Tomato casserole
The original recipe calls for chopping tomatoes, green peppers and onions, but it tastes just as good when you buy the canned diced tomatoes with peppers and onions!

Then it's so easy a child could do it (meaning no knifes are involved in the prep).
2 cans diced tomatoes with peppers and onions
2 Tablespoons sugar
2 cups bread crumbs
1 cup sharp cheddar cheese
Add one tablespoon sugar to each can of tomatoes (I just open the can, dump in the sugar and stir).
In 13x9 casserole dish, layer one can tomatoes, one cup bread crumbs, then another layer of tomatoes, and bread crumbs.
Bake at 350 for 15 minutes. Take out, top with cheese and bake an additional 10 mintues.
My family will not eat the "heels" or "end pieces" of loaves of bread, so throughout the year, I dice them up and freeze them. Then when the holidays come around, I have plenty of bread crumbs.

But you can dice up fresh bread just as easily.
