Are they able to customize your meal since it's being made on the spot?

Specifically can you get the noodles without the veggies mixed in?

And can you get just steak or chicken with the rice and no veggies?

I'm asking because I really want to go but my travelling partner is on the picky side.

Do you just tell the chef what you want based on the menu wrritten?

No one in my group is quite that picky, but the chef did happily leave the mushrooms out of the kids' entrees at DD's request so I know they are willing to make changes.

DH & I dined there Friday night for Candlelight and he is a VERY picky eater!! He ordered the NY strip and got only NY strip...we told them no noodles and veggies. The rice comes out in a seperate bowl so you can eat that!! They will do whatever you want, just let the server know and then remind the cook!!

I'm sure they will accomodate you. Teppan Edo was such a great experience. I dined here twice in August 2008 and everything is perfect.
