My traditional Thanksgiving meal used to be a high-sodium-high fat extravaganza. Since DH developed chronic heart disease I have revamped my menu. We still have turkey, although I buy a fresh one without additives(did you know most turkeys are injected with salted broth? I didn't!) And we have dressing, which is high sod/high fat and starchy. I make real mashed potatoes for the occasion, a once a year treat for DH. He takes only a small portion of these high sodium foods.
But I also have learned how to make some fresh stuff--Waldorf salad(apple, walnuts, celery and a bit of mayo), Mandarin salad(lettuce, green onions, celery,mandarin oranges and a sweetened italian dressing--yum!), fresh green beans, whole baked sweet potatoes, collard greens without salt or fat(and they are delicious! the trick is cooking them ahead of time so they can soak up my rich beef broth.) for dessert, I make a crustless pumpkin pie, apple pie, and a coconut pie for the kids.
But here's my favorite recipe of all--Wassail
Good for Thanksgiving or Christmas
1 gallon apple juice or cider
1/2-1 cup brown sugar(or splenda)
6oz frozen orange juice concentrate
6oz frozen lemonade concentrate
1 tablespoon allspice
1 tablespoon whole cloves
1 cinnamon stick.
Pour apple juice/cider,brown sugar, frozen OJ and lemonade into a large pot(soup pot or slow cooker works well). Tie allspice and cloves into a clean cloth or tea-ball and toss into the pot with the cinnamon stick. Simmer on top of the stove at least 15 min, Longer is better.
This is a sweet fruit drink that even kids like. It's not too spicy and it's great as a cold drink, too. I love to have a pot of this on when my guests arrive.
