Thanksgiving Menus

We have a small group this year (4)... so keeping it mellow

Turkey breast with stuffing (sausage and apple)
Butternut squash (mashed with a little maple syrup)
Broccoli
Mashed potato and gravy

I will make some pumpkin pie and likely buy a chocolate cream pie
 
Any ideas for an easy to make vegetarian dish (ideally one that others will eat as well - I don’t want to seem like I’m making something just for one person).

I make a lentil stuffed pastry puff. I use this recipe for the filling but then wrap in crescent roll dough rather than the phyllo dough. I always make the filling a day ahead, and then on Thanksgiving all I have to do is assemble it and bake. (2 cans crescent rolls, each can makes 4 squares, put a scoop of filling in the middle and fold up the sides). https://www.connoisseurusveg.com/savory-vegan-hand-pies/ You could probably halve the filling and only use one can of crescent rolls resulting in 4 lentil pockets (and even those I usually cut in half for a serving because I'm filling up on sides). We eat them with cranberry sauce, and I also make a mushroom gravy that goes well with them.

In the past I've also done a stuffed sweet potato. The recipe calls for bacon but I use a plant based sausage.

This one is probably slightly easier than the lentils, but my vegetarian kid isn't into sweet potatoes and really likes the lentils. You can also do the filling for this one ahead of time.
