We (family of four, children are now young adults) are going to be in Orlando in August. We'll have some park time at the beginning of the week, but on two days in a row, we'll have Epcot After Hours on a Thursday followed by MNSSHP on a Friday. No park tickets for those two days, so we'll be free until 7 PM on Thursday and free until 4 PM on Friday -- looking for suggestions of things to do in Orlando during the morning/early afternoon on those days (other than Disney Springs or a theme park)? We will have a car. Thanks in advance!

In the early afternoon, I would head over to a nearby mall like the Florida Mall. Or, you can head to the Disney mini golf courses (Fantasia Fairways or Winter Summerland).

In the morning, I would suggest set up a nice breakfast. Perhaps ‘Ohana if available.

Character warehouses! They are in the outlet locations nearby. Discount Disney shopping!

We like exploring nearby small towns ( for lunch, bbq, bakeries etc) and various state parks with springs. We went to Mt Dora last trip. Our adult sons really enjoy swimming in the springs. Some of the state parks have canoeing, tubing etc

We enjoy mini-golf, so when we have a car we like to explore the various non-disney mini-golf courses in the Kissimmee/Orlando area.
There are some other non-Disney water parks in the area, if you like those.
There is a botanical garden in Orlando.
In downtown Orlando there is Lake Eola. You can rent swan peddal boats there. This might be fun for the kids. There is also a walking path all the way around the lake and several eating establishments to try.
If you are a Gideons Bakehouse fan, you could check out their place at the East End Market Place. There are some other shops in that building that are fun to explore.
Old Town in Kissimmee might be a good option to try out.

I would try to eat near the parks somewhere before your party entry so you are full and ready to go when you enter.

It will be hot and humid, so I would suggest doing something in air conditioning.

Before we had an Ikea where we live, we always enjoyed going there. Cheap, fun to walk around in.
