We are driving from Houston and arrive on September 1st. I went to make reservations online for T-rex for dinner and there wasn't any. Is there any chance to eat there without an online reservation?

Definitely call them directly. They only release a fraction of their reservations to Disney. Another option is to sign up for the Landry's card. With the card you get priority seating without needing a reservation. I believe the card costs $25, but they give you a $25 reward back for signing up.
 
I've had luck getting reservations the day before but every time they were definitely taking walk-ups when we showed up so even if you can't get a reservation I'd still try showing up!
 

Yes! you might need to wait but I can’t think of a better place to be waiting, right across the restaurant is the lego store and plenty of outdoor seating, shops, if you are flexible you will have no problem.

And when you book direct there’s no cancelation fee. Getting the card is a no brainer, even if you only use it that one time. You can sign up for it online. It’s also good at Rainforest Cafe and Yak n Yeti.
 
We ate there for lunch last month without reservations. There was no wait.
 
Definitely call them. They don't put all of their reservations on the Disney website and many people have had luck calling. Not sure if you're Landry's card holders (we're also Houston area and have one just b/c of the number of Landry's owned restaurants in the area), but card holders are also supposed to get priority seating.

Good Point! It will be my youngest son's 9th birthday. He loves legos.
 
If you’ve got the Landry’s card, you’ve got the golden ticket. No need to make a reservation. Just show up and get the next available table.
 
I can vouch for this. If you have a Landry’s card, just go inside to the podium (skip the check-in desk outside), show your card, and you’ll be seated at the next available table for your size party. Same for either one of the Rainforest Cafes and for Yak & Yeti. No worry about being on time for a reservation!
