Does anyone have this magazine? I saw it on the newsstand today and was flipping through, there was a recipe for escalloped apples. Can anyone give me the recipe? I didn't have the $10 to spend on the magazine

When I was a child, I loved eating at my grandma's house, especially when she baked this comforting apple dish. As a busy mother of seven, I'm often short on time, so I use the microwave to fix it quickly. 10 cups sliced peeled tart apples (about 8 medium)
1/3 cup sugar
2 tablespoons cornstarch
1/2 to 1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, cubed
Directions
Place apples in a 2-1/2-qt. microwave-safe bowl. Combine the sugar, cornstarch, cinnamon and nutmeg; sprinkle over apples and toss to coat. Dot with butter. Cover and microwave on high for 11-12 minutes or until apples are tender, stirring every 5 minutes. Yield: 8 servings.
Editor's Note: This recipe was tested in a 1,100-watt microwave.


Nutritional Analysis: One 1/2-cup serving (prepared with artificial sweetener equivalent to 1/3 cup sugar and reduced-fat margarine) equals 116 calories, 2 g fat (0 saturated fat), 0 cholesterol, 33 mg sodium, 30 g carbohydrate, 0 fiber, trace protein. Diabetic Exchanges: 2 fruit.
 
Scalloped Apples

When preparing my first Thanksgiving dinner years ago, I wanted to add something special to the table and came up with this recipe. It's been a part of our traditional dinner ever since.

8 Servings

Prep: 20 min. Bake: 35 min.

Ingredients
10 cups thinly sliced peeled Golden Delicious apples (about 8)
1 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
6 tablespoons butter, divided
2 cups soft bread crumbs (about 4 slices)

Directions
In a large bowl, combine the apples, sugar, cinnamon and cloves.
Transfer to a greased 13-in. x 9-in. baking dish. Dot with 2
tablespoons butter.

Bake, uncovered, at 325° for 25 minutes or
until apples are crisp-tender.

Meanwhile, in a small skillet, melt remaining butter. Add bread
crumbs; cook and stir for 3-5 minutes or until crispy and golden
brown. Sprinkle over apple mixture.

Bake 10-15 minutes longer or until apples are tender. Serve warm.

Yield: 8 servings.

Nutrition Facts: 1 serving (3/4 cup) equals 281 calories, 9 g fat (5 g saturated fat), 23 mg cholesterol, 148 mg sodium, 51 g carbohydrate, 3 g fiber, 1 g protein.
