The All-New What's For Dinner Thread!!(recipe index in OP)

Sandy - Thanks, where have you been??????? I've thought about you and missed you. Please try and post more often.

I'm sitting in an empty and mostly dark dining hall in peace and quiet uploading pics to our blog. We're having a fabulous week so far!

Glad your having a good time!

I do have an update on my Mom.....she has 5 bulging discs and major nerve involvement. Not good news at all. Yesterday makes it 2 weeks she has been home and besides her having major cabin fever we haven't been told about what to do next. I guess we are in a holding pattern at this point.
I hate to see her in so much pain and feeling "useless", she is very independent and this has not only made her body uncomfortable but her overall state of well being is concerning me.

I really understand how she's feeling. The pain gets really tough to cope with after a while. Keep an eye on her, I know it can be very depressing. And waiting on the dr. gets to be a real pain itself! I had my MRI's on the 27th & my follow up visit with the dr isn't until the 17th!

My menu is similar to Becky's today. I am also making the curried chicken salad with the last of the leftover chicken, and I am having a tomato salad and parmesan breadsticks. We're eating early because Liam has another game tonight. It's in a town I always get lost in, so hopefully we make it!

I hope Liam gets to his game on time & you don't get lost!

I would love to be a regular poster on this thread but I just can't seem to find the time. I do enjoy reading the interactions that you have with one another. Another reason I don't post very often is I dont always feel my dinners are post worthy. Now that summer is here and some of the activities have slowed down we are making a concentrated effort to cut way back on fast food for dinner. Anyway, last night I made a new recipe called Shoyu Chicken. It was so easy and so yummy. The kids loved it As for tonight that has yet to be determined.

You have to come back we are all curios about Shoyu Chicken!

Gretchen Like everyone said no need to apoligize. We all have our moments yours was just way overdo. Hang in there Your are a great Mom.

I should be looking for something for dinner instead I am uploading some pictures.;) Oh I did have that Grand Marnier slushie it was good but not $8.00 good. At Yak and Yeti I had some blue drink that would have been great with some rum but it was too hot for alcohol :rolleyes1

Welcome Home! :goodvibes How did you like Yak & Yeti?

Now this sounds great to me, but DH would NEVER eat it. Boy he really dampers my cooking most of the time. :rotfl: Cold soup he would think I am crazy....gosh, I love gazpacho too.

You could always make the soup for one person, I did. :thumbsup2 I didn't have enough yogurt for the whole thing so I just quartered the recipe.

My Trader Joe's hasn't had my European style yogurt lately which is seriously ticking me off. Last time I got it at another TJ's that is on the way home from my sisters house, I bought 2 of them. Luckily I am going to my sisters this weekend so I can stop on the way home.

Going to have some comfort type food tonight. Beef and mushroom gravy on mashed potatoes.:cloud9: And maybe some sauted green beans.

Looks like I will be at work for a little while longer, it has gotten really dark out and it is thundering. :umbrella:

Thanks for the birthday wishes from all of my great friends here, y'all are my family.:grouphug: My b'day dinner had to be postponed, Kyle got called up to pitch a game with the Knights older team, which is quite an honor, so he & Johnny are headed to the game. I'll have a salad and enjoy some "alone" time.:goodvibes Have a great night everyone.

Welcome!!!!!!!!!!!!!!!!!!!!!! Please do not feel that you need to be as chatty as some of us are, just stop in and say Hello. And never worry about your meals, I have gone days feeding my family "leftovers" which can translate to anything that they can find in the fridge ;)

Will you share your chicken recipe?

Maria, My Mom had broken her knee when Daniel was in HS. She was not used to depending on anyone, was used to gallivanting every day and very uncomfortable. I agree that you need to keep an eye on your Mom, my mother felt pretty out of sorts but did not even know what was really wrong. A combination of cabin fever, pain and feeling useless was not a good combo. Your Mom is still in my prayers.

This is a Birthday gift! Kyle pitching with the Big Dogs, and you having some alone time and a rain check for dinner :thumbsup2

Laura- Liam is still playing? This is one long season!

Nancy  I would have stopped and the red and black beans
Maybe someone will pick up the spoon and start cooking also :rolleyes1

Sheryl Yak and Yeti was awesome. It was so hot that I actually wasn't hungry but I had these fantasic fried green bean with a sweet spicy chili sauce and a salad and of course the blue drink. It was blue caraco cream of coconut and sprite. :thumbsup2 Alex had beef and broccoli
I have to organize my pictures then I'll share.

Here are some photos, nothing exciting. Sunday night we ate leftovers and watched a movie:

Monday night it was, yup, more leftovers from the weekend:

Tuesday night I just made panini:

Tonight is going to be another easy night. I am planning on making curried chicken salad from the final dregs of the leftover chicken, and then just heating up a baguette and putting out some olives and cucumbers. It's just too hot to cook!

Becky those dinners would be considered down right thrilling in my house. Your pictures always make me hungry.

