We have a trip planned to Disney the week of Thanksgiving (Sun/Mon - Fri). The flights are available to book now but they do seem a little pricier than usual. With Delta, will I see the price fluctuate or a sale as we get closer to our travel date? When is the best time to book for Delta? There is only one direct flight a day which we'd prefer to fly on so I don't want to miss that opportunity.

Also, it appears we have enough skymiles for two flights (who knew?). Will these points go up or down as we get closer to November?

Yes, the price will fluctuate between now and Thanksgiving.
No one knows the best time to book for ANY airline, AND it varies based on itinerary and time of year.
I believe (but no guarantee) the price in points will only go up.
If there is a specific flight you want, I would book it when you're acceptable (note: that doesn't mean happy) with the price. If it's going to bother you if the price goes down after you book it, DO NOT LOOK AT PRICE AGAIN. However, I would periodically check your reservation to make sure there hasn't been a change in time, equipment, and/or seats (if you're getting assigned seats).
 

No guarantees, but we have been flying Delta for years to MCO for the week after Thanksgiving. Our drop dead month to book is usually late May. Also look to book on Tuesdays. Usually cheaper than on the weekends. If you do see a cheaper price after booking, call Delta and ask how much it would be to upgrade to Comfort or First Class. I noticed a price drop the past two years and have upgraded from Comfort to First Class for $49 each. That's bag fees and only $50 more for the two of us. Yeah, it's a short flight ATL to MCO but we enjoy first on, first off, first to get bags and free alcoholic drinks, snacks.

I booked a flight last month with Delta for September.
Within 24 hours the price dropped $50 so I called and the cheaper price was honored.
They adjusted it as I called within the time frame.

Looking at the prices now, they keep rising.

But a lot of available seats still on my flights so assume prices will fall

I was watching Delta for my last trip and would see prices rise and fall for the flights I needed.

My Amex card saves me from the baggage fees.

Unless you have a travel agent or paid product like Expert Flyer, you don't have access to this information. Looking at available seats on a seat map isn't effective. It's not unusual for seats to be sold without being assigned. Seats may be sold but not assigned for wholesalers, groups, and Delta's Basic Economy customers. All three of those categories are more likely to be found in leisure destinations like Orlando.
