Oh yummy!

Basically, I make thinner patties, and sandwich bacon and cheese in between 2. Pinch the edges to seal, and grill. The kids like them, and Alan does too. I also season the hamburger meat with ranch dressing and salt and pepper. Nice flavor.

The best part is, you can have them on a bun or not. They're so flavorful, you really don't need much more than a side of mustard. I actually like them a lot, but I dislike getting my hands all goopy, so I count it a sacrifice to make them.

hmm sounds good.

I need some help please :)

Riley's class is making family trees & we need to make one on a small poster board. Some of the kids at school have drawn flowers & put the names on the petals & 1 child drew a castle. I need to think of something different for our family tree for Riley.

I am not very good at this, so any help will be appreciated. The teacher said it can be hand drawn or something from the computer, it just needs to be creative.

I like the Disney ideas alot better but the two things that came to mind were a Christmas tree (don't laugh - Christmas is still on my mind!) with ornaments as families - still a tree, but :confused3

ETA: What about star constilations? (PLEASE forgive my spelling!!!) Then he can use black poster board and silver markers...definately stand out!

Last Night's Dinner:
Tamale Pie
1 pound ground beef
1 package (10oz) frozen corn, thawed
1 can (about 14oz) diced tomatoes, undrained
1 can (4oz) sliced black olives, drained
1 package taco seasoning mix
1 package (6oz) corn muffin or cornbread mix, plus ingredients to prepare mix
1/4 cup shredded cheddar cheese
1 green onion, thinly sliced

Preheat oven to 400 degrees. Brown beef in large skillet over medium high heat, stirring to break up meat. Drain fat. Add corn, tomatoes with juice, olives and seasoning mix to beef. Bring to a boil, stirring constantly. Pour into deep 9 inch pie plate; smooth top with spatula.

Prepare corn muffin mix according to package directions. Spread evenly over beef mixture. Bake 8-10 minutes or until golden brown. Sprinkle with cheese and onion. Let stand 10 minutes before serving.

My observations:
1. Bob doesn't like black olives so I substituted in 1/2 can drained navy beans.
2. Wasn't spicy enough - and I don't like spicy - consider adding chili powder or something else to give it a kick in with meat or mix in with the cornbread mixture. (I used Jiffy - and it seemed almost too sweet for the pie...so next time I'm going to add chili powder into the cornbread mixture.)
3. I didn't use a deep dish pie pan - I used a oval pan slightly larger than a pie pan and it still boiled some juices out - use a bigger pie pan than they suggest. It could have been me and cooking more beef than a pound.
4. Definately took longer to bake than 8-10 minutes. Could have been because it was more food than the recipe calls for.
5. And yes - though it says Tamale Pie, there are no tamales. Go figure.

That sounds good! Thanks for your observations. I love to hear what worked and what didn't. It makes it easier to try at my house.

I just have to share this with my Disney family: My husband is officially semi-Disney obsessed!!!!! He came home from work all excited to show me what he bought me. He had gotten the email from Disney shopping about their 75% sale, and free shipping on orders of $60.00. Well, he found a Mickey tow hitch cover for my van, 2 Mickey car backseat organizers for Katie and Jacob, a set of Mickey drawer pulls, 2 picture frames, and a Dash lunchbox for Jacob. I couldn't believe it!!!! Then he says, "What would you think about turning the playroom downstairs into our Disney room?" He wants to get some Disney beanbag chairs, pictures for the wall, wants to paint it up in Disney style, etc.

I think the half marathon/WDW trip really changed his heart. I'm so happy!

woohooo!!!

:woohoo: I'm so glad your Grandma is home.

Jennifer, I think your attempts at sledding are absolutely hilarious. I don't know about Texas but sledding usually involves some kind of incline in Michigan! Not to mention more than a 1/4 inch of snow & ice. :lmao: I give Olivia credit for trying though.

glad grandma's home.

DS has informed me that he wants to see Fantasmic on our last night instead of IllumiNations. We only saw it once last August, and we skipped it in December. So we're good to do whatever.:) Are you interested in meeting for lunch or dinner, or for Fantasmic? I can get an ADR for all of us since my call window opens earlier, or we can track each other down in the Fantasmic theater. I am going to have Thursday be our MGM day, so we'll be around except for DH's naptime.;)

Bernadette - What are your thoughts?

I think we should try for meeting up at Fantasmic, that sounds like fun. I am so unsure of where we are eating right now but I do know for sure that we will be at Fantasmic.

Thanks so much for being so slow tonight. I'm going to go work on my office again for an hour or so tonight. I made some major progress last night and want to make some more tonight. I'll be back before I go to bed.