Thanks for all the b'day wishes, y'all are the best! Good news to report on Sammie - she was walking funny early this AM and I immediately thought stroke, turns out she has a "hot spot" in her private area that was hurting her. POOR baby, but I'm so relieved and hopefully she will be relieved soon also when the spray they gave me starts to work.:goodvibes

Is she any better tonight? I'm sorry you didn't get your dinner tonight, but I always love the rare nights alone in a quiet house. It sounds like a pretty good birthday - Sammie's condition isn't nearly what you feared, quiet time alone, and Kyle getting to pitch with the big guys.

I'm sitting in an empty and mostly dark dining hall in peace and quiet uploading pics to our blog. I got 3 solid hours of sleep last night, it was awesome. Even made a midnight Sonic run for some food so I wasn't in bed hungry (when I finally made it). I hope to work in a nap later this afternoon if I can figure out a nice way to bail on my counselors. (who are probably asleep right now because it's quiet time).

Aimee, I'd be incoherent with only 3 hours of sleep. I did that when Hailey was an infant, but I'm much too old for that kind of stuff now.

Maria, I wish I had some kind of comfort, but as Sheryl said, it is depressing to feel bad day in and out. And it is so hard being the caregiver. Hugs to you. I'll keep you both in my prayers.

I hope you made it ok. I am horrible with direction. I thought about getting myself a GPS, but my Dad has one and he calls her Lulu because the voice is female and she gives loo-loo directions.

Jump on in. With or without dinners. Heck I forgot to even post what our dinner was tonight until you reminded me this was supposed to be a thread about dinner. (Maple glazed salmon, Trader Joe's harvest grains, and green beans, btw).

I should be looking for something for dinner instead I am uploading some pictures.;) Oh I did have that Grand Marnier slushie it was good but not $8.00 good. At Yak and Yeti I had some blue drink that would have been great with some rum but it was too hot for alcohol :rolleyes1

Wow, I had no idea about that price tag. I'm rethinking my drinking my way around world showcase idea. :scared1:

Nanatized the chili did ya? :lmao: Nancy I think this is one of the things I like the most about you. You don't mind sharing both your successes and failures and don't mind laughing at yourself. At least you have another dinner to add to the arsenal for times they tick you off. ;)

She's doing much better and I am SO enjoying my alone time.;)

NEVERENOUGHWDW -- I hope the doctors are able to come up with a plan to help your mom quickly.

Kyle got called up to pitch a game with the Knights older team, which is quite an honor, so he & Johnny are headed to the game.

Congratulations to Kyle. What a happy unbirthday present for him! Enjoy your night.

Laura- Liam is still playing? This is one long season!

This is a new season. He decided he wanted to play some more, so he (I should probably say WE) joined the town's summer league. Starting next week, he is going to baseball camp for two weeks during the day, so he'll have six hours of baseball, then games some evenings. If THAT doesn't wear him out, I don't know what will!

The team won again tonight. Liam had two at-bats, saw two pitches and both of them hit him...the first one in the head! He was completely fine though. On the way out of the game, I said the pitchers (two different ones) must have thought he was a really scary hitter so they hit him instead of pitching to him. He thought that was pretty funny. He was on deck when his team made its last out...I have to say I was a little relieved!

Here's a photo of my picnic-type dinner. I wasn't turning the oven on...supposedly, it will be nicer tomorrow.

Shoyu Chicken

3/4 cup Soy Sauce (I used low sodium)
3/4 cup brown sugar
1 Teaspoon minced ginger
1-2 cloves of garlic minced
8 boneless skinless chicken thighs

Combine soy sauce, brown sugar, ginger and garlic in a large saucepan. Bring to a boil. Add chicken and cover. Reduce heat and simmer for 25 mimutes. Thats it! I served this with rice and green beans. Everyone raved.

On the dinner front, grandma stopped by and asked the boys if they wanted to go to Burger King for dinner. So much for staying away from fast food!

Oh Nan, this has me in tears.....:rotfl2:

They were crying too :rotfl2:

Nancy  I would have stopped and the red and black beans
Maybe someone will pick up the spoon and start cooking also :rolleyes1

Sheryl Yak and Yeti was awesome.

The girls said the same thing....You were only gong to add beans, Mom......

Somewhere along the line they got the impression that the kitchen was mine and I am territorial :confused3 Gosh, someone could get teh impression that I am some kind of control freak ;)

I was wondering about Yak and Yeti. We did not plan AK into our week but since I generally plan my days around my meals....who knew I am fixated on dinner?.... I had actually tried to add that park in just for the meal. I had heard such good things.

Nanatized the chili did ya? :lmao: Nancy I think this is one of the things I like the most about you. You don't mind sharing both your successes and failures and don't mind laughing at yourself. At least you have another dinner to add to the arsenal for times they tick you off. ;)

My hit list for those "special" occasions seems to be growing pretty quickly lately :lmao:

She's doing much better and I am SO enjoying my alone time.;)

I am happy to hear that. Once you go through a scare like the last one everything gets to be frightening.
I like a free evening too. I get in my comfies and just hang around. I like fussing over my family and having a busy home but I still treasure a quiet night.

Buddy will look for one of those as well. I know when he needs to just be alone when he asks me if I am going out when the girls head out or if he asks if Kady is coming with us. He is her best Buddy and and will indulge her play time imagination :scared1: way more than anyone else so he never gets a break when she is bored.

