Tell me what's good at the Signature Restaurants?

OK, I'm doing the DxDDP for my May trip and will be dining at a Signature restaurant every night. Can't wait!! I love trying new places and will eat just about anything. What's good at these restaurants (appetizer, entree, and dessert):

Flying Fish
Yachtsman
Citricos
California Grill
Jiko (already had their tuna appetizer, filet, and creme brulee)
Artist Point (already had their mushroom soup, buffalo steak, and cobbler)
Narcoosees

Tell me what to order. Again I am not picky and will try anything once.

YSH-Creamed Spinach or Ceasar Salad, Prime Rib (we usually skip dessert)

CG- Triple Cheese Flatbread, or Romaine Salad, Terryaki Filet, Banana Butterscotch Buzz

The veal shank at Citricos
The NY strip at FF
Porterhouse at YSH
Braised Lamb shank at Jiko. Also their BBQ chicken/kenya coffee flatbread as an app.

Yachtsman Steakhouse - Caesar Salad, Filet Mignon, Gratin Potatoes

I'm really wanting to try the Porterhouse at Yachtsman when we go in May, but that is a really big steak!!! I usually get a rib eye or a filet when eating steak, but want to try the Porterhouse. I guess you only live once!

Narcoose's - Full Lobster, I think the only disney restaurant with that offering at WDW.
