My wife's family is so large (her mother has 6 kids, with the spouse's, their kids and other relatives that works out to over 35 people) Thanksgiving is more like a cover dish dinner where everyone brings something rather than any one person trying to do everything. Last year I did Mac and Cheese, Green bean casserole and a pineapple casserole
So far I've have been requested to bring My "mac and cheese" and the pineapple casserole that I made last year. I was just trying to use up the left over bread cubes. We had an extra bag of Martins potato bread cubes. I found this recipe in one of my mother's old cook books.

This was the Biggest Hit on Thanksgiving. I did triple the recipe to use the entire bag of bread cubes and also to feed 35+ people



PINEAPPLE CASSEROLE

1 cup. Sugar
4 cup. Bread cubes (sm. cubes, crust cut off)
3 eggs, separated
2 tbs flour
½ cup melted butter
1 lg. can crushed pineapple (20oz)


Mix all ingredients together except eggs. Beat eggs separately. Add yokes to mixture combine then fold in beaten egg whites last. Bake in a 9” X 11” casserole dish (buttered). Bake at 375 degrees for 45-50 minutes, until set like custard pie (fluffy and slightly brown). Remember to grease casserole dish.
 

I am kidnapping Jeff instead. With all those people, I'll send the food and make him cook more for us...:rotfl2:
