Kathy ~ Glad to hear Kyle is feeling better. Sounds like a good idea making him wait another day to play ball.

Lori ~ What brand toaster oven did you get? My Krups one is on it's last legs (it's only about 5 years old) and I've been thinking about getting a convection type toaster oven.


Last night we had Pizza Meatloaf Muffins. They were really good, tasted a lot like the meatballs I make. I put some garlic salt in the meat mixture and sprinkled some on top of the cheese too. I couldn't help myself, I put garlic salt on everything.

WFD tonight? I'm going to attempt to recreate Cheesecake Factory's Chicken Madeira. We'll have mashed potatoes and baby peas for sides. If it's good, I'll come back and post the recipe.
 
I'm making asian ribs.. The have been in the oven for hours now.. We will have it with cheesy broccoli casserole and watermelon

This is the one I got. I doesn't have convection- but I never used convection on the old one I had. Not having an oven of any kind- I thought this would take care of most of my needs. And I can donate the old rotisserie machine I have to someone else! Less clutter!

I'm with Nancy, I must be living in the dark ages, that is a fancy schmancy oven! Hardly what I think of as a "toaster oven"! I think I am going to boycott the kitchen, I cleaned it all up to take "before" pics of it & it's just too clean to cook in now. It also looks pretty good, when it's clean, maybe I am insane for thinking about remodeling. If anyone is interested the pics are on this remodeling thread & open to opinions that I'm nuts to mess with it! If I could just fix the fridge & backsplash problems without all the mess. Sorry, I'm babbling again!

Sheryl- your kitchen is lovely! I can't tell you what to do, but I know that I hated the mess that came when we remodeled our kitchen. It is the hardest room in the house to be disrupted, so I do understand why you hesitate.

I wish my fridge was even with my cabinets. I don't have a counter depth, but the architect had all of the wall dimensions in the plans but our carpenter did not understand or did not read them and didn't build the wall correctly. It bugs me still.

What ever you decide, please share your plans with us.

Sheryl, I love your kitchen. I can only picture myself in it poking myself in the rear on the fridge everytime I open the oven!:lmao: :lmao: But (get it?) I'm rather amply endowed in that region.
 
Sheryl -- Your kitchen is beautiful. However, I know, there are always ways to improve a kitchen. If I fantasize about remodeling, it's always about the kitchen. As for your moulding question, I think it looks best when the ceiling and floor moulding match. Good luck!
 
Sheryl - Your kitchen is beautiful! I love the wine rack and the glass cabinets. Let us know what you decide to do. I would only fix what you need to, save yourself some headaches. It's too pretty to think about re-doing it all.

Lots of reubens going on! We are having tossed salad and reuben quesadillas.
I got this recipe from Southern Living- we love it and have them whenever corned beef is on sale at the deli counter.

Take a flour tortilla and spread about 1 TB of thousand island dressing over it.
Take corned beef and pile on half of tortilla, top with swiss cheese and sauerkraut you have squeezed excess moisture out of. Fold tortilla over and grill on grill or on a sprayed cast iron skillet on stove over medium several minutes on each side. When golden brown take off stove/grill and let sit a minute before cutting into wedges. :yay:

Oooh, that sounds yummy! I love reubens =) My daddy used to make them for us growing up and I always felt so much more "mature" than my younger siblings because THEY ate theirs with turkey and no saurkraut and I ate it the right way. Funny the things you remember.

I wonder if I could do those in my quesadilla maker?

I'd go for even a double oven!! I always wanted one and had to give up that dream when we bought this house. Still a great kitchen but just a single oven and cooktop.
 
My dinner was so so yummy tonight, I was damn proud of myself. We are POOR this week so I knew I could throw together a spaghetti sauce with cans in the pantry and pasta, which I always have. No meat or anything. I got the sauce going (just throwing in whatever looked good) and went into the fridge and found a package of spinach and cheese ravioli! At Costco, they have 2 pkgs together and we used the other pkg a couple of weeks ago with a marinara sauce (just boiled them through).

Anyhoo. Got a bee in my bonnet to do something other than boil and remembered Giada's recipe for fried ravioli.

It was so easy, quick, and so yummy I could have eaten all 24 in one sitting. I restrained myself. I dipped them in my spaghetti sauce (though I had put mushrooms and stewed tomatos in it already which doesn't lend itself as well as a marinara sauce but there were no complaints from my tummy). Pretty, too, but DH took the camera with him *boo*

Fried Ravioli Recipe courtesy Giada De Laurentiis

Olive oil, for frying
1 cup buttermilk
2 cups Italian-style bread crumbs
1 box store-bought cheese ravioli (about 24 ravioli)
1/4 cup freshly grated Parmesan
1 jar store bought marinara sauce, heated, for dipping

Pour enough olive oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 325 degrees F.
While the oil is heating, put the buttermilk and the bread crumbs in separate shallow bowls. Working in batches, dip ravioli in buttermilk to coat completely. Allow the excess buttermilk to drip back into the bowl. Dredge ravioli in the bread crumbs. Place the ravioli on a baking sheet, and continue with the remaining ravioli.

When the oil is hot, fry the ravioli in batches, turning occasionally, until golden brown, about 3 minutes. Using a slotted spoon, transfer the fried ravioli to paper towels to drain.

Sprinkle the fried ravioli with Parmesan and serve with a bowl of warmed marinara sauce for dipping.


My changes: I used a can of condensed milk I found in the pantry instead of buttermilk and I flavored plain breadcrumbs with italian seasonings because that is all I had.
 
Okay friends. Remember my rant about baking not 2-3 weeks ago? And I said that I'd never bake again? I'm reconsidering my stance. My dad's birthday was this week and we are taking him out to a nice restaurant Sunday night to celebrate birthday and Fathers Day. He lives for german chocolate cake and since he's a single bachelor who stocks his fridge full of frozen dinners and beer, he never gets it.

It looks divine and the reviews swear it's easy - just time consuming. I've got the time this weekend, no problem.

A few reviewers suggested just using a box mix for the cake and since that's the part of baking I always fail at, I wondered if I did that and used the rest of the recipe how it would turn out. Also by buying a box mix, I won't have to spend as much in ingredients. They also suggest boiling the unopened can of milk instead of doing the water bath thing.

Would you dear sweet ladies take a quick look at the recipe and tell me if I'm out of my mind for trying it? :goodvibes
 
Sheryl- your kitchen is lovely! I can't tell you what to do, but I know that I hated the mess that came when we remodeled our kitchen. It is the hardest room in the house to be disrupted, so I do understand why you hesitate.

Thanks, It really makes me crazy, that someone didn't realize the fridge problem when we redid the kitchen a few years back. Same cubic ft as the old one, same features, everything we looked at was wider or way too deep.

:lmao: Believe me, I bump on a regular basis! DH & I were just discussing, (yes this time it was just discussing) if there is anyway to move that around. Can't figure it out though.

Thanks! And fantasy is always better than the reality! Did I show pics of the moulding? Would you paint the existing moulding or put up stained crowns.

Kathy, You know me that wine rack is not just for show! It get's a lot of use! It's usually not that full! I'm glad you like it! But when you move one thing, then you've gotta move this or fix that, it's a big vicious circle!

I do like having the oven up higher, it's been about 25 years since I've had to bend over to put things in & out of the oven. Oohh, maybe a range is not a good idea!:laughing:
