Pretty general questions to which there are as many answers as there are visitors to the parks, I am sure. I would highly recommend taking a look at http://www.allearsnet.com for restaurant menus, and invest in a good guidebook to familiarize yourself with the parks - I recommend the Passporter for your time horizon.

My personal favs at each park are:

Epcot: Mission: SPACE - I've always been a follower of all things space-related so this perfectly satisfies the geek in me

Studios: The Rock n' Roller Coaster - it's a generic Vekoma design put in the dark and spiced up with a great soundtrack. Short and not as smooth as I would like (but hey, it's a Vekoma... what can you expect), but the launch is awesome.

Magic Kingdom - Splash Mountain. An imagineering masterpiece that does about everything right - great visuals, story, sound, and some bonus thrills thrown in :)

Animal Kingdom - Kilimanjaro Safaris. Reminds me of the happy vacations I spent in Kenya as a teenager.

Without knowing more about your family we couldn't advise-no use telling you every scary rollercoaster known to man and mouse, if you have under fives! I agree you would be best to pick up a guide book-I like Passporter but I understand Birnbaums is good too. The same goes for food-if you have kids no use sending you to Grand floridian for dinner! I would say do a character meal whatever your circumstances-breakfast is cheapest, specially if you do a buffet-Crystal Palace or chef Mickeys.
As far as best photo spots goes, when you get into each park pick up a map and they should have Kodak picture spots marked on them, to show you where excellent photo opportunities are.

Have a great time

First remeber to have fun, relax, and stroll the parks! Take it all in!
when DS was 3 he really liked the Buzz Lightyear ride and really can't wait to get do it all over again--Magic Kingdom.

Also in MK--all the scenery!
Epcot for me it is all about the French pastry!
MGM- Playhouse Disney for the kids and Backlot tour is pretty cool

I have yet to visit Animal Kingdom, September will be my first visit! Can't wait.

Go to the Budget Board, they have lots of time/money saving ideas. They can point you to the right direction resturant wise. Also the allears.net is awesome if you want to research it yourself. That's what I did!!!

Magic Kingdom - Space Mt
Epcot- Test Track
MGM - a tie between Tower of Terror and Rock n Roller Coaster
Animal Kingdom - Primeval Whirl and Expedition Everest

For cheap places to eat, buy an guide book about it (I recommend Birnbaums Official Guide to WDW, about $15-$20 at any bookstore), or www.allearsnet.com

Photo spots are posted throughout the parks, and you can also use Disney's PhotoPass, which gives you professional photos that you can purchase either at the park, or at home.

Get the Unofficial Guide to Walt Disney World and use their touring plans. We went last Easter, followed the plans and didn't spend any more than 15 minutes in any line.

Some things not to miss:
Festival of the Lion King in AK for everyone
Fantasmic in MGM for everyone
Buzz Lightyear in MK if you've got kids
Turtle Talk with Crush in EPCOT if you've got young kids
