Taking my nieces looking for opinions

It really depends on what/who they like. Even though they may think they are a little old for Princesses, there is just something special about eating inside the castle (CRT). They will get a wishing star and wand and have the experience of being inside the castle- in addition to meeting Princesses. Tusker House at AK is also a fun one-- you get to meet Mickey, Goofy, Daisy and Donald in their Safari outfits. DD has always been a huge Cinderella fan, so she really likes 1900 Park Fare Dinner at the GF because the Stepsisters are hilarious and it is the only place (outside the Christmas party) where you can meet Prince Charming. DH is not a fan of that one- he thinks the place is too hectic, loud and crazy. You can meet the stepsisters together in MK also and they are funny there. If they like Pooh (and I know adults that are still crazy about him), the Crystal Palace meal is fun-- the food is generally good there. We are not fans of Chef Mickey's dinner (never did breakfast)- the only time we did that one the food was awful and the place was dirty- the characters were great though. DD still loves the character meals and her dining requests for every trip are CRT, Biergarten, 1900, TH and CP. She gave up Akershus a couple of years ago- I would say unless they are really really into Princesses still- that one would not be the one to pick. For us the food has been inconsistent (sometimes good, sometimes not), the tables too close together (one time I got repeatedly bumped by people the entire meal to the point were DD and DH were laughing their heads off) and although others have had good greets there, ours always seems really rushed and there wasn't space for decent pictures.
 
Thanks everyone for your helpful responses! I should have mentioned that we are staying at AKL for 5 nights so we plan to do one park per day for the 4 days and no parks on travel days. I am definitely taking them to EP after reading about agent p they will love that! They love to swim so I'm hoping to build in some swim time weather permitting. I haven't been in November in quite awhile, but we were there December 2015 and it was too cold for the pool. I'm definitely going with the suggestion to buy them a travel book, I bet that will help a lot instead of me trying to describe the rides and attractions to them lol. Since you are staying at AKL, you might plan to have them do some of the kids activities at the resort on any downtime you will spend there. My DD was 10 on our first time there, and is very into animals, so we we spent most of a day doing some of them. She mads a feeder for the giraffes that they place on the trees for them, learned African drumming, decorated cookies at Boma, and I'd an animal tracking activity. They can make a bracelet with little trinkets they give them for completing each one. For meals, I agree with PP about Tusker House brft, CRT is magical inside the castle, and 1900PF dinner is a lot of fun. We also love CP brft for a great meal with a view of the castle. They are my fave characters, but DD is still fond of them as well, even though she is now 12, and would not go out of her way to meet them! Non character we like to do Sci-Fi at HS for the cool atmosphere and Whispering Canyon at WL for the crazy antics at dinner(don't forget to ask for ketchup if you go!). From WL, we also took the boat to Ft. Wilderness for the campfire and s'mores, and watched a little of the movie afterwards. BOG lunch for a CS is good too, to go inside the Beast's castle.
