Evening, or I guess it is morning now friends...........ugh what a day.....I spent every day this week one day ahead......until today.....when I guess I was one day behind, but didn't realize it............talk about messed up.........we are going away for the weekend because Ross has a karate tournament a couple of hours away, so we figured we would make a weekend out of it.....well that is great and all, but we are leaving at noon friday, and I hadn't packed until about 40 min ago when I realized it was tomorrow......(err today)........................

Wow am I behind on the what's goings on's....(does that even make sense??)

Kathy---How is Kyle feeling? Did he get his way and play his game?? Please tell Dh Happy Birthday!!!

Jenny--I think that is a great idea to get a wheelchair for Ed, he will have a much better time, and you will to as you won't have to worry as much!!

Well I think that semi catches me up.........but the fact that we will be gone this weekend will just put me behind again, lol.

Thank you all for the support in the whole family mess with the inlaws-----
I will just give you the gist of it as it is even boring me now..............
after I sent the email I got one back basically saying I was horrible for putting a guilt trip on her for saying that we shouldn't give Ross false hope on them making events in the future..................Yeah that went over like a bag of hurled turtle with me.......needless to say surprise surprise, I won that battle and didn't back down..............and then to top it off they found someone to sit with grandma (still not telling ross) on Monday night.

Today I tried, I mean I REALLY, REALLY tried to keep my mouth shut....and I did pretty good until she started in on the money talk.....and since grandma's insulin is costing more then they thought, that she thinks they should get money per month from her savings as it will be less of her SS leftover........argh...........then when she started talking about buying grandma some new nighties (as we lost some at the nursing home etc) and if she bought her only 1 instead of the 3 she needed that it would be more money left for them.................................that was it..............I then looked at her and said very point blank..............."It is very kind to take her in, and it is a large undertaking...........but it should be because you want to, and out of the goodness of your heart, and not for the money, and if there is anything left after grandma gets all she needs for the month in foods and supplies and misc items, that is one thing to have it go towards your oil and electricity, but it is her money first!! To which she seemed almost shocked that I didn't think they should do what they wanted with it......she changed the subject very fast...........she got my point...............she knows that we don't approve and are watching.........................THEN.................never mind the money...................THEN she starts making fun and complaining about grandmas mind............as her dementia is very severe and happening fast, she will soon be going backwards with her memories we have been told.................So I took a long sip of coffee....wiped my mouth, and with a tiny smirk on my face, to which she isn't quick enough to pick up on...............said snarkily................."Well when she starts calling you Bunny we know she is in the 1970's with her memories!"...... (dh real mother's name, and dfil first wife....and grandma blames her on the marriage breaking up so she is insecure on it) .........................and then I just sort of laughed in an innocent way,and asked her if she wanted a refill on her coffee (it is a self serve drinks deli we were at).....................I am only 5 feet, but I tell ya I felt like 8 feet tall walking off after that comment...............and that my friends was breakfast...........................Thanks once again for the support....I tell ya I could feel you all sitting in the booth with me!!!

Now if I don't make it back on here before we leave tomorrow..(the lord knows I left you all plenty of me to read, lol)...Everyone have a great, safe weekend..............We are leaving after I get the dog to the boarders and Ross is at school until 11 so it counts.....and then 2 hrs later we will be swimming in the pool at the hotel, and having some drinks at the hotel bar and then dinner at Chili's.................Ross is looking forward to room service for breakfast before we head to his tournament sat morning.....................this is his first one as a green belt, and since he sprained his foot...........
 
Sheryl, I love your kitchen. I can only picture myself in it poking myself in the rear on the fridge everytime I open the oven!:lmao: :lmao: But (get it?) I'm rather amply endowed in that region.

:lmao:Love it! The houses in my area were cottages so the construction and layout leave a lot to be desired. We needed a variance for our renovation and it was necessary to prove a hardship. The zoning board almost fell off their chairs when I told them my hardship was banging my behind on the oven every time I tried to serve dinner. :rotfl2: They said that was not really the hardship the planners had in mind :confused3 but that they would find one for me in order to save my bruised backside.

It looks divine and the reviews swear it's easy - just time consuming. I've got the time this weekend, no problem.

