The All-New What's For Dinner Thread!!(recipe index in OP)

IThere is a thread over on the DVC boards about cooking in your villa...alot of good ideas.

Thanks for the heads-up. I checked it out and there were some ideas I hadn't thought of.

The fireplace looks great! Even without the decorative insert that the jerk hasn't ordered yet. ;) Seriously though, I hate dealing with men like that. It makes me want to scream.

Good luck with the game today!

We really like having a kitchen...not that we used it nearly as often as we originally planned last trip. It is great for breakfast though, since Liam, in particular, wakes up starving. It was also good for nights when we knew we would be out late because we took a break in the afternoon to eat and relax and then returned to the parks.

I hope it will work out well for us too. We've always tried simple breakfasts in the room when we weren't doing the character breakfasts, but I haven't tried dinners yet. Last year the adults went to dinner and the kids stayed behind and I felt like they really missed out on the evening entertainment, so I'm hoping this year they won't miss as much. And it would be nice not to have to get dressed up again after the afternoon pool visit. That's the theory anyway. I may get ADR withdrawals and start making reservations like crazy before the trip gets here.

Ann, So I see we've downgraded teenagers into pet carriers!! :lmao: No freezers for them! But apparently Gretchen's going to need something much larger!:rotfl2:

:lmao: :lmao: I think I am. Although right now his growth spurt seems centered in his feet. Poor thing looks like a clown. Tall and thin with these huge feet sticking out.

See pet carriers are easy and are a less suspicious to transport than a freezer. ;) And seeing as they have holes in them they would be less boyant so no worries about something bobbing to the surface.

:rotfl: :rotfl: I see you've given this a lot of thought. ;) Your husband better behave. ;)

Lauren Glad to hear your finger is doing better. I really like the fireplace. Oh Hershey sends a message for Riley. He is not fat or chubby his fur is just extra fluffy.

:rotfl: :rotfl:

We had a leak from our fridge water dispenser over the weekend, and it leaked into our basement ceiling which then collapsed over our new couch. Guess what we're doing in our "spare" time??? Of course, I say we, but I really mean Alan! I'm not much help in the house repair department! However, I did pick out my new garbage disposal that Alan got me for mother's day! Woohoo!!!

Glad to see you're doing your part in the repairs. ;) Which is almost exactly what my role would be. What a bummer though. I hope it is an easy repair.

BTW, I am booking our room at the Park Vue Inn tomorrow :thumbsup2 Be prepared to be peppered with all kinds of questions. I am so excited, I have not raveled with my sister in years and we always have so much fun together.

That sounds like such a fun trip. Be sure to share your details here. I would love to go to California someday.

I will! Thank you! I will keep my eyes closed when all the wonderful recipes and pictures appear.;)

 Unfortunately, I don't have the willpower to do that either.

Dieters, WWers, and anyone who likes yummy, easy, low fat food...have you checked out www.hungrygirl.com? Lots of simple low fat recipes, with WW points. It even has taste alike low fat versions of some restarant faves. She also has a new cookbook out. Check it out! I just made some of the low fat pb fudge the other day.

My WFD? We checked out the restaurant for the rehearsal. I had grilled chick SW salad. Df had shrimp and scallops in a bechamel cr sauce with fettucine. They had a lot of good options. We are going back to chat with the manager tomorrow. they said we could bring our own dessert- my mom is bringing cannolis, napoleans, cr puffs, and eclairs from Naples bakery in Chicago.:worship: So good!

Thanks for the site reference. I'll check it out today. And good luck with the new restaurant for the rehearsal.

***Hey all, I need some suggestions*** As I mentioned last week, we bought a new mattress. It is being delivered on Saturday. Because of this expensive purchase (thank you stimulus check!), I have decided to splurge and go buy some new sheets. Our sheets have a lot more traffic on them than the average *no pervy comments!!* so I feel perfectly justified in buying some. I plan on going to Linens 'n Things to get them. Do you guys have any favorite brand/kind/fabric of sheet that you prefer? I'm just looking for ideas before I go. Thanks!

