Kathy- I just saw the news. Are you and your family okay? I am afraid that I have a tough time picturing where everyone is located in relation to the weather maps, but am praying that the tornadoes are no where near you.
 
Morning all! More kid friendly food here tonight. Another pasta dish of some sort--I may spice mine up a bit--but definitely bland forhte kiddos!

My aunt's surgery went well. The doctor spoke with us at around 9:45 last night and said he was very pleased. He is the top neurosurgeon at U of M so she was in great hands. :thumbsup2

Hope all of you in the bad weather areas stay safe today! We've got up to 10 inches of snow coming today and tonight :scared: but I can't stay housebound ~ too much to do.

Dinner today is going to be grilled ham and cheese sandwiches with home fries and salads ~ that is really all I can manage today.

Hi everyone - Me and my family are fine, our area was not affected. One are was within a few miles from me. It's so sad that the worst area affected from last night's tornados was an area that was devastated by Katrina. People were re-building and now this. I can't possibly imagine how they are going to make it through this.:sad2:

For all you "stove-top" lovers - I found a recipe on allrecipes for "Chicken Supreme III", basically cubed chicken, onion, butter, STOVE-TOP, cream of chicken soup and cheese. I'm going to try it tonight.
 
My grandpa passed away over the weekend so I haven't been cooking much...at least not until the funeral on Wednesday. Although with this snowstorm coming I'm not even sure how all of this is going to go.

Any suggestions for a potluck dish. We're hosting a potluck dinner after the funeral and I'm not quite sure what to make. Everyone always ends up bringing the same thing (deviled eggs, layered lettuce salad, etc.) and I'd like to make something that can feed lots of people but is yummy as well.

I've got a recipe for a potato side dish that is always served at funerals here. I don't know the name of the dish, everyone just calls it "funeral potatoes." You can make as much or as little of it as you want. It's always good. Let me know if you want it.

Dinner last night was incredible! I'm posting the recipe so you all can enjoy it, too!

Tonight I'm trying something simple and easy since DH has meetings at our church after work. I'm making Ham N Cheddar Cornbread. Basically, you make up a batch of cornbread, then layer deli ham and cheddar cheese on top, and another batch of cornbread on top of that, then bake it all together. We'll also have a large green salad. Maybe some tomato soup to tie it all together. Talk about your comfort meal!

Here's last night's recipe:

Cran-Orange Pork Medallions

1 pork tenderloin (1 pound) cut into 1 inch slices
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
2 Tbs. olive oil
1 medium red onion, chopped
1/2 C. orange marmalade
1/4 C. orange juice
1/4 C. orange flavored dried cranberries
2 Tbs. balsamic vinegar

Flatten pork slices to 1/4 inch thickness. Combine spices; sprinkle over both sides of bork. In a large skillet, saute pork in oil for 3 minutes on each side or until juices run clear. Remove and keep warm. In the same skillet, saute onion in pan juices for 5 minutes or until tender. Stir in remaining ingredients. Bring to a boil. Reduce heat; return pork to skillet. Simmer, uncovered, for 5 minutes or until sauce is thickened.

I used thin pork chops instead of pork loin medallions and it was still great! I served this over brown rice. Yummo!!!
 
Stacy- I'm glad to hear that the surgery went well.

Kathy- Thank goodness you are all right. I feel so bad for those who have had to suffer another disaster. The people in NO have had more than their share.
 
Dinner tonight was really good. I think I'm getting my stride back becasue the last time I roasted a chicken the entire meal was tossed out.

Roasted chicken, stove top, mashed potatoes and gravy, corn and cranberry sauce.

I made an American chop suey type of dish for tomorrow just in case the power goes out. My family looks for it every time we have a snow storm ever since they were kids.
 
This was Sunday night, not tonight, but I thought you might find it interesting. It was my eldest son's birthday, and he decided that for his birthday he wanted an Iron Chef competition. He'd pick the secret ingredients, we'd all cook for him, and he'd judge and choose the winners.

We had two teams of three, and each team made an appetizer, main course, and dessert. The secret ingredients he picked were:

appetizers - onions
main course - mushrooms
dessert - oranges

Well! We had a chaotic but fun time with six people rushing around in my not-too-big kitchen, and here's what we made:

Appetizers, Team A: French onion soup and beer-battered onion rings with dipping sauce. (The bread in the soup was cut in circles and arranged like a Hidden Mickey; the onion rings were also arranged like Mickey's.)
Appetizers, Team B: "Bloomin' Onion" (battered, deep-fried onion that opens up like a flower, with three different dipping sauces served in onion bowls and onion-potato pancakes (latkes).

