Don't feel bad! I'm not a great cook, either! That's one of the reasons I love this thread. The recipes are really easy and come out pretty good all the time. It gives me such confidence!!
 
Dinner tonight will be the chicken with paprika cream that I was going to do last week. I'm actually going to try it tonight! I'll let you know how it goes. I'll steam some broccoli to go on the side, and prepare either a rice or noodle dish to round it out! No dessert for us tonight, we had too much dessert last night!
 
Kathy- hope that you are feeling better and that this is just a simple cold.

We are having stuffed peppers tonight. I think with mashed potatoes, corn and a salad. I am going to make the lemon cake if I have time later, I have ironing to do and once again I am behind on it.
 
Hi all! I'm coming back to the land of the cooking! I finished the marathon yesterday!:cool1: :cool1: Now I'm spending the day relaxing and replenishing (which means eating whatever's in sight!:rotfl: ) Anyway, think I'm going to roast chicken tonight if I can ever get it defrosted.

Oh, and the Kahlua Cake was a big hit Sat. night. I made a chocolate ganache for on top and then shaved some dark chocolate on top of that. Yummo!:thumbsup2

Tonight I am using the leftover chicken milanese from Friday as part of a salad with romaine lettuce, chopped tomatoes, blue cheese, red onion, and the sliced chicken. I also bought a crusty baguette from the bakery near my office to have with it.

I'll post the spinach recipe when I get home Lindsay. It is really good.

Wow - congratulations! I'd say you definitely earned your Kahlua Cake! :cool1:

Woohoo! I think it's really good, too. And it's easy to make which makes it a keeper in my book!!!
 
Well, chicken didn't defrost in time--Kids are having grilled cheese and carrots--my appetite isn't great yet, so lots of fluids and carbs (toast and PB) for me
 
We had the Cheesy Crockpot Chicken tonight, with rice, navy beans and corn on the cob. I didn't have two cans of cream of chicken soup, so I used one can of that and the other was cream of chicken and mushroom, along with the cheddar cheese soup, and it was really good. It must have been, because DH is taking some to work tomorrow for lunch and he eats very few leftovers.
 
I made my lemon chicken tonight. All it is is frozen chicken breasts, lemon juice, sundried tomatoes, chopped garlic, thyme and basil. I put everything in a big pan with a little water and just let it simmer.
 
You could make the lemon cake any flavor just by changing the cake mix and pudding flavors. A friend of mine thought strawberry cake with banana pudding sounded good. I think chocolate cake with white chocolate pudding would be outstanding, too. The possibilities seem pretty endless!


SUPER!! I will try the chocolate cake with white chocolate pudding. Dh will love that combo.

I am still feeling blah today, coming down with the cold that ds had all last week. Tonight I did make pork loin with a bbq rub on it, herb and parm couscous, (baked potato for dh) and frozen corn, and applesauce. Dh and ds ate every bit of it. I on the other hand ate applesauce and that was it. My throat is very swollen, so that is all that tasted good to me.
Oh well, less on the lips, less on the hips......
 
nucpharm congrats on the marathon! That's a great achievement. Here's the gratin recipe you asked for, Lindsay, once again a riff on an Ina Garten recipe:

Spinach Gratin

2 tbsp. butter
1 large onion, chopped
2 tbsp. flour
1/8 tsp. freshly grated nutmeg
1/2 cup heavy cream
1 cup milk
About 24 ounces baby spinach, blanched in salted boiling water until just wilted, drained and then wrung out in a clean kitchen towel to get all the liquid out. Don't skip this step or the gratin will be watery! (You could also use thawed frozen spinach, well drained and wrung out).
1 1/2 tsp salt
1/2 tsp black pepper
1/2 cup parmesean cheese (use the good stuff!)
1/4 cup gruyere, grated

Oven 425 degrees

Melt the butter over medium heat and then saute the onions until tender, about 15 minutes. Add the flour and nutmeg and cook, stirring, 2 minutes. Add the cream and milk and cook until thickened.

Chop the well drained and wrung out spinach and add into the sauce, along with half of the parmesean and salt and pepper to taste.

Transfer to baking dish and top with the remaining cheeses. Bake until bubbly, about 20 minutes. Serves 4.
 
I was gong to make fajitas with left over flank steak. I have all the fixins on hamd but when I was driving home from work I was thinking "Man, I REALLY don't want to make that tonight" so I stopped at Quiznos and got subs! :rotfl: One Classic Italian for me and a smokehouse brisket for DH. And I am much happier now!
 
Tonight we are going to my grandmother's for dinner. She is making my fave (the only SHE makes)- her beef stew. I have bragged on it before :)

Still not feeling great, but still must feed the family. I have sirlion strips marinating in a teriyaki sauce that I will broil and that I will serve with my glazed carrots, and waffle fries for dh, and ds will have leftover couscous from last night. (ds does not eat white potato in any form at all)

I am trying a new recipe today from Paula Deen...Mexican Chicken. It is very similar to Lindsay's Cheesy Chicken but with a few other ingredients. Reminds me of Mexican Lasagna. I hope DF and DS like it...they do not stray from the basics.

I will probably serve a side salad...maybe rice.

I hope those of you under the weather start feeling better.

It is so cold here today, I was thinking of some kind of chicken but may just have a New England boiled dinner. I have everything on hand and it may make it feel cozier in here today.