I agree with Lauren and Nancy. It's all about the thread count. When Kenny and I got married, he was sleeping on horrible sheets, and didn't know there was a difference. When I bought our first "good" set of sheets, I pulled them out of the package before he could see the price and made him feel them. After we slept on them the first night and I could tell I had him hooked, then I told him how much they cost. His eyebrows shot up, but he said they were worth it.

WFD - Beef Stroganoff, egg noodles and eggplant sticks!

Your dinner sounds really yummy. And I didn't tell you when I had to catch up on those millions of pages I missed, but Kyle looked wonderful in his tux. I'm so glad he changed the plan and got dressed at home so you could see him.

He's had such an exciting year. A great win in the playoffs, a visit to the championship, prom, a new car, a new girl, and graduation soon. When should we expect the graduation day picture?

Ann - Good luck to your DN

Tonight's dinner is up in the air. We're all going in different directions today so it may be takeout.

Good morning. It's finally spring here! It's so beautiful, and my trees are all blooming. Nothing like a really nice spring day to put a smile on your face, huh?

Dinner tonight will be a chicken tender casserole. Haven't tried it before, but the kids saw a picture in a magazine and requested it. I'll let you know if it's any good!

Dinner last night was awesome! I grilled pineapple rings to put on top of the turkey burgers and they were a hit! The strawberry shortcake was awesome too. Usually I just buy the sponge cake cups and use those, but this time I made a cake out of bisquick and sour cream and a filling of pudding and Cool Whip. Topped with strawberries it was so yummy!!! I was surprised at how easy it was, too!

Lindsay - I'd go for the highest thread count that you can! Comfort is important to me, so that's what I go for!

Y'all are all just too freakin chatty!!! I check in yesterday around 5, come back today at 1:00 and I've missed 4 pages!!

When is Becky coming back? I need some inspirational pictures! ;)

I had a lot to catch up on this morning too. Becky is back, but she had a lot to do yesterday because her DH is leaving for London on a business trip Sunday. She said she has tons of photos, but she needs to clean them up before posting. Today is her first day back to work, so I am not sure when she'll get to check in.

We went up to see David A. this last weekend. He lives in Murray, which is about 25 minutes away from us. He is such a good kid.

I really enjoyed watching his homecoming last night. I think no matter what happens next week, he is going to have a spectacular career. I also thought that you could really see last night how much his dad loves him and is proud of him.

Tom and I made the mantle. It goes with the parquet floors...Tom and I would have killed each other if we did this fireplace ourselves.

Lauren, I am so impressed! It looks beautiful.

I am making a quilt for her to give as a babyshower gift. It's Saturday and I just started cutting today. :scared:

ACK! Good luck. I told Becky I would make her a quilt for her wedding. She's celebrating 11 years in June, and the quilt is not done.

We are playing the best team...please keep the team in your thoughts. We have our best pitcher pitching tonight (Kyle Jr ;) ) which has been lucky for us. :cheer2:

Good luck to Andrew and the team! Liam's team is doing great so far. They are undefeated, and their pitcher last night pitched five innings of shut-out ball. That is really unusual at this level since they are limited to 75 pitches. The team won 12-0.

Maybe Laura or Becky could get a cannoli for me at Mike's bakery and I can live vicariously (sp?) through them.
Everyone- I just wanted to thank you all for being so welcoming, though I know who to blame when my family starts requesting monkey garlic bread- I'm going to try it with the pizza dough from the grocery store.

Mmm...Mike's Bakery. I don't get into the North End all that often, actually. That is probably better for my waistline. ;)

I make the monkey bread with the pizza dough. Liam and Caili love it. I bake it at 375. Any higher than that and the butter burns.

I may get ADR withdrawals and start making reservations like crazy before the trip gets here.

Gretchen, we made ADRs just in case we needed them. We figured we could cancel in the morning if we weren't going to use them. I'm not sure how many we canceled, but I know we added some when we got there.

I'm not sure what is for dinner yet. I am painting my kitchen, so it is a disaster zone. However, I really do want to cook tonight since we've been eating junk all week.