A few reviewers suggested just using a box mix for the cake and since that's the part of baking I always fail at, I wondered if I did that and used the rest of the recipe how it would turn out. Also by buying a box mix, I won't have to spend as much in ingredients. They also suggest boiling the unopened can of milk instead of doing the water bath thing.

Would you dear sweet ladies take a quick look at the recipe and tell me if I'm out of my mind for trying it? :goodvibes


I almost never bake a cake from scratch. I tinker with boxes all of the time and it is almost impossible to screw them up. I would go with the box and then make the filling, but I would not boil the cans of milk. If you get distracted you will swear off baking for the rest of your life. I would probably try to find the dulce de leche and avoid the whole thing.

I do like having the oven up higher, it's been about 25 years since I've had to bend over to put things in & out of the oven. Oohh, maybe a range is not a good idea!:laughing:

Don't give me any more ideas, pleaaasse!!:lmao: Your dinner sounds great! But you know skinny little Giada, can't be eating too many of those fried ravioli's!

I do think twice before I pop something in my lower oven, but it sure does come in handy during the holidays!

I don't think Giada is eating ravioli. I think she has a secret stash of kelp.
 
Hey Walkin' Tall- you sure had a long day! This weekend trip is what all of you need right now. Watching your son at his tournament is a great way to leave the MIL drama behind.

Now she is a piece of work, isn't she? Your comment about "Bunny" was priceless when she was ridiculing Grandma. I am feeling very badly for the poor woman. Dementia is not a pretty condition and that poor lady knows that she is not as sharp as she used to be. To live with a family who is not compassionate and loving is a sin and while I try not to wish bad on anyone, I think that your MIL and FIL are going to have a lot to answer for after this. I am glad that you let her know that you and DH are watching.

As to making her feel guilty about Ross, I would flat out tell her that you are never going to raise his hopes. If they show up, fine.... if they don't he is not disappointed. I would then tell her that he will stop looking for them after a short while so they don't need to worry about him. My IL's very seldom made an effort when the kids were little and once they did, the kids really did not care.

If you can slip it in, I would let Florence Nightingale know that children live what they learn and you and DH are taking notes so that you know how much money it is going to take to care for an ailing parent and will add inflation costs. Then tell her that she should start saving now so that she has enough saved for her old age.

Let it all go this weekend and enjoy your DS accomplishments!

We have a nice wine rack in our kitchen as well--however ours is from the counter level to the floor--and right now it's used as a sort of Plinko (for those that watch the Price is Right) game for the kids. After looking at the pics of your kitchen it did make me realize how "vanilla" mine is. White and builder's beige--time to hit Home Depot for some paint samples!

My whole house will probably end up being more vanilla & then I'll have to start finding ways to punch it up again! Enjoy your Plinko/wine rack for now, you'll have plenty of time for wine after the kids are grown. It's so much More important to enjoy them now, then worry about "the perfect house"!

Going get a haircut & roots done today, so that means a trip to Whole Foods!:banana: So I'll see what looks good there, before I decide on dinner.

No photos from the last two nights—last night I made pizza, and the night before we had paninis. Tonight I am making chicken that is marinating in lemon juice, olive oil, and Worcestershire. When I get home I am going to cut a pocket in it, stuff with cheese and basil, wrap it in bacon, and then grill it, then serve it with an avocado-lime dipping sauce. Sides will be eggplant sticks and corn on the cob.

Tonight I am grilling Tom some Omaha steaks and Andrew and I will have the stuffed, whatever it is, fish. This is from Omaha too. Kathy said it was great...can't wait to try it. I will also make the omaha augratin potatoes and whatever veggie I have on hand. I have a spaghetti squash with my name on it...the boys don't like it!!! More for me!!! :cool1:

I have alot of catching up to do...I am almost down to 1 week!!! :scared1:
 
Kyle is doing much better today. He slept well last night and woke up starving. I gave him a light breakfast, so we'll see how that goes. The knucklehead wants to play ball this evening, I told him we'd better give it another day.
Today is DH's birthday. It's always just a few days from Fathers Day so we will celebrate then. I am fixing one of his favorite dinners - Beef Stew, lemon/parm broccoli and biscuits.

