Glynis - thanks for the lemon cake recipe. I can't wait to try it!!

OKWMom - here ya go:

Red Wine Steak

1 lb. sirloin steak, thinly sliced
2 c. dry red wine
2 Tbsp. chopped parsley
2 tsp. dried oregano
1 tsp. salt
1 tsp. pepper
1 tsp. minced garlic
1 Tbsp. olive oil
2 c. sliced mushrooms
1/2 c. chopped onion
1 Tbsp. cornstarch
2 Tbsp. water

Place steak into a glass dish. Mix together red wine, parsley, oregano, salt, pepper and garlic. Pour over steak and marinate at least 8 hours. Heat oil in a large skillet and saute mushrooms and onions until soft. Remove vegetables from skillet and set aside. Remove steak from the marinade, reserve marinade and set aside. Brown steak in same skillet, add marinade, mushrooms and onions to skillet; simmer 1 hour over low heat. Use cornstarch & water to thicken gravy.

I finally figured out what I'm making for dinner. Portuguese grilled chicken thighs, garlic-rosemary roasted potatoes, baby peas and possibly a salad. I love the chicken recipe because it tastes a lot like those firemen's chicken bbq's and it's so easy. I'm always surprised at how flavorful the chicken turns out when it's only marinated for 30 minutes.

We were planning on going out anyway, and then it was definite when her flight got cancelled, b/c I don't have anything to fix!

Won't have much to post this weekend, as I won't be cooking until at least Monday. I'm running my first marathon:scared1: on Sunday--so send some PD my way from around 8-12 on Sunday morning!

Okay, dinner was so good tonight, and it really was an easy way to roast a pork loin and make it look like you were in the kitchen all day.

From Allrecipes.com

INGREDIENTS

  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried marjoram
  • salt and pepper to taste
  • 6 pounds pork loin roast
  • 4 tart apples - peeled, cored, cut into 1 inch chunks
  • 1 red onion, chopped
  • 3 tablespoons brown sugar
  • 1 cup apple juice
  • 2/3 cup real maple syrup
DIRECTIONS

  1. In a small bowl, combine the sage, thyme, rosemary, marjoram, salt and pepper. Rub over roast. Cover, and refrigerate roast for 6 to 8 hours, or overnight.
  2. Preheat oven to 325 degrees F (165 degrees C).
  3. Place roast in a shallow roasting pan, and bake in the preheated oven for 1 to 1 1/2 hours. Drain fat.
  4. In a medium bowl, mix apples and onion with brown sugar. Spoon around roast, and continue to cook for 1 hour more, or until the internal temperature of the roast is 160 degrees F (70 degrees C). Transfer the roast, apples and onion to a serving platter, and keep warm.
  5. To make the gravy, skim excess fat from meat juices. Pour drippings into a medium heavy skillet. Stir in apple juice and syrup. Cook and stir over medium-high heat until liquid has been reduced by half, about 1 cup. Slice the roast, and serve with gravy.
I followed reviewers suggestions and added pork gravy mix and chicken stock to the sauce. I needed to use poultry seasoning mixed with Bells because I left my container of Rosemary at my Moms, but the flavor was still awesome. Plenty of leftovers to have for Saturday night supper, unless DH eats them all on sandwiches. He is a self proclaimed sandwich king!

Day 5 of My Anniversary Week Off!!!

Today we are actually running a few errands. We are heading down to McKay's to sell some books (buy/sell used bookstore). I am desperately needing some shelf space. We are going to a get-together with our Sunday School class later tonight. I think they are having pizza. I made cupcakes to take as a "finger food dessert."

We are having pizza tonight...I am trying to eat better and I will have some veggies on mine. The guys don't like pizza like that. I wish I had some frozen spinach on hand, I would saute that up with some garlic for the top. That way I can load it up!!!

Supper tonight is sandwiches and/or pizza from the local pizza shop (not sure what everyone wants yet), we are having a major snow storm here today, at least 16 inches, so dh will grab it on his way home I am not going out in it. It is a pj day for me and ds!!
 
Glenda, welcome! And you are right, Lindsay is amazing for keeping the index going. She is really efficient with it too. It doesn't take long for a recipe to appear on a post before it is on the index.

Tonight's dinner is scallops in a basil alfredo sauce over angel hair. Maybe with snow peas on the side. And garlic bread for DH.

Mermaid & Lauren -I plan all of my weeknight dinners on Sunday and get the groceries on Monday. It really does make the week much less stressful.:)

Tonight is my night off from the kitchen but I have some good stuff planned for the weekend. Definitely trying that lemon cake!!

I think this would be good for me too. I tend to complicate my life with disorganization!!! :) Maybe that's why I feel looney all the time! :rotfl:

I'm going to try doing grilled pizza again. I never ended up doing it the last time because I was too lazy to make the dough. I think I'm just going to pick up some dough from Publix's bakery then I won't have any excuses.
