Which rides involve touching the person? What about if a kid is tactilely defensive in a ride that that uses the sense of touch or feel? My 7 year old freaks out with that kind of thing. Is there a way to particpate in any of these without him having to deal with that?
 
Other than people in lines or a cm checking to make sure that a seat belt is fastened I don't think you really have to worry about it. The only rides I can think of that might be a problem are Stitch's great escape, It's a bugs life. Your bottom gets pinched, The 3d movies like that might be a bit much as things will seem to be comming at him. The only other things I can think of are Dinasour, Kali River Rapids where there are fast turns and you can get pushed up against another. You might also want to avoid tube rides at the water parks. But there are so many others that are much slower paced that you should be fine. If you pick up a copy of passporter wdw at the bookstore.

Is it only touching that freaks him? What about things coming towards him? If it's only things touching him, I'd say avoid:

It's Tough to Be a Bug - things poke you in the back and your seat
Honey I Shrunk the Audience - there's only one bit when you get something touch you, if you PM me I can tell you when (don't want to spoil it for anyone)
Stitch - definitely one to avoid, Stitch jumps on, pokes, prods and belches at you

Those are the main ones, really. As mickey&minniealways said, some of the coasters you get pushed into each other a bit, though some of them have everyone one in front of the other. If he has problems with things coming at him, I can add to your list.

Oh, is he OK being sat next to you or someone else he knows? If you move a little and brush his arm, could that cause a problem? If so, on rides where you sit next to one another (such as It's a Small World, Pirates, shows etc), you might need to ask the CM to leave a little more room in your row, so he can have room to breathe. If it's not too busy, you could probably leave an empty seat on either side of him, if needed.
 

Thanks for the input. I do think that things coming at him will bother him so I would like to know those as well. I think he'll be okay with us brushing his arms - as long as it's family doing it. The pokes and the other stuff you mentioned, he would freak out from.
 
I would avoid any of the 3-D attractions since they offer the impression of things coming at you. My son freaked at Mickey's Philharmonic and also at the Muppets. Taking the 3-D glasses off helped somewhat, but we had to leave the show to get him settled.

I would also avoid Journey to Imagination. Too dark, and at one point, there is a blast of air on the back of your neck with a loud noise. That was, umm, almost 8 years ago and we haven't been back on that one since, so it may have changed. Perhaps someone can offer a bit more clarification on this ride?
