Taking a relaxed trip...

We're going to a wedding in a couple of weeks in Florida, and we got a very good deal to stay on property (AKL) for a few days. We do have a trip planned for December, and that's going to be our major trip with the sit-down dining, going on rides, etc. We've been to the parks enough times that we've done MOST things, so even though we know we're bound to discover more new stuff, we're not raging to go-go-go. We also have a very headstrong toddler with us (three kids in all) so I think this time we'll definitely be taking this slow - time at the pool, etc. Especially since it's Florida heat for the summer, and the crowds are likely going to be bigger than we're used to.

The kids are now are 6, 7, and 18 mo.

We have three days on property, then the wedding, then another day on property before we drive home. It's two full days driving each way (20 hours in all), so there's that.

One thing we've never done is go to the waterparks. The big kids are old enough now that it seems feasible this time. Is there enough to do there to make a whole day out of it? What happens if it's rainy / stormy that day? I know sometimes they close them down. Does that happen a lot? Is either one more fun to go to than the other?

I'm thinking -

Day One - Waterpark, Nap... Maybe Downtown Disney? Or dinner at a resort?
Day Two - Breakfast, Pool, Nap, Magic Kingdom into evening
Day Three - LegoLand? (I don't know if that's worth it) then Simba's Lodge / Boma's for dinner
Day Four (Saturday) - Breakfast, Pool, Nap, Wedding
Day Five (Sunday) - Wildcard... depending on how tired we are, how we're handling the heat, etc.

I'm not used to being so disorganized about a trip. Usually I have things planned out months in advance, down to TS reservations and touring plans and stuff. This is totally different and I'm worrying I won't be able to relax without a plan! Any thoughts on the approach we have so far?
 
My DD is older, but we spent about 5 hours at the water park. It was a lot of fun! The AKL also has a bunch of stuff to do at the resort. We spent one evening at Kidani pool, there was bingo, a dance party, pool games, marshmallow roasting, and ping pong. They had all sorts of activities in the lobby/animal viewing areas as well. We kept hoping to check out the animal viewing with night vision, but spent every night in the parks.