Main Course, Team A: Chicken breasts stuffed with mushrooms and pesto sauce, steamed broccoli, pesto-stuffed mushroom caps, sauteed mixed mushrooms, garlic mashed potatoes and carrots, and mango salsa. This was presented on the plate with some Star Wars action figures so that the potatoes and carrots were the ground, with mushroom cap craters, a bridge of chicken breast slices with a fence of mushroom stems, the broccoli like little bushes standing up in the potatoes and carrots, and the salsa like lava coming out of the little craters.
Main Course, Team B: Crescent rolls stuffed with mushrooms and gravy and a stir-fried mushroom and vegetable dish with a choice of sauces and egg noodles. Presented on a platter that was a plate over a bowl (hard to describe, but it looked like a mushroom).

Desserts, Team A: orange shortbread cookies dipped in white chocolate and sprinkled with orange crystalline sugar and orange vanilla smoothies.
Desserts, Team B: ice cream with grand marnier and orange zest stirred in, shaped into balls and served in half-orange shells; plus chocolate-orange fondue with fruit dippers; plus crepes filled with orange segments and sauce and drizzled with chocolate sauce.

Team B won but not by much. And we all had a lot to eat. And we're already making plans to do it again!

That sounds like so much fun! How old is DS?
 
Well, the funeral was moved until Friday because of the ice storm/blizzard. I went with my dad to a private viewing (funeral home is about 5 houses down so we were able to make it) and we watched a slide presentation the funeral home made and it was beautiful. The one thing that stood out in every picture was what a great grandpa he was. In all the pictures he was down on the floor with one of the grandkids or great grandkids and always loving every minute. He was 90 and lived a long wonderful life but we will sure miss him.

Our electricity was out all day due to a downed wire so we spent the day at my parents. AHHHHH!!!

We came back to the house to stick all the frozen stuff outside in a bin and right as we were leaving with our bags packed for the night the electricty popped back on. What a week! Luckily my dad made a big pot of ham and beans with cornbread. It really hit the spot on a day like today.

I have chicken I need to use up so tomorrow will be Ritz Parm Chicken.

Glynis, I would love the recipe for "funeral potatoes".

Happy Valentine's Day!!!!! :hug::hug::hug:

Tonight I am making us a special dinner, one of my hubby's favorites. We're having vermicelli with Italian sausage spaghetti sauce (made by Your's Truly), salad, and breadsticks. I told my hubby we'd watch a movie, but it would be a surprise. I picked Aladdin. :) Our anniversary is in 2 weeks, so we never do anything really big for V-day. Just a nice dinner and some time together :)

WFD at your house?

Again, my thoughts and prayers to all my WFD friends who are dealing with bad weather, bad health, and loved one's passing. :grouphug:


ETA: You all know I love to cook :) Well, something so sweet happened to me yesterday. You know I've talked about my good friend and personal trainer, Laura, right? This weekend she was asked to host a baby shower for a friend of hers with LESS THAN A WEEK'S notice. I immediately offered to help her. She said, "I can't believe you just offered that," and smiled. She needed ideas for dessert and could I help her. I came up with a few that she liked and she offered to pay me for it. Of course I refused. Goodness sake, she is on a TIGHT budget for this shower and needs all the help she can get.

Point of my story, I was so flattered she thought so much of my cooking that she wanted me to cook for a shower. Tee hee hee, I feel like a caterer (in a good way)!!! :)

Nothing special for V day here - saucy baked pork chopps, pasta alfredo and green beans. BORING!

Happy Valentines Day! DH is out of town still (he's stuck in the winter storm in Indiana--doing interviews over the phone in his hotel room b/c they shut down the university) Anyway, kid friendly food again-probably pizza!

My boys are home from school and work due to the snow....well, ice. I will be making pancakes and sausage for breakfast...I never make breakfast so this is a treat!

For dinner we are having roasted chicken breast, which is brining, stove top, mashed potatoes and some sort of veggie...I got my mixer so maybe I will make something for dessert.

Way to go Chef Lindsay! :thumbsup2
 
Swimnoid, that was my son's 30th birthday! We'd asked him if he wanted to do something special because it was a "milestone" birthday and the Iron Chef event was what he chose.

It is icy here today and DGD and DH are home. I don't cook breakfast much either so we had pancakes. No special dinner here. We are having the goulash I made yesterday.