If you have a baseball fanatic nothing will wear him out. Debbie could play all year long all day each day and still try to add an extra hour to the 24 we already have. As a Mom, the ball has to scare the sox off of you every time it comes near him if he is a ball magnet :scared1:

Shoyu Chicken

On the dinner front, grandma stopped by and asked the boys if they wanted to go to Burger King for dinner. So much for staying away from fast food!

Well this is right up my alley. I made one that was similar but had some maple in it. My DH was horrified that I made his chicken taste like pancakes :rotfl2: so this one may terrify him less.

I would not mind if their grandma asked me to go to BK, lately I am eating so much salad that I may turn into a bunny

Dinner tonight is supposed to be Chinese food. A few of the WW girls are going together for pedicures and then maybe having dinner at the Chinese restaurant next door. Kady is joining us for dinner because she usually comes to the meetings. She likes to be part of the clapping crowd :cheer2:

I may need to change plans, Buddy's Aunt is pretty sick. His family has a lot of issues with each other but he is close to this lovely lady and her girls. We had gotten a call from his sister but she generally uses scare tactics and his Mom never told us (I have been emailing her and she responds, she never mentioned that Chris was in the hospital) so we really thought that she exaggerated again. I called his cousin and was told that her Mom has an aggressive form of cancer that is present in her stomach, her lymph nodes, her pancreas and lungs. She was intubated yesterday because she did not have a DNR and today the Dr's are going to run more tests and then reassess.

His cousin called me last night and apologized for not having a chance to call him and that just broke my heart. He is their favorite cousin, and was the one they always count on to keep in touch and to support them when they need him, but this has just overwhelmed. Her Mom was fine up to six weeks ago and then began to vomit some blood. She was treated for ulcers but when she went to her primary Dr, he found the cancer. Her first round of chemo was broken into two segments in order to allow her body to process everything, and the Dr's are not sure if it was still too much for her. She is not in one of our major hospitals so I am worried about that too but at this point there is nothing to be done about that.

I am not sure if he wants to go see her today, I am not even sure if we would be overstepping so I am going to let the girls lead us where we need to go.

They have placed her in His hands and will pray that if she is meant to be better she will be and if not that she will not suffer. Please say a prayer for them and one for Buddy as well. He is a man who internalizes pain and hurt so he is just so sad. :sad1: I don't even know what to say, he keeps trying to find reasons why his mother did not create one little message or include any information about his aunt. He cannot believe she would deliberately not tell him something knowing how much he cares about this woman.

I am sorry to keep coming her for prayers, I just know that you all listen so well.

Good Morning All! Now that summer is here, I am finding it hard to keep up...here and the house. :rolleyes1

Thanks for the birthday wishes from all of my great friends here, y'all are my family.:grouphug: My b'day dinner had to be postponed, Kyle got called up to pitch a game with the Knights older team, which is quite an honor, so he & Johnny are headed to the game. Wow, that is wonderful! How was the game? I am glad that you enjoyed alone time...:)

*********
Nancy, Prayers for your Aunt.

Maria, Prayers for your Mom.

TamaraP, Welcome! That recipe sounds yummy and easy too! Just what we like around here!

*********

We are having tacos tonight. I will probably make some salsa rice as well.

Have a great day!

Laura - I know how scary it is when they get hit, especially in the head, glad Liam is OK. I know Kyle still feels bad when he hits a batter. Sounds like he's gonna have a ball at baseball camp!!!!

Nancy - Please don't ever apologize for asking for prayers, especially from us. My thoughts and prayers will be with Buddy and his family.

WFD - Spaghetti & Meatsauce, Peas, Chopped Salad and Garlic Bread.

Nancy--Lots of prayers and PD coming your way for Buddy's aunt. :grouphug:

Laura--can I come to your picnic? Just kidding, but your curried chicken salad looks yummo! I need to make that again soon.

Not sure WFD tonight. I have a couple things in the freezer that I need to use, so I might defrost something today. DD's ear is still bothering her. We had planned to go to a waterpark today, but might skip it so she doesn't get more crud in her ear. Poor baby. And poor mommy--she came into our room screaming again last night around 3am and then DS joined her around 5. I need to get that California King bed ASAP

DH is still talking about these. We love them and everything else we ate there, I can't wait for September!!

1-2 cloves of garlic minced

Welcome, thanks for posting this. I know how you feel about your dinners sounding common compared to what is on this thread. I feel like we always eat the same things. Remember the more the merrier, I am so happy I found this board and these fun ladies!

WFD - Caesar salads. DH wants something light b/c he is working tonight.

Swimming was so much fun yesterday. My DM loves the water but has got in a pool in about 8 years. She has 2 hip replacements and let that hold her back. She was so happy playing with DS in the pool. It made me real happy.
We got some really nice pictures too!

Ann

WFD~ Cobb Salad using the left over grilled chicken from the other night.

Thanks for everyone's thought & prayers for my Mom. I have to run to my office this afternoon and I'm nervous that she will be alone.
