T-rex not on the dining plan next year???

Just looked at next year's dining plan and t-Rex and rainforest cafe at downtown disney not on the dining plan for next year.

Any restaurant that is not owned by Disney will not be included until they re-sign their contracts. That will not happen until later in the year. Do not expect to see them added to the plan brochure before December. Probably late December.

You may have noted that there are currently NO Downtown Disney restaurants on the 2015 list. This is because there are no longer any restaurants at DTD that are owned by Disney.

Just to ease your mind, only once has a restaurant not renewed (Fulton's, years ago) That is not to say it couldn't happen, but you could pretty confidently make your ADR's based on this years list, then change any that might not renew.

I just booked for T-Rex tonight in February.

You can book it anytime you want. It just will not show up on the DDP lists until December.
