Talking about meal planning with DS

I love my kid. We have a few minutes of down time and I said "hey, let's look at the WDW site and start thinking about a couple of restaurants for our vacation next summer" DS says "OK...wait, aren't we going to have our camper with us? Why do we need to go anywhere to eat?" I guess we've trained him well!

As I've mentioned in the past, we're high maintenance eaters - the biggest part is low sodium, so we rarely eat out. When traveling we like to hit a restaurant maybe 1 or 2 times in a week. Apparently DS doesn't even need that often!

If this helps, the link to the camping recipes thread is above. I'm sure there will be some recipes, or suggestions, that you can adapt to low sodium. I've found you can make almost anything camping that you can make at home.

My DW and I like hate dishwashing while camping, so we tend to "lean" our recipes toward one or two dish meals, crockpot, or grilling.

I like foil packets on the grill or in the oven. One portion of meat, potato or rice, veggie of choice, sauce of choice, wrap it, cook it, and sometimes we even eat out of the foil packet, so no dishes.

When we have left overs at home, I sometimes make packets with them and freeze them for the next campout.

I guess I wasn't looking for suggestions as much as I was just sharing one of the great aspects of RV-ing that we really love. Actually, one of the two or three big reasons we moved on from our pop-up was so we could have our rolling restaurant with us.

We, too, do a lot of grilling and foil pouches on the grill. We also pre-make stuff like beans, quinoa, ground buffalo and pre-chop some onions and peppers and stuff like that (see, I told you we were high maintenance ;) ) We do "cheat" with frozen veggies when on the road, unless we see a great farm stand. And I also raid the freezer before a trip, which works especially great for those later nights en route! Otherwise, we cook like at home (mostly scratch, whole, organic, blah blah blah) and it actually reduces stress for us. I know others wouldn't dream of cooking and cleaning on vacation, but for us it really helps us to be relaxed. :thumbsup2

We also feel it is important to eat the same as at home. We do go out but keeping the majority of meals the same as home keeps us energized and able to keep up a good pace for a day in the parks.

The packets also work for left over lasagna, beef stew, chili, etc. Just use a foil piece big enough for a serving plus "wiggle room" for expansion when it heats up.

What a blessing to come back to the camper all tired out and be able to just toss packets on the grill or in the oven (toss in separate packets of bread sticks or garlic bread and serve all with a packaged salad mix and a few tomatoes and your favorite dressing).

For dessert, use packets with bananas split down the middle lengthwise, sprinkle chocolate chips and mini marshmallows and anything your imagination hungers for into the split, seal the packet and heat for a few moments to melt the chips. No mess, no fuss, minimum clean up!