Yeah Liam! You and your team are awesome!!! :cheer2:

I figured out dinner...we are having grilled cheese and soup and then after the game we'll have vanilla lowfat frozen yogurt and apple pie filling. I have the apples cooking on the stove now...YUM! All within my WW points too!

Yummo! That sounds so good to me! I don't think there's anything better than a gooey grilled cheese sammie! My kids like just plain cheese, but I love to add a slice of tomato or bacon. I also like thin slices of Granny Smith apples with sharp cheddar.

Your dessert sounds good, too! I can't believe it's only 10:00 here and I'm craving this for dinner. Maybe I'll do a grilled cheese for lunch!

So folks seamed to like the idea of the last one I posted. Here is another perienal favorite at my house. Make sure you do the sauce to go with it, it really makes the dish.

Q-Babe's Coffe-Crusted Pork Tenderloin

Ingredients: • 4 Tbs freshly ground coffee beans • ¾ tsp ground cumin
• 4 tsp coarse salt, kosher or sea • ¾ tsp ground coriander
• 4 tsp dark brown sugar • ¾ tsp unsweetened cocoa powder
• 2 tsp sweet paprika • 1-2 lb pork tenderloin (usually come 2 to a pkg)
• 1 ¼ tsp freshly ground black pepper • 2 Tbs canola oil
• 1 ¼ tsp garlic powder
• 1 ¼ tsp onion powder

Instructions: In a small bowl, mix together the coffee, salt, brown sugar, paprika, black pepper, garlic and onion powders, cumin, coriander and cocoa.
Sprinkle the rub on the tenderloins.
Drizzle the tenderloins with oil and rub it in well.
Wrap in plastic wrap and let sit for at least 4 hours (overnight is better).

Preheat the egg to 300° - 325° dome temperature.
Cook tenderloins direct on a raised grid for about 30-45 minutes, flipping every 10 minutes, until they reach an internal temperature of 145°.
Remove from cooker and let rest 5-10 minutes before slicing.

Red Eye BBQ sauce

Ingredients: • 1 Tbs butter • ¼ Cup heavy whipping cream
• 1 slice bacon, finely chopped • 2 Tbs dijon mustard
• ½ medium onion, finely chopped • 2 Tbs molasses
• 2 Clove garlic, minced • 2 Tbs dark brown sugar
• ¾ Cup brewed strong coffee or espresso • coarse salt and freshly ground black pepper to taste
• ¾ Cup ketchup
• ¼ Cup worchestershire sauce

Instructions:
Add the bacon, in a heavy saucepan over medium heat, cook untill just crispy.
Melt the butter into sauce pan then add onion, and garlic and cook until lightly browned, about 3 minutes.
Stir in the coffee, ketchup, worchestershire sauce, cream, mustard, molasses and brown sugar and let the mixture gradually come to a boil.
Reduce heat slightly and let the sauce simmer until thick and richly flavored, about 10-15 minutes, whisking from time to time.
You can serve the sauce hot or at room temperature.
Makes about 2 cups.

After thinking about this post, I decided to elaborate on my "high traffic" sheets. It occurred to me that not all of our posters/readers here might not know I'm a paraplegic. That said, I get on the bed to get dressed/change clothes. It just makes life a whole lot easier. LOL, does that help?

We have some 800 thread count sheets that I found a steal of a deal on Amazon for. They are AMAZING. LnT and BB&B often have good deals, plus coupons, but check Amazon to see if they have any, too.

I screwed up royally on my bank acct so I'm ticked off at myself and in a bad mood today. I had to borrow money for gas from a collegue and that's just mortifying to me. I can't believe I screwed up so bad! I hope the bank takes pity on me tomorrow when I call to plead my case.

My PLAN was to get a sandwich from McDonalds tonight on my way home since they are free, but you have to purchase a drink and that's a no-go right now. So I don't know what I'll have. I have some bread frozen so I think I may make a grilled cheese sandwich; that sounds tasty after reading the thread!

Will frozen bread slices thaw fairly fast - or can I grill them frozen?

