Sustainable fish? Can you be more specific?

For instance, at Kona, what type of fish is categorized as sustainable?

My son likes lighter type fish like tilapia, but isn't a fan of salmon.

It's hard to be specific. Some fish, like Chilean Seabass or Orange Roughy--are not considered sustainable no matter the source (and sources are limited, which is part of the issue.) Some fish, like Salmon and Tilapia, are raised or captured in a sustainable fashion in some parts of the world and not in others. A restaurant dedicated to serving sustainable fish would not serve the Seabass or Roughy at all, and would serve Salmon and Tilapia only under certain conditions.

It means whatever they have access to at that time that has been obtained in a sustainable manner. So, it could be any "type" of fish and could change constantly.

*Note* The use of the word "type" means a light white fish vs a more meaty style fish.

This may be a silly question, but you are allowed to ask what kind of fish it is, before you order, right?

Just wondering. DH had the sustainable fish at Sunshine Seasons while were were there a few weeks ago. He didn't like his dish, mostly because of the side item. However, at another restaurant (can't recall which one), there was sustainable fish on the menu, and he refused to order it, because he said he didn't like the fish he ate at Sunshine Seasons, even though it was prepared differently. DH usually is not picky, and especially loves his seafood, so I thought that was weird.

I can tell you when we ate lunch at Kona on Memorial Day weekend my DS had the sustainable fish (and yes we did ask what it was 1st). It was Wahoo. I'd never heard of it before. He really liked it. It was a mild, white fish. HTH.

Yes, before you order you can ask what fish they are serving that day.

At Sanaa in 2010 the sustainable fish was the Atlantic Char and it was the most insane delicious meal I had on our trip.

At Sanaa in 2011 the sustainable fish was the Striped Bass. It was good but not as great as the year before.

The broth and the steamed veggies with it are very good.
