Taking a Solo Trip 3/11-3/13 and have some questions

I will be in Orlando for a work conference from 3/7-3/11 and decided to add on a stay at Universal for the purpose of exploring WWoHP solo. I was actually at Universal Orlando for 2 nights this past August prior to a Disney cruise and one week stay at WDW so I did spend a couple of hours each morning at Hogsmeade and Diagon Alley. However, I was with my 3 young kids, and in-laws (including my grumpy brother-in-law) so I wasn't able to take my time and take in all the details at WWoHP. I told myself that I if I ever came to Orlando for work, I would totally go back just for HP. Well, a few months later, I got my wish! My meeting ends late afternoon Thurs 3/11 and I will be staying until Sat afternoon due to the price of flights and what my corporate policy would pay for. I ended up getting a 3 day park-to-park pass because of the buy a 2-day pass, get 1 day free promo. So I plan on spending a few hours in the park on Thurs evening, doing EE Fri (and taking an afternoon break to swim and relax before going back in the evening), and doing EE Sat for a couple of hours before I have to go to the airport. I am not going to do anything other than HP because I was just there last August and did everything else then.

Questions:
1. Does anyone have the schedule of what park has EE on Fri 3/12 and Sat 3/13?
2. I will be staying at Cabana Bay and I know it is the furthest from the parks. Last time we stayed at RPH and walked rather than take the boat. Is it walkable from CB? If yes, approx how long does it take?
3. Does the Starbucks in CB have healthy grab and go breakfast options?
4. I'm planning on having dinner at Cowfish on Fri night. Do they have a bar that I can sit and eat at since I will be solo?
5. Since I didn't need to do this when I was there last time, does Forbidden Journey and Gringotts have Single Rider lines?

I suggest to use the bus, can take less time than walking to the parks

I do solo trios all the time
No need to sit at a counter/bar area, be seated at a table

Not sure if its walkable but the bus ride is very quick....the buses ran very often and I was impressed with how organized and clean they were.....taking the bus is probably faster and easier
3. Does the Starbucks in CB have healthy grab and go breakfast options? Yes! And so does the Bayline diner
4. I'm planning on having dinner at Cowfish on Fri night. Do they have a bar that I can sit and eat at since I will be solo?
5. Since I didn't need to do this when I was there last time, does Forbidden Journey and Gringotts have Single Rider lines? Yes!! But if you do this you might skip[ walking through the line inside and seeing all the cool stuff that is part of the decor

1) Carole answered, it's only gonna be the Studios/Diagon Alley
2) It's slightly longer than the walk from RPR, others have guesstimated 15 minutes approx.
3)Yes
4) I'm pretty sure they do, but don't know for sure
5) yes, but can close at any time if busy. They closed the single rider when i was there in 2014
 
Yes, Cowfish does have a bar you can sit at, but you won't have to if you don't want to.......we saw several solo diners at tables too.........although sitting at the bar there did look cool as you had a perfect view into the kitchen area if you enjoy that sort of view........
