Y'all were very busy while I was at work, I need to try and catch up. If I missed anybody, sorry!

Sheryl - I can sympathize with you, renovations have been on going here since Katrina and it's a :headache: !!! Your dinner looked very yummy and it always helps to show the cocktail.;)

Jenny - Your ADR's look great! Ca Grill is now a must for us too, those flatbreads are to die for!

Lauren - I hope you guys have a great night with Rosa!:love:

Lori - I couldn't live without my toaster oven, I know how excited you must be. It will make your life much easier.:thumbsup2
 
Here are some pictures from the trip of some food I cooked. First let’s start with a drink on the deck of the house we rented:

That’s a mango-amaretto margarita, but those of you who don’t drink can pretend it’s orange juice!

Here are some tasty mini crab cakes with spicy chipotle aioli on a bed of arugula. Notice what the camera focused on though—the super cheesy garlic bread in the background!

This one’s a little blurry (maybe it was the margarita, heh heh). Shrimp marinated in lemon, garlic, and bread crumbs and then grilled:

Here is a grilled hamburger (rare the way DH likes it, bleech, I’m all about the veggie burgers!), with onion, pepper jack, and arugula. This photo is of interest because of the potato chips in the foreground. I did not look at the price when I threw them in the basket. Guess how much they cost? $9.00!!! $9.00 for potato chips! And they were not even that good! You have to watch the prices on things in the Caribbean:

Here is a dish I made up. It is shrimp sautéed in coconut milk, ginger, garlic, jalepenos, and a bunch of spices, served over asian noodles and tat soi:

I’ve got a bunch more I will post tonight. You will see lots of shrimp and crab in the vacation pictures—that’s because we don’t eat it at our home due to Liam’s crustacean allergy.

And, WFD tonight is a marinated turkey roast, that I butterflied and cut into grillable strips. It’s marinating in a mixture of beer, butter, garlic, rosemary, red pepper flakes, salt, and sugar. Go with will be a big mixed green salad.

I think we will use a wheelchair for the whole trip.. Ed's leg is very painful and it swells very quickly.. He still gets a bit out of breath and his heart starts racing after a while too.. He's not happy about the wheelchair, but if he is going to enjoy this trip he needs to be in as little pain as possible.

Good for you for getting a wheelchair! He will have a much better time at the parks! Your ADR's look wonderful! Someday I'll get back to WDW and be able to try some of these places. So far, the only places I've eaten at the World are Whispering Canyon and the cantina at the Mexico pavilion and Sunshine Seasons. Liked everything, though, so that's good, right?

These look great. We love CA Grill too. We ate at Raglan Road about a month after it opened. There were some bumpy things...like they didn't have a wine or beer list :confused3 ...but the adults liked it. The kids (whose favorite restaurant is CA Grill) still call Raglan Road "that fancy place." The restaurant has odd shaped plates and they didn't like how their fish and chips came in cone-shaped serving pieces.

Yum...love Artist Point too! And this one gets the kids' approval. Yet Raglan Road is "fancy." :confused3

Nancy or anyone else...ever been to Mohegan Sun or Foxwoods? If so, any tips? TIA!

I was at Foxwoods once a long time ago. I've heard it is very different now. At the time, I didn't like it because it was so smoky. I know that has changed. If you go to Mohegan Sun, you have to eat at Summer Shack. Don't be turned off by the cafeteria-style tablecloths. The food there is awesome. They have the best fried clams I've ever had.

Thank you Laura! I was on both websites today and I did not see one thing on the Foxwood website that they have smoke free sections...nothing like degenerate smoking gamblers!!! :rotfl:

I am leaning towards Mohegan so I will have to check out the place you suggested...thanks again!
 
Just a word of caution to Mom's of athletes. Our temp/heat index has been off the charts the past few days and Kyle is paying for it. When he came in from his game yesterday he looked horrible, very pale. He said he was just so hot out there. I always make sure he has plenty of gatorade and water with him but I guess he didn't drink enough. He got sick last night and hasn't been able to hold anything down yet and he's achy all over. I called the Dr. and he said it's most likely heat related since he doesn't have a temp.

I just thought as long as he's been playing ball we all knew what to do to stay safe, but there's always a lesson to be learned. STAY SAFE EVERYONE!!

Laura, you know all to well that I would NEVER let a drink fall off the rail! Not one that belonged to me, anyway! ;)

Jenny, are you going to rent an electric wheelchair for Ed from someplace off-site? I'm just thinking that since the chairs at Disney are manual push--electric might be easier on you guys. Or maybe an ECV? Your dining plans sound really good. I like almost all of those places.

From what I read the manual wheelchairs can only be rented to those with experience using them. There will be 3 of us to help push him including my 6 ft tall 20 YO niece. I don't think he will need it the entire time though,just off and on

He may be dehydrated. I am not a nurse, but my mom is, and if he was out in the heat all day with little to drink, he might need an IV. Call his PCP and ask about the best course of action. Best wishes for a speedy recovery!

Kathy--I sure hope your DS feels better soon. It has been blasted hot here as well--can't imagine what August will be like. For me to get a decent workout here outside, I have to leave the house at 6am--and even then it's already in the 70s

aimeedyan--The roasted corn salad is really easy, and super delish. I grill two corn on the cob, 2-4 peppers (I used japs this time,have used anaheim peppers too). Cut the kernels from the cob and chop the peppers (seed and de-rib if you want less heat) and combine with 1 cup chopped tomatoes, 6tbsp fresh lime, 1/4 cup chopped cilantro and salt and pepper

Well, tonight's dinner went the way of the blueberry pie--pretty much a disaster. How I managed to char our burgers I don't really know. They were black and fell apart--oh well. And then the corn salad didn't turn out right--forgot the salt or something. It's just been one of those days.

I just stopped in, Kathy and I agree, call the Dr. Better safe than sorry. Please let us know how he is when you can, but in the meantime sending you lots of good luck charms.
 
Kathy Have your son take a lukewarm bath until you can get a hold of his doctor. Heat exhaustion can give you a temp. Hope he feels better soon.
 
Jenny- Good idea for a wheelchair! My Sis IL rented and ECV and she had no problem using it, (she did run over my niece who was in flip flops, but that could happen to anyone) Have you thought about that?

Lauren_ I like Mohegan Sun. I don't go often, but found that Foxwoods was not as nice.

liamsaunt- I can't wait until tomorrow morning when I can enjoy your pictures. I will be here all night if I start that now :lmao:

Sheryl- we have been waiting for the event schedule as well. I don't know how much time we are spending in EPCOT, but I cannot wait!

Kathy- I'm keeping Kyle on my mind.

Dinner tonight was really good. We had a mixed up version of the Polynesian chicken. I used what I had on hand, so I used orange marmalade Catalina French dressing, sugar free marmalade, honey, onion flakes and chicken base. I liked it better than with the apricot jam. Green salad, broccoli, and a brown rice with black barley and dikon radish seeds. It was so good!
 
Steph, Nancy & Janice - Thanks for your concern. He had plenty to drink yesterday during and after the game. He's holding down crackers and the fever is very low. He's just achy and tired. I just found out from a friend that there is a stomach virus going around and he did work Monday helping out in a day care center. I am starting to think it's the flu or a stomach bug. He's already saying he wants to play in tomorrow's game - NO WAY that's gonna happen.

Thanks again for you guys, I don't know what I'd do without y'all.:grouphug:
