I did the Cognac and the Whiskey tasting. Both were in the evening (like 10PM) in Meridian, and both were sparsely attended 4-6 people. They definitely didn't close the bar to other customers, we just went over to a section of tables and did the class. Also, for these, they did let non-participants observe. For the larger classes (like Mixology) or the smaller bars (like Oh La La), it makes sense that they do it differently.

This has also been my experience. I've done a couple smaller tastings in Meridian in the evening and DW was welcome to "observe".
 
My husband did a whiskey tasting in July and I did not book as it was at 10:30pm. I assumed my DD7 would be asleep and I would need to be in the room... Wrong!! She was running around the kids club until 11:30pm and we finally had to drag her out at that time (time zone change in Europe did her well!). So I went with my husband and they let me pull up a chair next to him and listen with no problem.
 
It could have something to do with the operating hours as well. I have been to Mixology while Skyline was technically closed and only ticket holders were allowed in. I also sat in Meridian and just watched a Cognac tasting, but it was in the evening and open to other guests.

That may well be the key.
 

I've done tastings in Pink (champagne), Keys (mixology - twice, wine, chocolate/liquor), and Palo (wine) where they were closed for tastings and people were turned away. I've also done tastings in O'Gills prior to it being O'Gills (beer, tequila), Promenade Lounge (tequila), Meridian (martini), and the Cove Cafe (cognac, whiskey) where they just had a section. In Pink, Keys and Palo, no one was allowed to attend without paying (people did ask). In the other locations, they weren't allowed to sit at the tables where the tastings were going on without paying, but there were others in the bar during that time but separated. Not like they couldn't overhear, but they weren't really active observers.
 
Last week I sat in a wine tasting that DW was the ticket holders (I don't drink). I asked on the way in if it was ok for me to listen & the sommelier (George - what a great guy) said it was no problem.
 
Just did the mojito testing at meridian on the fantasy last week. One lady's husband sat with her during the tasting. He did not purchase a ticket or participate in the tasting.

Probably up to the discretion of the cm working at the bar.
