Other than for spaghetti sauce, how do you use links
of italian pork sausage? I'm looking for a new dinner
idea for tonight.

Thanks,
TxAg

Simmer them in a half inch of water in a skillet. Drain the water then they are done and slice and return to the pan with some onion and bell pepper. Serve this in a whole grain roll with some provolone cheese. :lovestruc

I just tried a Rachael Ray recipe for pumpkin & italian sausage pasta last week that we liked alot. Search for pumpkin pasta at www.foodtv.com and it will come up. I have also made a pasta bake recipe that used italian sausage and three cheeses. It was out of cooking light recipe. Can't remember the name, but they have a great recipe database on their site as well.

Italian Sausage Casserole

5 pototoes, cleaned, cut thin
1 smal onion cut thin
1 green pepper, seeded, sliced thin

Grease a caserole dish, layer pototoes, onion and peppers in three layers. Place italian sausage on top of the potatoes, cover. Bake at 350 for 50 minutes to an hour. (Sausage should done and potatoes soft). I scoop the potatoes with a slotted spoon to avoid any grease.

That sounds really good!

Funny you ask because I just made a Italian Sausage & Pepper dish in the crockpot today. We're getting ready to eat it soon. It is my first time making anything with Italian Sausage (bought it cause I had a coupon and it was on sale).

Because mine was Hot, I used half italian and half turkey keilbasa. Cooked in water on stove first, sauted some yellow, orange and green pepper slices with onion and garlic - just enough to soften, not cook thru. Added the sausages (sliced), peppers, can of northern beans, can of kidney beans, can of diced tomatoes, dash of italian seasoning and salt all to the crockpot.

I sampled it a little bit ago .. YUM! Gonna eat it with some crusty french bread. :goodvibes

I followed Shelly's suggestion and went to Cooking Light. The first recipe with Italian sausage was the soup with pasta and canned tomatoes. It was just what I was looking for, and I've already had a bowl - yum! I added white beans to mine and doubled up on the pasta and chicken broth. Made a package of biscuits to eat along side. :thumbsup2

Thanks for your suggestions!

Remove the casings, crumble and saute, mix into homemade macaroni and cheese, adding a little diced onion and sweet pepper, too, if you like.

We love the HOT sweet Italian sausage cooked slowly on the grill. Put in a hot dog bun (the whole grain bun sounds great) with lots of yellow mustard. They cause little grease fires, so you have to watch them. I want one now..

You might have a better chance if you asked in the proper board- there is a cooking/recipe board here further down.

ok- here is what I do, and my mouth is watering thinking of it...

Lightly cover your baking sheet or baking dish of choice (I use a good size one) with olive oil.

Peel as many potatoes as is appropriate for your family and cut into chunks or slices. (not too big) Add the potatoes to the baking dish and toss to cover with the oil.

Quarter the sausages. Put onto the baking dish- I typically put them all at one end. Roll them so they also are covered with oil. Add some chunks of onion and chunks of apple onto the sausage. (I used 3 small apples last time I made it and it could have used more- yummm)

Put into 425- 450 oven. Check the potatoes after about 25 mins and they should be browned and crispy on one side- turn over so both sides get crispy- I do the same with the sausage cause I love mine crispy.

Check in about another 20 mins and everything will probably be done.

It's pretty easy, and using one pan makes clean up easier too!

You've never had a sausage and pepper sandwich? Around here, they're just as common as hot dogs and burgers at bbq's, and there's always a tray of sausage and peppers at every function!:lovestruc

Mmmm...I"m going to have to try some of these recipes. I usually just throw Sweet Italian Sausage into my homemade spaghetti sauce, but now I"m going to have to try something new

Sausage and rice stuffed peppers.

6 links of crumbled cooked sausage
4 large green bell peppers
4-6 servings of cooked white rice
2 eggs
S&P
Parsley
grated parmesian cheese
Can Hunt's tomato sauce

Cut tops off of peppers and clean out the seeds. Save the tops.
Remove the sausage casings and cook the sausage in fry pan drain grease.
When cool, combine all the ingredients and stuff the peppers. Drizzle tomato sauce on each pepper and replace the pepper ring top.

Bake in well covered baking dish until peppers are tender. About an hour at 350.

If you have left over stuffing after filling the peppers, cook it in a foil lined or sprayed covered casserole.

Just had this at a B&B in New Hampshire - to die for - we ate it at 9am and weren't hungry until dinner!!!! I plan to make this tomorrow. I have sausage and will just remove the meat from the casings!

Cowboy Christmas Breakfast

Active time: 30 min Start to finish: 1 1/2 hr

Servings: Makes 12 servings (or 8 for cowboys).

1/2 stick (1/4 cup) unsalted butter, softened, plus additional for greasing baking dish
1 (1-lb) package bulk breakfast sausage (not links)
1 (15-inch-long) loaf Italian bread (about 4 inches wide)
1 garlic clove, chopped
2 dozen large eggs
1 cup whole milk
2 teaspoons salt
1 teaspoon black pepper
1 large bunch scallions, chopped (1 1/4 cups)
1/4 lb sharp Cheddar, coarsely grated (1 cup)

Put oven rack in middle position and preheat oven to 375°F. Generously butter bottom and sides of a 13- by 9-inch baking dish.
Cook sausage in a 12-inch heavy skillet over moderately high heat, stirring frequently and breaking up any large lumps with a fork, until browned, about 10 minutes. Pour off fat from skillet, then cool sausage to room temperature.

Cut half of loaf into 1-inch-thick slices and reserve remaining half for another use. Pulse butter and garlic in a food processor until smooth. Spread a thin layer of garlic butter on both sides of each bread slice, arranging bread in 1 layer in bottom of baking dish. Sprinkle sausage on top.

Whisk together eggs, milk, salt, and pepper in a large bowl until frothy, then whisk in scallions and half of cheese. Pour egg mixture over sausage (bread will float to the top), pushing down on bread with a spatula to help it absorb liquid. Sprinkle with remaining cheese.

Bake, covered with a large sheet of buttered foil (buttered side down), 30 minutes, then carefully remove foil and bake until top is slightly puffed and eggs are cooked through in center, about 20 minutes more.

Let stand 10 minutes, then cut into 12 squares.