I am glad Kyle is doing better. I did check in on the thread yesterday to make sure he was OK but did not have time to respond. I hope Johnny had a great bday...Wish him a happy belated for me!!! :)

Lauren, thought I posted the Cosmo recipe before the electricity went out, but just scanned back & didn't see it. I'll try to get to it this afternoon for you.

Thank you Sheryl. I think I meant the mai tai recipe...but this one is a keeper too!!!

Take a flour tortilla and spread about 1 TB of thousand island dressing over it.
Take corned beef and pile on half of tortilla, top with swiss cheese and sauerkraut you have squeezed excess moisture out of. Fold tortilla over and grill on grill or on a sprayed cast iron skillet on stove over medium several minutes on each side. When golden brown take off stove/grill and let sit a minute before cutting into wedges. :yay:

And I can donate the old rotisserie machine I have to someone else! Less clutter!

I've been asking DH to let me know what he'd like to have for his Fathers day/Birthday dinner and he keeps telling me he can't decide. So I guess I'll have to decide by tomorrow or he'll be getting nothing.:laughing:

Not sure WFD tonight - Kyle's game is at 7 so we'll get something on the run!
 
Okay friends. Remember my rant about baking not 2-3 weeks ago? And I said that I'd never bake again? I'm reconsidering my stance. My dad's birthday was this week and we are taking him out to a nice restaurant Sunday night to celebrate birthday and Fathers Day. He lives for german chocolate cake and since he's a single bachelor who stocks his fridge full of frozen dinners and beer, he never gets it.

I definitely think you could do this with a boxed mix. It would cut down on the expense, and the time, as well. I know that boiling the can of milk works, as that is how my niece makes her banoffy pie. So yummy! Hmmm. I'm going to have to get that recipe for y'all. I'll ask her about boiling the can unopened. I would think it would be easier to judge when it's done if you can see the milk. I'll let you know what she says!

Tomorrow, however, I will be cooking! We have a family reunion for DH's family. I will be making hot wings, ranch potato salad, and ice cream sandwich cakes. I found some banana/strawberry ice cream sandwiches and peanut butter ice cream sandwiches, so I thought those might be fun! I'll let you know how they turn out. I'm going to take my camera and see if I can remember to take some pictures of the food.

I used to make an ice cream sandwich cake called Frozen Heaven. I haven't made it in years and I was just thinking about it this morning. I'm organizing a Father's Day potluck bbq and I thought I might make it for that. How do you make yours?
This is my recipe:


9 vanilla ice cream sandwiches
1 tub Cool Whip
3 Heath Bars
5 Reese's peanut butter cups
1/2 cup chopped pecans
Chocolate syrup for drizzling

Cover the bottom of a 9x13 glass baking pan with ice cream sandwiches, cutting to make them fit. Chop candy bars into small pieces. Add 2/3 or so of the candy bars to the Cool Whip. Save the rest to sprinkle on top. Spread Cool Whip over sandwiches. Sprinkle remaining candy bars and pecans on top. Drizzle with chocolate syrup. Cover and put the dish in the freezer and allow it to freeze. Cut into squares to serve.

On the candy note, I just recieved my last order of candy for the wedding. Tonight we're having boneless pork ribs. I have no idea what I'm going to do with them but I'll find something. I pick up DH in 1.5 hours - haven't seen him since Sunday - so we're staying in tonight =)

Tonight Buddy will be at the farm until dark, and DD and family are running errands so I will fix a few hot dogs that are in the fridge for dinner. DH will reminisce about his carefree single days when he could eat all of the hot dogs and bologna he wanted :lmao:

WFD is pizza. I am putting the leftover sausage, and fresh peppers and onions on mine. Kids will have theirs plain, of course...Caili won't even allow tomato sauce on hers.

I found these going through my recipe box last night. Thought they might come in handy.:rotfl2:

Bourbon Ball
1.5 parts Maker's Mark
.25 oz white Creme de Cacao
.25 oz Hazlenut liqeur
Top with cream (or half & half)

Shake and serve up or on ice. Garnish with chocolate shavings.

Sex in the Holler

.5 oz Wild Turkey Honey Liqeur
.5 oz Peach Schnapps
.5 oz Raspberry liqeur
1 oz pineapple juice
1 oz cranberry juice

Mix. We got this from the caterer at the Turkey party at Bourbon Fest. They made a big batch and had it like a draft. Really good in the heat!
