Sweet potato and peach casserole

Hi guys!

I hope you can help me...my MIL used to have a recipe for a sweet potato and peach/or nectarine casserole that she likes to make for Thaksgiving, she can't find it...

I google the ingredients and tried allrecipes.com, but no luck. MIL says that the recipe also includes lemon zest.

Did you check the "secret family recipe" thread on the Community Board? I was reading that earlier today & I'm sure someone mentioned making something with that combination. It didn't strike me as a casserole when I read it, but that doesn't mean anything.

Is this it??? It doesn't have any lemon zest, but could easily be added.



Nutty Sweet Potato Peach Bake

4 medium sweet potatoes

1/2 cup packed brown sugar

1/2 cup broken cashew nuts

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 cup diced canned peaches, well drained

2 tablespoons butter or margarine

Scrub sweet potatoes thoroughly but do not peel. Cook whole sweet potatoes covered, in boiling salted water until done about 30 minutes. Drain, peel, and slice.

In a small mixing bowl, blend together the brown sugar, nuts, salt, and cinnamon.

In a 1-1/2 qt. casserole dish, layer half the sliced sweet potatoes, half the diced peaches and half the brown sugar cashew mixture. Repeat the layers. Dot with butter or margarine.

Bake covered at 350° F. about 30 minutes

Deb, To be honest I'm not sure what is called She has been making this side dish (is her favorite), she also makes sweet potato with orange and pecans (I like this one).

Kycha, I saw that one too, I'll show it to her.