Dinner is up in the air. I am not feeling spiffy but I have to go to a BBQ at the nursing home my aunt is in. It is raw and rainy so it is going to be indoors.

 Sorry you're not feeling well. I used to really enjoy all of the functions at the nursing home. It just warmed my heart to see the residents enjoying the simple things in life.:goodvibes

Everyone- I just wanted to thank you all for being so welcoming, though Iknow who to blame when my family starts requesting monkey garlic bread- I'm going to try it with the pizza dough from the grocery store.

Thank you for contributing some really great recipes!!:thumbsup2

Thanks Gretchen. He has had an amazing year and hopefully he will have many more to come. Graduation is next Monday night and then on June 4 he will turn 18.:scared1:

That is incredible!!!!:thumbsup2

We had some really severe weather this morning. First time I can remember being sent home from work as soon as I got there. We're expecting some more storms throughout the day and into the night. I'm hoping it clears up by tomorrow morning as we have Kyle's Baccalaureate Mass and Breakfast.

ACK! Good luck. I told Becky I would make her a quilt for her wedding. She's celebrating 11 years in June, and the quilt is not done.

Thanks. I got almost all of the main fabric cut last night but I ran out of it. When we bought it I had a differant pattern in mind. My friend found two more fabrics she wanted added and I needed more of the one fabric. So it's out to Joann's tonight to get another 1/2 a yard.

Yummo! That sounds so good to me! I don't think there's anything better than a gooey grilled cheese sammie! My kids like just plain cheese, but I love to add a slice of tomato or bacon. I also like thin slices of Granny Smith apples with sharp cheddar.

Mmmm, grilled cheese. I bought this low fat Brie Cheese at Trader Joes last weekend just for grilled cheese and haven't had the chance to make it yet. Maybe for dinner tomorrow night.

Tonight I am going to finally be making be my version of a Giada recipe.

Sheets! I love sheets!:cool1:
Lindsay the highest thread count the better....if you have a Bed, Bath & Beyond collect some coupons and go crazy!

My favorite sheets I actually picked up at Home Goods......love that store but it is a hit or miss shopping spree when you go there.

:rotfl: :rotfl: I see you've given this a lot of thought. ;) Your husband better behave. ;)

I don't have a DH, but I do live with my mother. ;) And believe me she would fit! :rolleyes1

Last week she had to have a minor medical procedure. I went to pick her up and had to sign paperwork. I was joking around and said something about burying her in the back yard. The nurse did not appreciate my humor. :rotfl:

I'll add in an appetizer as well

1 lb linguica Cut into rings and browned on both sides, drain fat

put in a pot with 1/2 cup blackberry preserves and 2 cups white wine. Cook on low heat till the wine reduces and the sauce thickens stirring occationally.

Serve hot

Yep that is my little Belle :) That was when she was only a couple of months old, here is a more recent one

I PM'd Sheryl earlier, she hasn't checked in here or on the NOLA thread today. I hope she's OK.

I grill mine frozen. You may need to cover your pan to get the cheese all melty though.

Sorry about the bank account. I do that way too often. Apparently, I recently forgot about $350 worth of payments. :confused3

So it's out to Joann's tonight to get another 1/2 a yard.

I can't tell you how many bags of Joann's stuff I have in my basement that I meant to make into something, but haven't yet. :rolleyes1

I know you are missing Beck's photos, so I took pictures of tonight's dinner. I apologize for the lack of originality and the photo quality! ;)

We had spaghetti and meatballs (you can't really see them, but they're there):

and the garlic/parmesan monkey bread everyone has been discussing. I made it with pizza dough:

Thanks for the congrats for Liam's team. He is lucky to be playing with some really good ballplayers. He is not a liability, but he isn't one of the major contributors either, at this point. I'll take that. He's the youngest kid on the team.

Uh oh, dog pictures. You should all be very grateful I have no idea how to post pictures, you see I just happen to have the best dog ever- not counting my previous dogs.
Here's my thoughts on sheets- I do love high thread count sheets, but in the middle of summer they cling a little more and are to hot. We use them in spring and fall. Of course if you have AC that changes everything-400 or higher.
