Thanksgiving at WDW

We've planned our first WDW Thanksgiving trip for 2004. We are just returnng from a stay in August and now have a better idea of the restaurants but we are still uncertain as to what happens on Thanksgiving. What are the great spots to eat a traditional Thanksgiving dinner and when can you call for PS? Any other non-traditional options that you have enjoyed in the past?
