Good Morning!

The Shepherd's Pie recipe that I made yesterday was a hit! :thumbsup2

Tonight we are trying a Weight Watcher recipe for spice rubbed broiled pork chops. I'll serve it with brown rice and green beens. I am trying to cook low fat...I really have to get on track. :)

Tonight we are having Mexican Lasagna served on a bed of shredded lettuce and diced tomatoes (with a dollop of low fat sour cream of course!:thumbsup2 ) I like meals like that because there are no sides to fuss with- your whole meal is right there!

Those brown sugar pork chops sound fantastic! I think I'll try those tomorrow night!
 
Tonight we are trying a new Pork Chop Recepie I found while surfing the net. It is a combination of butter, soy sauce, and brown sugar. I am not sure how it is - but we sure are gonna give it a try. We will prepare Red Beans and Rice with it as well as Three Bean Salad.

I have a pork loin in the freezer and I've never made one before (I got brave and bought one on sale last week, LOL) ~ does anyone have a favorite recipe for this? TIA! :)
 
Well, I never defrosted any chicken yesterday--my mind is going I tell ya!--so we had some pasta, with meat sauce instead of the peach chicken. Since I still have some ground beef defrosted from yesterday, we'll be having burgers and fries tonight. Glynis, I'll be trying the peach chicken tomorrow!
 
Well I spoke too soon yesterday. By late afternoon the bug caught up with me, so I had ginger ale for dinner. Every one else had toast. I am not going to cook today, there is plenty of food to heat and eat in the fridge, I can't look at any.

I understand the guy thing also. My DH is a Paul Bunyan kind of man, but when he is sick or feeling pain the world is ending :rotfl:.

I'll be back to check out the recipes they all look awesome this week! In the meantime, I hope everyone gets well and back to normal.

I hope you enjoy it as much as we did. My husband said it was his favorite of the pork chop recipes and DS11 polished off 3 whole chops.

Tonight we are having a crab and corn casserole. I haven’t decided what I’m serving with it. I’m hoping for some inspiration when I hit the store.
 
Well, dinner last night was less than spectacular. It was ok, just nothing memorable. So, I don't think we'll be having that again!

Tonight we're having Stuffed Pepper Soup. It's one I've done before, and everyone likes it. On the side we'll have some sour cream biscuits and since it's a snowy day, I think we'll have hot cider or hot chocolate. For dessert, I'm trying a recipe for Warm Winter Lemon Cake. It sounds nice and comforting. I'll let y'all know!

Nancy - I hope you and your family feel better soon! All of my kids have terrible colds, and general ickiness. I'll be glad for warmer weather!!!!!

I can't wait to hear if it is good. My DH loves anything lemon. I also am looking forward to warm weather, hope your kids get over the winter yuck. My sister works in Childrens Hospital and she said that this year is terrible for colds, flu and general "I feel yucky and don't know what is wrong". You can't get away from it if you have any exposure to people.

SIL sent over some spaghetti sauce Sunday so I guess we should eat it before it goes bad. LOL I'm not a picky eater, but when it comes to spaghetti sauce I know what I like and I know what I don't like. DH's family puts so much sugar in their sauces that it tastes more like an ice cream topping than a pasta topping. Anyone know how to cut the sweetness? I was thinking maybe a little vinegar, but I don't want to make it worse.

How about adding more tomatoes? I know it defeats the purpose...but it may even out the sugar...I stopped using sugar in my sauce, I tended to have a heavy hand with it too! :)
 
Good afternoon! Nothing to exciting is going to be eaten here today..It is karate night so it will be quick...I think it will end up being Quasadilla's or however you spell it, lol. With a cucumber salad on the side.
