calories.
Isn't that how it works?
Tonight we had zucchini and bacon quiche. Really yummy and easy!
-Preheat oven to 400.
-Press refrigerated pie crust into ungreased pie pan. Bake for 5 minutes.
-Mix 6 eggs in a mixing bowl then add about 2 cups shredded zucchini and about 8 slices of crumbled cooked bacon. I had a small chunk of Dubliner cheese left so I grated that into the mixture as well. Mix well.
-Pull the pie shell out and pour the mixture into it. Bake for 20 minutes or until the egg sets.
